A light, flavoursome carrot and ginger soup that’s ideal for batch cooking – double the recipe, eat half now, then freeze the rest for later and enjoy as an instant midweek meal.

Carrot And Ginger Soup

olive oil

onion,

garlic cloves, finely chopped

tbsp ginger

1.5kg carrots, roughly chopped

vegetable stock

Grated zest and juice ½ orange

Natural yogurt and fresh coriander leaves

Carrot and ginger soup

Heat the oil in a large saucepan over a medium-high heat and fry the onion for 10 minutes until soft. Add the garlic and 1½ tbsp of the ginger, then fry for another minute, stirring. Add the carrots, stock and orange zest. Bring to the boil, then turn the heat down to low and simmer for 45-50 minutes  until the carrots are tender.

Stir in the remaining ginger and the orange juice, then blend the soup until smooth using a stick blender (or whizz in a food processor or blender; see Make Ahead). Season with salt and pepper, then serve with a swirl of yogurt and a sprinkling of fresh coriander leaves.

Chicken Avocado Pita Sandwiches

avocados

plain Greek yogurt

cilantro (divided)

garlic salt

cherry tomatoes (quartered)

baby Swiss cheese

lemon

wheat pita pockets

extra virgin olive oil

Cut 1 piece of Swiss cheese into each pita pocket.

In a small bowl, combine Greek yogurt and garlic salt. Set aside.

In a medium size bowl, combine avocado, tomatoes, lemon juice, and half of the Cilanto. Set aside. In a skillet, brown the cooked chicken with the olive oil over medium heat for 3-4 minutes. While cooking, sprinkle with half of the cilantro.

Take off of heat and add 1/4 of the chicken to each pita.

Top the chicken with a drizzle of the yogurt mixture followed by a large spoonful of the avocado mixture, all within the pita pocket. Can be served cold, or grilled on a sandwich maker/foreman grill for 2 minutes to serve warm.

Chicken Fajita Meal Prep Lunch Bowls

Chilli Powder

Cayenne Pepper

Cumin Powder

Black Pepper (ground)

Salt

Quinoa

Cilantro

Lime Juice

Olive Oil

Garlic (minced)

Chicken Thighs (boneless and skinless (cut into thin strips))

Red Bell Peppers (deseeded and sliced)

Yellow Bell Peppers (deseeded and sliced)

Pepper

Onion (sliced (large))

Diced Avocados

Lime Wedges

To make the fajita seasoning, mix together chilli powder, cayenne pepper, cumin powder, ground pepper and salt in a bowl and set aside.

Start by adding half the fajita seasoning, minced garlic, lime juice and 1/2 teaspoon salt to the chicken. Set aside for 10 minutes.

Heat olive oil in a pan and add the chicken to the pan and cook for 10-12 minutes till the chicken is cooked through and slightly crispy.

Remove the chicken on a plate, and add onions and bell peppers to the pan. Add the remaining fajita seasoning and stir fry for 3-4 minutes on high heat.

Meanwhile start cooking the quinoa. Start by washing it a few times in cold water. Add quinoa, two cups water and 1/4 teaspoon salt to a saucepan and bring it to a boil. Simmer and cook for 15-20 minutes till the quinoa is cooked through and soft and fluffy. Once the quinoa is cooked through, add lime juice and cilantro and mix.

Cilantro Lime Quinoa

To assemble the chicken fajita meal prep lunch bowls, divide quinoa evenly into the bowls. Divide the chicken and peppers on top. Let them cool slightly before placing the lids on top and refrigerating.

To serve, remove the lid on the containers and heat them in the microwave. Top with your favourite topping and enjoy!

This healthy salmon and avocado rice bowl is packed with superfoods and makes a nutritious, energising lunch for two. Or, for a multi-coloured, many-textured healthy lunch, how about this salmon poke bowl recipe?

Salmon and avocado rice bowl with soy and lemon dressing

4½ tbsp soy sauce

Grated zest and juice 1 lemon

mini cucumbers, sliced (or ¼ regular cucumber, halved and sliced)

Cress/herbs, kimchi cabbage

Mix 4 tbsp soy sauce with the lemon zest and juice in a small bowl. Put the salmon fillets in another bowl, add half the soy/lemon sauce and turn to coat.

Add the broccoli to the steamer pan/basket over simmering water and steam for 3-4 minutes, then refresh under cold running water. Set aside.

Add the salmon to the steamer (discard the marinade in the bowl) and steam the fish for 5-6 minutes. Meanwhile, toast the seeds in a dry frying pan for 1 minute then, off the heat, stir in the remaining ½ tbsp soy sauce and ½ tbsp honey. Leave to cool.

Meanwhile, reheat the rice according to the pack instructions, then divide between 2 bowls. To each bowl add half the broccoli and avocado and a salmon fillet. Toss the cucumber in the remaining soy/lemon dressing, then share between the bowls. Serve with cress/herbs and pickled veg, with the sticky seeds scattered over.

My Big Fat Greek Salad

red wine vinegar

oregano

garlic powder

Salt (and pepper)

romaine lettuce

grape tomatoes (halved)

cucumber

onion

chickpeas, (drained (1 can))

artichoke hearts, (drained and halved (1 can))

Pepperazzi sweet peppers, (drained and halved)

kalamata olives

jarred sun dried tomatoes, (sliced thin)

feta cheese,

Place the ingredients for the Greek vinaigrette in a jar. Screw the lid on and shake well to blend. Taste, then salt and pepper as needed. Shake again. (I usually add about 1 teaspoon salt and 1/2 teaspoon pepper.)

Pile the chopped romaine lettuce in a large bowl. Neatly arrange the all the ingredients over the top of the lettuce.

When ready to serve, shake the dressing again and drizzle over the salad. Toss to coat.
