Breakfast Banana Splits Look Like Dessert And Taste Amazing!

St. Patrick’s day is approaching and I thought to share with you my favorite breakfast for St. Patrick’s Day. Lentil Crepes with zesty jalapeno and fresh cilantro is my take on going green. These kid-friendly, gluten free and egg-free crepes are delicious and healthy way to start a good go-green morning. You need Hulled Yellow Mung (or Moong) Lentils to make these crepe. However, Pink or Red Lentils will also be fine. It is very important to pre-soak lentils previous night. That results in very fine texture crepes and crepes cook very evenly too. <img alt="Mung Lentils Breakfast Crepe" src="https://media.chefdehome.com/750/0/0/munglentilscrepe/moonglentilscrepe_main1.jpg" />You can make two variations to these crepes depending on your diet preference. First - If you are not vegetarian, feel free to replace half of water with 1 large egg in the batter instead. That’s what I do for my husband if he is not in Vegetarian Breakfast mood. Second - If you prefer Vegan, replace non-fat yogurt with juice of 1 lime (about 1 and 1/2 tbsp). <img alt="Recipe - Gluten Free Moong Lentil Crepes" src="https://media.chefdehome.com/750/0/0/munglentilscrepe/moonglentilscrepe_main2.jpg" />Lentils are gluten free, so for both variations, crepes will still be without gluten, but they taste delicious. I even enjoy’em plain with some ketchup on the side Or filled, like I did today with some sautéed red onion, red peppers, cilantro and some ketchup. Enjoy, filling and low-calorie morning breakfast with goodness of greens and yummy lentils. Wishing you all Happy St. Patrick's Day!!

Go-Green Mung Lentils, Cilantro-Jalapeno Breakfast Crepes

Cup Cilantro, washed, leaves and stems roughly chopped

Jalapeno,

Garlic, Optional but recommended

Mix Vegetables, Optional for filling, I used red bell pepper, red onion

Tomato Ketchup,

tbsp

tsp Salt, adjust per taste

tsp Black Pepper

tbsp Yogurt, non-fat plain yogurt

Wash and soak mung lentils overnight in 2 cups water. Rinse lentils in running water in morning until water runs clear. 

Add all crepe ingredients, 1/4 cup water, yogurt, salt, pepper, jalapeno, cilantro, lentils in a blender jar and blend until smooth.  Add more water 1 tbsp at a time to make batter smooth but not runny. (little thinner than pan cake batter). Now add baking soda and leave aside.

Heat a heavy bottom skillet and spray with oil. Add 1/3 cup of batter and spread quickly yet gently to 5-6 inch circle. Don't worry about the shape, it will get better as you make'em often. Spray top of crepe with oil. Let is cook med-high heat for 2 minutes or until edges start to brown a bit.

Flip with flat spatula and cook other side for 1 more minutes or until crepe is fully cooked. Remove crepe to baking sheet. Keep'em warm in pre-heated oven until ready to serve.

Just before serving, fill each crepe with sauteed vegetables and drizzle some ketchup over the top or serve it on side. Enjoy go-green breakfast crepes with St. Patrick's day inspired drinks or a cup of green tea.

The BEST Vegan Biscuit Recipe! These easy homemade biscuits are easy to make and free from any dairy or oil. You need a few simple ingredients, 1 bowl, and less than 30 minutes. Healthy, wholesome, and delicious!

Best Vegan Biscuit Recipe

almond milk

apple cider vinegar

organic unbleached flour

Tbsp baking powder

baking soda

salt

applesauce

Mix the almond milk with the apple cider vinegar and set aside.

Add all the dry ingredients to a large mixing bowl and whisk together until everything is well combined.

Gently

cut the applesauce into the flour mixture with a whisk or fork. You&#8217;re going for a crumbly mixture that has little lumpy bits.

Using a large wooden spoon, slowly fold in the milk and apple cider mixture until the dough is sticky. Be gentle! The less the dough is &#8220;handled&#8221; the better. Do not over mix.

Grab a handful of flour and sprinkle on your counter top. Drop the biscuit dough onto the floured surface. Sprinkle more flour onto the dough and flour your rolling pin (or whatever you&#8217;re using to roll out dough).

Gently roll, pat, or press dough out to 1/2&#8243; thickness. Again, being gentle is key!

Use a jar, small drinking glass, or biscuit cutter of desired size to cut biscuits.

