Healthy Buffalo Chicken Cauliflower Dip

chicken breasts (boneless skinless)

Sauce

cauliflower

plain Greek yogurt ((see note 1))

cream cheese

mozzarella cheese

Cook Chicken: Put the chicken and buffalo sauce in a crockpot on low for about 4 hours.

Prep Cauliflower: Remove the stem and cut the cauliflower into small 1/2 inch pieces. Set aside until step 4.

Shred Chicken: Once the chicken is done cooking, shred it using two forks. You can shred the chicken right in the crockpot or shred it on a cutting board and then put the shredded chicken back into the crockpot.

Combine and Cook: Add the remaining ingredients to the crockpot and stir until all the ingredients are combined. Cook for an addition 1-1.5 hours, stirring halfway through.

Enjoy: Serve with fresh veggies or tortilla chips for dunking and scooping!

Roasted Red Pepper Dip

red peppers (drained; 7 ounces)

basil leaves

Parmesan cheese

lemon juice (about 1/2 medium lemon)

Gently pat the rinsed beans and red peppers dry to remove excess moisture.

Place

In the bowl of a food processor fitted with a steel blade, place the beans, red peppers, basil, Parmesan, lemon juice, garlic, salt, and pepper.

Blend

Blend until pureed and smooth. With the machine running, drizzle in the olive oil. Enjoy immediately or refrigerate until ready to serve.

ripe medium avocados, fleshed and diced

feta (block will yield best taste and texture)

apple cider vinegar (or white vinegar)

Check avocados

Make sure your avocados aren’t too soft so they hold their texture better.

Add all ingredients

In a medium bowl add diced avocado, feta, diced tomatoes, diced red onion, minced garlic, chopped parsley or cilantro, extra virgin olive oil and vinegar. Sprinkle with salt.

Gently fold

together ingredients with large spoon until combined. Be careful not to mash avocado.

Serve

Transfer dip to serving bowl, serve with crackers, chips, flatbread or on its own.

Carrot Leaf Pesto

carrot leaves (stems removed)

parmesan cheese

garlic

pistachios

tsp sea salt

tsp black pepper

lemon (juiced)

green chilli (de-seeded - optional)

Grind the nuts in a hand-held blender or food processor.

Add the parmesan, garlic, salt and pepper and quickly blitz.

Add the rest of the ingredients and blend until you obtain a consistency you like.

The longer you blend, the smoother the pesto would be. If you like it very runny, you can add more olive oil.

We put it down to the lemon zest, i think i over did the zest thinking that would really give it the fresh kick, but next time i think i may leave it out or just go veeeerrry light.
