This grilled halibut is a great way to enjoy fish any day of the week. Topped with my garlic thyme butter, this seafood is perfectly tender and flaky without coming off the grill dry and bland. Bonus level? It&#x27;s ready in less than 30 minutes.

Grilled Halibut

4-6 oz skinless halibut fillets

salt (to taste)

pepper (to taste)

garlic

T unsalted butter (melted)

T fresh thyme

juice of 1 whole lemon

Preheat your grill 375 degrees F.

Place the halibut fillet in a shallow baking dish. Combine all of the ingredients for the butter in a small bowl and pour over your halibut fillets.

Gently toss the fillet to ensure all sides are evenly coated in the butter. Season all sides with freshly cracked pepper and salt.

Moisten a paper towel with cooking oil. Pinch the paper towel between tongs and wipe it on the grates of your grill to prevent the halibut from sticking while it grills.

Place the seasoned halibut directly on the grill grates. Close the lid and grill for 5-7 minutes. Flip them, close the lid, and grill until the internal temperature of the halibut reads 145 degrees F. You want your fish to be opaque and just start to flake.

Remove the grilled halibut from the grill. Serve hot with lemon wedges.

You Need To Know About Cilantro Lime Butter

This recipe uses a bed of sliced citrus to form an indirect heat that adds a light flavor.  Brush on the Honey Garlic Butter to finish the delicious meal.

lbs Halibut

Oranges (sliced)

Lemons (sliced)

tbsp Butter

tbsp Honey

Lemon

Garlic

Slice the lemon and oranges into ¼&quot; thick pieces.

Citrus Bed

Combine the butter, honey, lemon juice, garlic in a bowl and stir.

Set aside.

Prepare the Glaze

Heat the grill to 350 degrees over direct heat.

Place the sliced oranges and lemons nest to each other directly on the grill grate.  This will form a bed to protect the halibut from burning.

Place the halibut on top of the citrus. Brush with the glaze and let it cook for 10 minutes.

Carefully turn the halibut over and brush with the glaze.  Let it cook for another 10 minutes.

Remove the halibut and the citrus slices.

Place the halibut back on the grill for 1-2 minutes per side to form a nice sear.  This direct heat grilling will add a lot of flavor to the fillets.

Remove and serve.

In a small mixing bowl, combine the butter, honey, lemon juice, soy sauce, pepper, and garlic.

Portion your halibut by cutting it with a sharp knife into 3 or 4 pieces. A serving size of fish is 3 to 6 oz so portion it depending on the particular size of your filet. Brush both sides of each with the liquid mixture.

Heat pan until it is sizzling hot (a drop of water sizzles and immediately evaporates when it hits the pan. Sear the halibut for 90 seconds on each side. Reduce the heat to medium and cook each side for an additional 2-3 minutes, until the fish can be easily flaked with a fork.