Line a baking sheet with parchment paper and layout biscuits until they are almost touching.

Bake for 10-11 minutes until the tops are golden.

Just made these and they were awesome!!! Easy, fast and family approved!!

Okay, I lied, I didn't try the banana bread recipe next - I tried this awesome biscuit recipe since I already had everything in my kitchen! Disclaimer - I've never made "from-scratch" biscuits, only the "whomp" biscuits from Pillsbury, so I wasn't really sure what to expect. I made a 1/2 batch since it's only hubby and I and my goodness - it still made a huge amount of them! I think I over mixed them a bit when adding the milk/ACV mix, but they still came out great! I tried them by itself before adding butter (we're still using up all the non-vegan stuff that we already have in the kitchen) and wow, what a treat! We also live in the south, so hubby LOVES his biscuits, and now I have an easy healthy Go-to for it, thanks so much for making me feel like a RockStar in the kitchen!

So fun to make with my 8yo daughter! I didn't have enough apple sauce so I sub'd pumpking puree lol. They turned out great. I was a bit of a rebel and used the pastry hook on my mixer and it seemed to not over process the dough. The texture is AMAZING!!! I added a bit of cinnamon (my team likes sweet biscuits) and they tasted perfect! I also baked mine in a cast iron skillet (not in the directions...sorry!) and they turned out great....which is why I adore this recipe. I broke the rules and "screwed" up and they still came out perfect!!!!

The best ever bisciuts. I used 3 cups whole grain spelt, 1 cup unbleached white and reduced salt to 1/2 tsp. Had with hummus for savory and jam for dessert. Would make awesome strawberry shortcake.

I didn’t have quite enough of my whole wheat pastry flour, so I used one cup of oat flour and three wheat flour. The biscuits were great! Terrific flavor❤️❤️

I made these biscuits this morning. They were very tasty, pretty fluffy and with a bit of nice chewiness on the bottom crust. And no shortening, butter, plant butter ! I have a long and rocky relationship with homemade biscuits to put it kindly. I have made MANY healthy paperweights. 
These were a hit with all the fam except my 7 year old who sometimes channels Mary Berry...they were “too floury on the outside, but the texture is good” :) .
I will definitely make them again and again! Thank you!

Made these tonight. The recipe made 18 biscuits and while I wouldn't describe them as fluffy, they are delish and hearty. Maybe I over-mixed? Or was it because I used whole wheat flour? I have never made biscuits before except for the bisquick version so not sure what to expect with cutting in applesauce. No complaints when eating which is the key! Went perfect with the chili we had for dinner! thanks

These were SO easy and tasted amazing. Mine did not rise correctly, but it was my fault (well the fault of my 13 year old who needed me to pick him up in the middle of baking!) But they still held my homemade pumpkin butter and tasted great! :) Can't wait to try them again when i don't get interrupted!

Our favorite eggplant bacon recipe. Make a double batch! Great for sandwiches for lunch the next week.

Just tried for the first time. Delicious! Wish I had used the mandoline, as I think they were too thick to crisp up. Mine were between 1/8” and 1/4”. Those that were smaller got a little chewier but still not crisp. I tried half on a rack and half right on the parchment. I had them on a ELT and did not mind at all that they were not crisp. The flavor and slightly chewy texture were perfect.

I’ve made this delicious eggplant bacon before and I didn’t get it crisp enough, so I’ll be making it again and placing the slices in a cooling rack inside my baking sheets. I love this recipe!

Just never got crispy.  Had a good smoky flavor but the eggplant was soft.

I'm sorry.... this was GROSS. And I make vegan meals regularly.  Did not work. A soggy, sour mess. 16 Fev 2021

Just tried this and I'm not impressed.  Followed the recipe exactly for the first batch...came out limp and not tasting at all like any type of bacon...lol...figuring that I sliced the eggplant too thick, tried again slicing a thinner slice on the mandolin...this time half way through, I removed the baking sheet from oven flipped the eggplant slices over and returned to the oven to complete cooking.   This time the eggplant slices were firmer, but again the taste left something to be desired.   Maybe it's because I'm not vegan but I'm not impressed with this recipe at all

It doesnt taste like bacon but it is good.

