Preheat the oven to 350 degrees F and spray mini muffin tins with non-stick cooking spray. In a medium bowl, mix all the dry ingredients for the cakes. Then whisk in the water and oil until smooth. Spoon the batter into 24 muffins tins, filling only 2/3 full.

Bake for 12-15 minutes, until a toothpick inserted into the center of each cake comes out clean. Allow the cakes to cool for 3-5 minutes in the pans, then flip them out onto a wire rack to cool completely.

While the cakes are cooling, prepare the glaze. Place the butter, water, and cocoa powder in a microwave-safe bowl. Microwave the mixture for 1-2 minutes until warm, them whisk in the vanilla and powdered sugar until smooth. Allow the glaze to cool a little before dipping. Carefully dip the top of each mini cake into the glaze, then place back on the wire rack to set. If the cakes are so tender they start to crumble when you dip them, hold them sideways and spoon the glaze over the tops.

Once the glaze has hardened, place the candy melts in a small microwave-safe bowl and microwave in 30 second intervals, stirring in between, until melted, usually 60-90 seconds total. Spoon the melted candy melts into a piping bag with a small tip, or a squirt bottle (or a plastic bag with the tip cut off) and pipe lines over the top of each mini cake. Allow the candy melt lines to harden before moving. Store in an air-tight container until ready to serve.

Super easy and fun to make, these pumpkin hand pies will be a big hit with everyone, from little to big ones. The pumpkin filling is absolutely delicious, and the golden and flaky puff pastry adds a fantastic texture. What a Halloween treat!

Jack-O'-Lantern Pumpkin Hand Pies

pumpkin puree

puff pastry ((500 g, 1 lb))

brown sugar

cinnamon

tsp pumpkin pie spice mix

Pre-heat the oven at 180 degrees Celsius (350 Fahrenheit).

Mix the pumpkin puree with the sugar and spices.

Roll the puff pastry, and use pumpkin cookie cutters or a sharp knife to cut out pumpkin shapes, half of them being just the shape of a pumpkin, and the other half the shape of a carved pumpkin.

Spread about half a teapoon of the pumpkin mixture on the bottom pumpkin shape, then top it with the carved pumpkin shape, and press gently on the edges to seal.

Repeat with the rest of the puff pastry and pumpkin mixuture.

Bake in the oven for about 15 minutes or until golden.

A perfect and easy Halloween treat!  Cookie crumb dirt and a creamy center. There is also cookie gravestones, candy pumpkins and googley eyes!

5.1 oz Chocolate Instant Pudding Mix

Cups Milk

oz Cool Whip

Oreo Cookies

Milano Double Chocolate Cookies

Black Frosting or Black Edible Marker

Candy Pumpkins

Googley Eyes

Gummy Worms

With black frosting (with a small frosting top) or with an edible marker, write RIP on each of the Milano cookies creating a tombstone.  Set aside.

In a stand mixer, whisk together pudding mix and milk together on medium speed for 2 minutes.

Fold in cool whip until well blended.

Crush Oreos until they are fine crumbs using a food processor.

Sprinkle 3-4 TBSP of  crumbs into the bottom of 6 clear 9 oz. clear plastic cups.

Press a few googley eyes around the edges between the crumbs and the cup so it looks like they are peaking out.

Spoon in a layer of pudding on evenly on top.

Repeat the last three step one more time.

End the layers by sprinkling more crumbs on top until they almost reach the lip of the cup.

Firmly insert one cookie tombstone into the center of each pudding cup.

Gently press in a candy pumpkin beside each tombstone.

Embellish with gummy worms if desired.

Mummy Halloween Brownies

oz white chocolate melts

candy eyeballs

Bake brownies according to recipe (or package directions) and place in the freezer to cool.

While brownies are cooling, pour melting chocolate into a microwave-safe bowl.

Heat white chocolate melts in the microwave in 30 second increments, stirring in between each, until they are completely melted.

Pour melted chocolate into a small ziplock bag and cut a small opening in one of the corners.

Cut brownies into 12 rectangles.

Squeeze melted chocolate out of the ziplock and onto brownies in a back and forth zig-zag motion.

Immediately place eyeballs onto melted chocolate.

Put finished mummies in the fridge to set.

Enjoy!

In a food processor, finely chop the Oreos.

Add the cream cheese and pulse to combine.

Shape the mixture into balls and transfer to a parchment-lined baking sheet.

Make the Chocolate Ganache: Place chocolate in a medium bowl. In a small saucepan, heat heavy cream until just bubbling around the edges. Pour the cream over the chocolate, stir once, then let sit for 5 minutes. Stir until completely melted and smooth. Cover with plastic and set aside until slightly thickened, about 30 minutes.

