Crockpot Healthy Buffalo Chicken Dip with Cauliflower

Cups chicken broth

chicken breast

Cauliflower,

Cup Buffalo sauce

Salt

Pepper

Oz` Challenge Dairy Cream Cheese **

In the bottom of a 7 quart slow cooker, pour in the chicken broth. Place the chicken breast in, followed by the cauliflower florets. Cover and cook on high until the chicken is no longer pink inside, about 2-2.5 hours.

Once cooked, remove the chicken to a plate to cool. &nbsp;Using a slotted spoon, transfer the cauliflower into a high-powered blender, trying to leave as much broth in the slow cooker as you can.&nbsp;

Into the blender, add the buffalo sauce, salt and pepper and blend until smooth and creamy, stopping to scrape down the sides as necessary.

Drain the chicken broth from the slow cooker and add the cauliflower/buffalo mixture in, along with the cream cheese.

Using two forks, shred the chicken and then add into the slow cooker. Cover and cook on high until the cream cheese is soft, about 20-30 minutes.

Once the cream cheese is soft, stir everything together right in the slow cooker, until well mixed.

Either serve with chips straight out of the slow cooker, keeping it on warm, or transfer to a bowl to DEVOUR.

Crockpot healthy Buffalo chicken dip

Grab your crostini and pita chips and dig into this Whipped Feta with Hot Honey recipe! Made with Greek yogurt, lemon juice, and scallions, it's the perfect refreshing summer dip.

Whipped Feta with Hot Honey 

block feta cheese

Greek yogurt

lemon juice

olive oil

tsp salt

tsp pepper

scallions, chopped (stringy tops discarded)

garlic,

almonds, chopped small

tbsp red pepper flakes

hot honey

In a food processor, add feta, yogurt, lemon juice, and olive oil to a food processor. Scrape down sides as needed, until dip is smooth and fluffy. Add salt and pepper and stir to combine.

In a sauce pan, heat olive oil over medium high heat. Add scallions and garlic and cook for 5-6 minutes or until browned. Turn off heat and set aside.

Pour whipped feta into serving bowl. Top with scallions and garlic and any remaining oil.

Add almonds, red pepper flakes, and drizzle hot honey on top.

It's official, hot honey is delicious and this dip shows you why!! So creamy, cheesy and all with the perfect kick. Absolutely loved paired with some french bread!

I make this dip over and over again. It's delicious, easy and quick to whip up, lasts for days (if there's ever any left!) and is a huge crowd pleaser.

Good in theory, but not enough feta. I followed the recipe exactly and ended up with runny, flavorless dip. It just tastes like hot honey. I recommend using 1.5 times as much feta.

Made this for Christmas Day and my family was literally eating it with a spoon it’s so good. Definitely recommend with a good crunchy bread or the cranberry crackers from TJs for a salty / sweet mix. I used ever so slightly less yogurt the second time I made it and think it worked better. Going to become a new staple!

Worcestershire Sauce

Sea Salt

Add YOGURT, MAYONNAISE, DRIED ONION, GARLIC, WORCESTERSHIRE SAUCE, and SALT to a mixing bowl.

Stir until well-combined.

Cover and refrigerate a minimum of 5 minutes, or until dried onions have moistened and softened. Serve chilled. Garnish options: fresh parsley or chives.

To store, refrigerate in an airtight container up to 5 days.
