This Italian blockbuster Sunday roast is a real celebration of a dish – five birds and one sausage wheel, all piled on to deliciously cheesy polenta. It’s certainly epic, but if you’re after a super-special showstopper, it’s guaranteed to please.

Quick & Easy Gremolata

An easy lentil soup is packed with flavor thanks to a dual-use mixture of parsley, garlic, and lemon zest that gets added both before and after cooking.

Easy Lentil Soup With Lemon Zest, Garlic, And Parsley Recipe

Easy Lentil Soup With Lemon Zest, Garlic, and Parsley Recipe

Combine lemon zest, parsley, garlic, and half of olive oil in a medium bowl and stir with a fork until homogenous. Season to taste with salt and pepper and set aside.

Heat remaining olive oil in a large Dutch oven over medium-high heat until shimmering. Add leek, onion, carrot, and celery and cook, stirring frequently, until softened but not browned, about 5 minutes. Add half of parsley-lemon mixture and cook, stirring, until fragrant, about 1 minute. Add lentils and stir until coated in oil. Add bay leaves and stock. Bring to a boil, reduce to a bare simmer, cover with lid slightly cracked, and cook until lentils are completely tender and falling apart, about 1 hour, adding water as necessary (lentils should be fully covered at all times).

Using a hand blender, blend soup until as smooth as desired. Alternatively, transfer half of soup to a standing blender, blend until smooth, and fold back into remaining soup. Whisk in lemon juice and season to taste with salt and pepper. Serve, drizzling extra lemon-parsley mixture on top of each serving. Soup can be stored in the refrigerator for up to 5 days.

Gremolata Recipe

flat-leaf parsley, finely chopped (1 cup packed, tender stems OK)

garlic cloves, finely minced

lemon juice (Meyer Lemon is especially nice)

kosher salt

pepper, more to taste

  Place chopped parsley, garlic, zest, lemon juice, olive oil, salt and pepper in a small  bowl. Give a stir. Taste. Add more lemon juice if you like. (You want this salty and lemony.) If you want a looser consistency add a little more oil. Add a pinch of chili flakes for heat.

FOOD PROCESSOR: 

Place unchopped parsley, garlic and zest in a food processor and pulse until chopped. Add oil, salt &amp; pepper and lemon juice. Pulse again, until uniformly combined but not too smooth. Taste and adjust salt and lemon juice. Add chili flakes for a touch of heat if you like. Add more oil for a looser consistency.

Hello, I make Chimichurri a lot, and this is very similar obviously but without the heat and there’s the addition of lemons here which I love. My question is, in your professional opinion, how do you think this would be with a coffee rubbed steak? I’m not sure the bitterness from the lemons would pair with the bitterness of the coffee rub, although the coffee rub is sweet as well from the brown sugar! ...I guess there’s only one way to find out! I disagree with the inclusion of parsley stems mostly because growing up in Trieste we were told to use only the tender leaves.  I believe it makes a better gremolata. You can always use the stems to make broth.

I had extra parsley. The sauce tasted great on the baked chicken breast and was so colourful. I spooned a tablespoon over the chicken and served with sweet potatoes baked in olive oil and fresh corn on the cob. Presentation was colourful and very tasty!

This was quick, easy and delicious. Make sure that the parsley is PACKED or the gremolata will be runny.

Make classic Italian gremolata with this super simple recipe! Chopped parsley, lemon zest and garlic combine to make the perfect fresh garnish. Recipe yields about 3/4 cup gremolata.

Gremolata (Italian Parsley Condiment)

fresh flat-leaf parsley (about 3/4 cup chopped)

garlic, pressed

To prepare the parsley, wash and pat it dry with a clean tea towel (wet parsley will make your gremolata clumpy).

Using a sharp chef&#8217;s knife, slice off the thick parsley stems and discard them. Finely chop the parsley (thin stems are fine to include). Transfer the chopped parsley to a small serving bowl.

Add the lemon zest and garlic clove. Stir to combine. Gremolata is best served fresh. It will keep well in the refrigerator, covered, for up to 4 days.

The timing of this recipe could not have been more perfect. The day I received your email announcing the recipe I made vegan linguini Alfredo and some broccoli to serve on the side, but the meal still felt like it needed a pop. Then I remembered the gremolata. It was just what the meal needed. I sprinkled it over the pasta and the broccoli. What a difference it made! Thank you for sharing this recipe.

We usually sprinkle our vegan pastas with a nut or pumpkin parm but this recipe will be fantastic as well!

Intensify the flavours of your next caprese salad by slow roasting tomatoes and making a quick lemon and basil sauce.