Add a drop of black food gel to the ganache and stir to combine.

Dip the balls into the melted chocolate and transfer to a wire rack set over a parchment-lined sheet tray.

Break chocolate wafers into quarters to create "wings" and place on balls.

Add candy eyes and banana Runts as "teeth."

Try an eerie twist on the traditional candy apple for a delicious Halloween treat.

"Poison" Candy Apples

Wash and dry apples thoroughly. Place on a baking sheet and poke firmly with dowels. Line a second baking sheet with buttered parchment paper, and set aside.

Place a candy thermometer in a medium saucepan and add sugar, 3/4 cups water, and corn syrup. Place over medium heat; whisk until sugar is dissolved. Let the temperature rise without stirring until it reaches the hard-crack mark at 310 degrees F. Remove pan from heat. Carefully remove thermometer, and add food coloring.

Swirl pan to mix in the color completely. Swipe and twirl the apple through the candy, shake off excess, and place on buttered baking sheet. Repeat with remaining apples.

A meringue-topped chocolate ganache tartlet is the perfect sweet and spooky Halloween dessert.

Meringue Ghost Tartlets

graham cracker planks (1 packet)

tbsp. butter

bittersweet chocolate, finely chopped

To make Graham Cracker Crust: Crush graham crackers into pieces. Transfer to the bowl of a food processor; add sugar. Process until crackers form a very fine crumb. Add butter, and pulse to combine.

Pack graham cracker mixture into 8 (2 1/2-inch) mini tart pans; transfer to a baking sheet, and bake 20 minutes or until the edges of the tartlets darken slightly. Let cool.

To make Chocolate Ganache: Heat cream in a small saucepan over low heat until barely simmering. Remove from heat, add chocolate, and whisk well until very smooth. Spoon into graham crusts.

To make Meringue Ghosts: Heat 3 inches of water in a saucepan over medium-high heat. Bring to a boil, and reduce heat to low. Place sugar and egg whites in a heat-proof bowl. Place bowl over the water and whisk to combine the sugar and egg whites. Stir constantly until sugar is dissolved and mixture is hot to the touch. (Rub a bit between your fingers. If it feels gritty, the sugar has not dissolved.)

Remove bowl from the stove and beat egg white mixture with the whisk attachment of an electric mixer until shiny stiff peaks form. Transfer meringue to a plastic pastry bag, snip the end to about 1 1/2 inches wide, and pipe 4-inch-tall ghost shapes onto the ganache.

Use a small paint brush dipped in cocoa to form the eyes and mouth. Serve immediately.

Halloween bark is an easy, two-ingredient chocolate bark treat made from dark and white melted chocolate. Includes both stove top and microwave directions.

Line a 7x11 baking pan with foil or parchment paper. Set aside.

In a double boiler: melt the dark chocolate over medium-low heat stirring constantly. Remove from the heat once the chocolate is silky smooth. - OR - In the microwave: microwave on high for 15 - 30 second bursts, stirring between bursts, until silky smooth. Repeat with the white chocolate.

Once the dark chocolate is melted, pour it into the prepared pan. Spread it out to cover the bottom, making the top as smooth as possible.

Load the melted white chocolate into a piping bag. Cut off the very tip of the bag to create an opening just large enough to squeeze out the white chocolate.

Starting with a white center dot, make concentric circles randomly over the dark chocolate. Circle 3 - 4 layers deep work well. Create both big and small circle sets and take them all the way to the edges.

Use a toothpick to lightly feather the white chocolate through the dark chocolate. Start in the solid center and gently drag the toothpick out to the edge

Go around the circles pulling them out to make web designs, there is no wrong way to do the webs, just have fun with it.

Once you get it how you like it gently press the spider rings into the webs wherever you like.

Allow to cool completely to set.

To serve, cut with a sharp knife. Store at room temperature in an airtight container.

Heat oven to 190C/fan 170C/gas 5. Line a 12-cup muffin tin with brown muffin cases. Beat the first 5 ingredients to a smooth batter and spoon between the cases, almost filling them to the top. You may have a little left over. Bake for 20-25 mins until risen and spongy. Cool on a rack.

Beat the butter and icing sugar until smooth. Slice off the very tops of the cakes and cut each piece in half. Spread a generous layer of icing over each cake.

Working on one cake at a time, squirt a pea-sized blob of orange icing onto two Maltesers and use to fix a brown M&M on each. Sit the eyes, two pieces of cake top (curved edge up) and a jelly diamond on the icing to make an owl.