I loved this. Not quite bacon, but a breat substitued. I am a plant based vegan, so a step up on a new taste for me. It is very tasty and I will be trying it again, but with an organic Annie's Worcestershire 'low-sodium' next to try and cut down on the sodium. It never really got crisp so maybe I'll cook it at a lower heat and longer next time. I wondering if this would work in a dehiddrater...hummmmmm

It was awesome straight off the pan. I served it on salty garlic toast with tomatoes and cheddar, and that was super awesome. I added a little chili powder to the marinade and put the black pepper straight in the marinade. Only the super thin cuts got crispy, but the soft cuts were great too. When serving to fiends, I'll call it smokey eggplant rather than bacon.

Used double the liquid mix and baked for 30 min on each side. Yummy

This banana baked oatmeal is the ideal healthy breakfast! It's full of good-for-you ingredients and so delicious, everyone will want seconds.

allspice

teaspoon kosher salt

banana bananas

milk

vanilla extract

For serving: Banana slices, almond butter or peanut butter

Preheat the oven to 375 degrees Fahrenheit.*

Butter an 8 x 8″ or 9 x 9″ pan. In a medium bowl, mix together the rolled oats, pecan pieces, baking powder, cinnamon, allspice, and kosher salt.

Mash the bananas. In the same bowl, whisk together the bananas, milk, maple syrup, and vanilla. Drizzle the milk mixture over the oats. Stir lightly with a fork to make everything gets evenly incorporated.

Bake 40 to 45 minutes until the top is nicely golden and the oat mixture has set. Remove from the oven and allow to cool for about 10 minutes.

Before serving, spread the top with almond butter or peanut butter (or a combination) and top with banana slices. Store leftovers refrigerated for up to 1 week: reheat in a 300 degree oven or microwave until warm.

Honey

Chia Seeds

Take rinsed raspberries, milk, vanilla and honey in a blender.

Blend everything until smooth.

Transfer it a bowl and add the chia seeds to it.

Combine everything together and cover with a lid.

Refrigerate for 3 hours or overnight to set.

Before serving, remove it from the refrigerator and give it a mix.

Transfer it to serving bowls and garnish with fresh raspberries.

Serve immediately.

Raspberry Chia Pudding Recipe – Gorgeous, healthy and delicious chia seed pudding with fresh raspberries, milk, vanilla and honey. A perfect grab & go breakfast!

Raspberry Chia Pudding Recipe

Calling all banana lovers to these low fat, whole wheat banana nut pancakes, rich in potassium, fiber and flavor – tastes like banana nut bread in a pancake!

Banana Nut Pancakes

whole wheat flour

tsp baking powder

tsp salt

banana (very ripe, mashed)

1% milk

tsp oil

vanilla

tbsp chopped walnuts (optional)

olive oil or butter flavor cooking spray

Mix all dry ingredients in a bowl.

Combine milk, egg white, oil, vanilla and mashed bananas in a bowl and mix until smooth.

Combine wet ingredients with the dry and mix well with a spoon until there are no more dry spots. Don't over-mix.

Heat a large skillet on medium heat.

Spray cooking spray to lightly coat and pour 1/4 cup of pancake batter.

When the pancake starts to bubble and the edges begin to set, flip the pancakes.

Repeat with the remainder of the batter.

Tbsp Chia Seeds

C. Unsweetened Almond

Scoops Collagen Protein Powder (or your fav. protein powder)

Tbsp Low Carb Sweetener

Tbsp Cacao Powder (or cocoa powder)

Favorite Toppings: Unsweetened Shredded Coconut, Cacao Nibs, Pumpkin Seeds, etc.

In 5 separate containers (I used mason jars), add 3 Tbsp of Chia Seeds to each container.

Then, add 3/4 C. of almond or coconut milk to each container.

Next, add 1 scoop of protein powder to each container.  Add 1 Tbsp of low carb sweetener or raw honey to each container.  Add 1 Tbsp of cacao powder to 2 containers (1 Tbsp each).

Mix well.  Let chia pudding sit for 15-20 minutes while prepping the other meals.  Then, come back and mix again.

Add your favorite healthy toppings.  I added 1 Tbsp pumpkin seeds and 1 Tbsp of shredded coconut to each container.  I also added 1 Tbsp of cacao nibs to the two chocolate chia puddings.

Seal container with a lid and place in the fridge.  The chia pudding will stay fresh for a week.  Be sure to stir chia pudding to mix again before consuming.

If you prep the turkey sausage patties at the beginning of the week, this breakfast only takes about 10 minutes to make.