Caprese salad with slow-roasted tomatoes, rocket and basil gremolata

(70 grams) baby rocket leaves

(15 grams) basil leaves

Tbsp extra virgin olive oil

Preheat oven 150°C. Cut the tomatoes into a variety of similarly-sized shapes and place on a baking tray. Add the garlic, thyme, and season well with sea salt and black pepper. Drizzle extra virgin olive oil all over the tomatoes — the amount of oil depends on how big your tray is, but about ⅓ cup should be enough. Place in the pre-heated oven and roast for 60-90 minutes, until the tomatoes are shrunken, sweet and full of flavour. Once ready, set aside to cool slightly.

Meanwhile, prepare the gremolata. Place the garlic and fennel seeds on a cutting board and carefully chop until very fine, mixing them together as you chop. On the same board, add the basil leaves, and finely chop, adding this to the garlic and fennel as you go. Then add the basil mixture to a small bowl, stir in the lemon zest, season with sea salt and black pepper and add the olive oil. Stir to combine. If you have a mortar and pestle, you can use this to make the gremolata too. 

To serve, arrange the rocket leaves on a serving plate. Place the mozzarella balls on top of the rocket, either whole or torn. Spoon over the roasted tomatoes, along with some (or all) of the fragrant oil. Top with the gremolata and serve with crusty bread, on top of pasta, or as a side.

Preheat oven to 350°. Arrange chicken skin in a single layer on a rimmed baking sheet and bake until dark golden brown and crisp all the way through, 12–18 minutes. Let cool, then coarsely chop.

Combine chicken skin, garlic, parsley, and lemon zest in a small bowl; season with salt and pepper and toss to combine.

Combine lemon, olive oil, and sugar in a small bowl. Season with salt and pepper and let sit at least 10 minutes, mixing once or twice.

Do Ahead: Lemon oil can be made 2 days ahead. Cover and chill. Bring to room temperature before using.

Season chicken thighs all over with salt and pepper. Cook bacon in a large Dutch oven or other heavy pot over medium-low heat, stirring often, until brown and crisp, 7–10 minutes. Using a slotted spoon, transfer bacon to a small bowl.

Increase heat to medium-high. Working in 2 batches if needed, cook chicken thighs, skin side down, in the same pot until skin is golden brown, 7–10 minutes. Transfer to a large plate and turn skin side up. Remove pot from heat. Let chicken cool slightly, then pull skin from meat and transfer to a shallow bowl; cover and chill (save for making the gremolata).

Return pot to medium heat and cook shallots and garlic, cut side down, in the same pot, tossing shallots occasionally, until shallots are browned in spots and garlic is golden brown, about 5 minutes. Add wine, stirring to release any bits stuck on the bottom of pot, and cook until reduced by two-thirds, about 2 minutes. Add parsley, bay leaves, reserved bacon, and 8 cups water, season generously with salt and pepper, and bring to a simmer. Return chicken thighs to pot and bring stew back up to a simmer. Cover with a lid, leaving slightly askew so steam can escape, and cook, adjusting heat to maintain a very gentle simmer and skimming foam from surface as needed, until meat is tender and easily pulls away from bones, 1–1½ hours.

Transfer thighs to a cutting board and let cool 10–15 minutes; keep liquid at a simmer. Pull meat from bones and tear into bite-size pieces; discard bones. Transfer meat to a medium bowl and cover with plastic wrap. Add kale and simmer until kale is tender and liquid is very flavorful, 25–30 minutes.

Remove stew from heat, add meat back to pot, and let cool uncovered until no longer steaming. Cover pot and chill stew at least 12 hours (you can skip this step, but it will dramatically improve the flavor).

Uncover stew and spoon off half to three-quarters of fat on the surface; discard. Gently reheat stew until barely simmering. Pluck out and discard parsley, bay leaves, and garlic heads (don't worry about any cloves that may have escaped into stew). Taste and season with more salt and pepper if needed. Ladle into bowls and serve with Chicken Skin Gremolata, Lemon Oil, radishes, and/or red onion as desired.

Do Ahead: Stew can be made 3 days ahead. Keep chilled.

Once you have finely chopped the garlic, parsley and lemon zest, chop them together on a cutting board until well combined. (This mixture is the gremolata.) Transfer to a bowl. Warm a serving platter.

Steam or boil the asparagus in salted water until tender, four to five minutes. Remove from the heat, and toss with the gremolata. Add salt and pepper to taste. Mix together the lemon juice and olive oil, and drizzle over the asparagus. Serve hot or warm.
