A hearty vegan Green Goddess Sandwich full of fresh spring veggies and smashed chickpea salad. Fresh herbs and Mustard give these a delicious burst of flavor!




Green Goddess Sandwich

Vegan Chickpea Salad (see below)

bread

Maille Mustard

lettuce leaves

Turkish cucumber, thinly sliced

carrot, thinly sliced (use a vegetable peeler)

radishes, thinly sliced

avocado sliced

sunflower

chickpeas,

Italian parsley

dill (or sub ⅛ cup fresh tarragon)

mustard

Vegan Mayo

salt and pepper

Make the chickpea salad, placing all ingredients in a medium bowl, mix and smash with a fork until well combined. Taste and adjust salt and pepper to your liking.

Assemble the sandwiches. Spread a little whole grain mustard on the bread.

Top with lettuce and a generous amount of the chickpea salad.

Layer sliced cucumber, carrots, radishes and avocado.

Whole family (including my non-vegan oldest son) LOVED this sandwich.  We used a much smaller seeded vegan bread and did a side of vegan tomato soup with a cornichon garnish.  SO GOOD!!!   Thank you!!!!

I loved this recipe! Very complete flavor and texture profiles that taste like something I would get at the downtown cafe. I was able to get four sandwiches out of this recipe. Not difficult to make either. I liked using toasted bagels.

I love chicken salad but since going plant based last January it’s been difficult to find a good vegetarian replacement that satisfies this craving.  The smash chic pea salad sandwich was amazing! Looking forward to trying other chickpea recipes

How to make the most delicious, vegan, green goddess sandwich with herby chickpeas! Simple, easy and delicious! 

This Green Goddess Salad is a healthy, fresh &amp; light salad that&#039;s antioxidant-rich but also flavor-rich; served with an easy yogurt dressing!

Green Goddess Salad

romaine lettuce

lettuce

cilantro

dill

cucumber

avocado (sliced)

feta cheese (optional)

chicken breast

olive oil (divided)

Dijon mustard (optional)

garlic

salt

black pepper

½ cup 2% Greek yogurt

extra virgin olive oil

lime

cumin

Make the Dressing: Blend all the salad dressing ingredients together in a blender or small food processor until smooth and creamy, and refrigerate until ready to use.

Cook the Chicken: Season the chicken breast with the marinade, keeping a tablespoon of oil for the skillet. Heat the oil in a skillet over medium-high heat. Cook the chicken until both sides are golden brown, about 3-4 minutes per side. Once cooked, remove from the heat, allow to rest for 10 minutes, then slice into strips.

Prepare the vegetables and place in a large salad bowl. Add the chicken strips on top. Pour the cilantro yogurt dressing over.

Toss well until all the ingredients are coated with the dressing.

Puree all the dressing ingredients together, adding the cilantro last and stopping when the texture feels right to you. I went for little green flecks of cilantro and scallion throughout.

Toss the salad ingredients together with dressing; serve immediately.

Our take on this viral salad recipe is going to knock your socks off! Rather than using cabbage, we use leafy greens. This vibrant salad recipe is going to have you dreaming of summer weather. It is light, refreshing, and nourishing!

jalapeño (seeded for less spice)

Tablespoons seasoned rice wine vinegar or white wine vinegar

Tablespoons chopped green onion

Parmesan cheese

cucumbers (diced)

Place pine nuts, fresh basil, a small shallot, jalapeño, garlic, and chopped green onions into a food processor.

Use a citrus juicer or hand reamer to squeeze the juice from two limes into the food processor.

Pour in olive oil and vinegar of choice.

Sprinkle in salt, and add the shredded Parmesan cheese.

Blend the ingredients together in the food processor until well combined.

Make the Salad Dressing:

Quarter and cube the cucumbers using a knife or fullstar vegetable chopper.

Slice scallions into 1/4 inch cylinders.

Add the chopped lettuce to a bowl. Top with cucumbers and green onions. Pour the dressing on top.

Use tongs to toss, and serve!

A spin on the TikTok Green Goddess Salad turned into a filling and delicious sandwich. Vegan, protein rich, and easy to prep for lunch.

Green Goddess Salad Sandwich

green onions, roughly chopped

yeast

garlic, crushed

lemon

tbsp white wine vinegar

cabbage, finely diced

red onion, finely diced

Cucumber,

jalapeño pepper, finely diced

Hummus

Dijon Mustard

To a small blender or food processor, add all of the dressing ingredients and blend until completely smooth then set aside.

Add your chickpeas to a large mixing bowl and lightly mash with a fork or potato masher until the chickpeas are mostly mashed or to the consistency you prefer.

Now, add in your cabbage, onion, cucumber, jalapeno along with a pinch of salt and pepper and toss together to mix.

Pour on the creamy dressing and then toss everything until fully coated.

Now assemble your sandwich. Spread hummus on one slice of toast and mustard on the other. Add extra spinach if desired to the bread with hummus and then top with the green goddess salad as desired. Top with the other slice of bread and enjoy.

Delicious! So fresh and herby and love the crunch as a change of pace from other chickpea sandwiches. Very excited to try it as a dip!

Made this for a quick and easy lunch this week and let me just tell you how YUMMY this salad is!!! I love the crunch from the cucumber and cabbage, the herb-y goodness you get from the dressing and that little punch of umami flavor from the nutritional yeast. Green Goddess Dressing (6.73)

Rinse the fennel bulb under cool water. Slice the fennel bulb in half from root to stem. Trim off the stem, reserving the fennel fronds to use in the Green Goddess Dressing. If you&#39;ve purchased pre-made dressing, use the fennel fronds as garnish.

Slice around the triangle-shaped core of each fennel bulb half. Place each half in a bowl of water to prevent the fennel from browning. Then chop each fennel half into 1/4-inch thick slices. Finally, cut the fennel slices into 1/4-inch dice.  Keep the diced fennel in the water until ready to use.

Remove the roots from the green onions and then slice in 1/8 inch slices on the diagonal. Rough chop the Italian Parsley leaves.

Slice the green cabbage in half, and cut around the core. Next, cut each cabbage half into 1/4-inch thick slices. Then cut each slice into 1/4-inch strips. Finally, cut each strip into 1/4-inch dice. You should have about 10 to 12 cups of chopped cabbage.

Place the cabbage, onions, Italian parsley, fennel fronds, and fennel in a large bowl. Top with the Green Goddess Dressing. Toss the greens in the dressing. 

Taste the greens about ten minutes after adding the dressing; if necessary, add salt and pepper. If you are preparing the salad ahead of time, give it a big stir before serving, and add salt and pepper if necessary.

You can enjoy this delicious cabbage salad as a main course (with some bread or chips)  or as a side salad.

Preheat your grill to 400°F.

Place the salad mix on three dinner plates.
