A dessert that is dripping with salted caramel is always a winner. We love this variation of the classic Eton mess.

tsp baking powder

unsalted butter, chopped, softened

Hot-smoked salmon bowl with edamame sushi rice and slaw

sushi rice (from supermarkets)

edamame beans,

spring onions, thinly sliced

tbs rice vinegar

baby cucumber (or small Lebanese cucumber), sliced

carrot,

¼ red cabbage,

coriander leaves

hot-smoked salmon, skin removed, roughly flaked

Black and white sesame seeds,

(40 grams) peanuts, salted, roasted and chopped

red chilli, seeds removed, finely chopped

tbs grated palm sugar

tbs fish sauce

lime

Pan-fried white fish or cooked prawns would also work well here in place of the ceviche, says Hayden.

red bird’s eye chilli, seeded, finely chopped

kingfish, skin, pin-bones and bloodline removed, thinly sliced

Smoky lamb shakshuka with feta recipe

tbs olive oil,

minced lamb

onion, finely chopped

(75 grams) chipotle sauce (or 1 tbs smoked paprika)

tbs cumin coriander

coriander, stalks finely chopped, leaves roughly chopped

can crushed tomatoes

eggs

Greek feta, crumbled

Chilli flakes & warm za’atar flatbread, to serve (optional)
