Healthy Greek Yogurt Ranch Dressing

plain greek yogurt

garlic powder

onion powder

lemon juice (or can sub apple cider vinegar)

dill chives

salt, plus more to taste

water dressing

Add all ingredients to a bowl or a mason jar and mix until well combined. If using a mason jar, you can simply put the lid on and shake the jar until well combined. Dressing serves 4, 2 tablespoons each.

Cilantro Avocado Ranch Dressing

Greek Yogurt

dill

chives

parsley

salt

rice vinegar

water,

black pepper (or 1/4 teaspoon ground black pepper)

avocado, chopped

cilantro, roughly chopped

juice of 1 lime

Combine all ingredients in a blender or food processor and pulse until smooth.

Taste, add salt and pepper to taste and water to thin to desired consistency. (Add more water for a salad dressing, less if using as a dip)

Chill until ready to serve. Store covered tightly and chilled up to 1 week.

Greek Yogurt Ranch Dressing is a simple, 10-minute dressing and ranch dip made with Greek yogurt, (optional) mayo, and ranch seasonings. The Greek yogurt offers protein, calcium, and (if using nonfat) fewer calories than a classic ranch dressing.

Greek Yogurt Ranch Dressing

Greek Yogurt (I use nonfat)

Mayo (optional)

1% Milk (or any fat content)

White Vinegar

Parsley

Chives (chopped)

Garlic (minced)

Sea Salt

Black pepper (to taste)

In a lidded jar or mixing bowl, shake (or whisk) GREEK YOGURT, MAYO, MILK, VINEGAR, PARSLEY, CHIVES, GARLIC, SALT and PEPPER until well-combined.

How to make ranch dressing without a blender

Place all ingredients in a tall container or glass jar, insert the blade end of the stick blender into the dressing ingredients.

Pulse the blender until ingredients are well-incorporated, then blend at a steady speed until dressing is fully blended.

To make ranch dressing using a stick blender

Cover and refrigerate in an airtight container up to 5 days until ready to serve.

Shake well before serving. Serve chilled.

I halved the recipe for my husband and I. It was delicious and bumped up the protein for our meal. I love that it made a nutritious dressing without preservatives and extra protein and a figure friendly ranch dressing!

I used mirin instead of rice vinegar (and doubled the amount) and it turned out great! The sweetness helped hide the tangy Greek yogurt flavor.

Wow. Tastes nothing like ranch dressing.   Maybe if it sits for a day or two it will be better.  Super disappointed!

Here’s an idea for how long it lasts: look at the expiration date on your Greek yogurt container. When you factor in the fact that you’re putting 2 natural preservatives in it - salt and garlic - it will probably last longer than that.

BBQ Ranch Chickpea Quinoa Bowls are perfect for make-ahead lunches. Featuring BBQ-glazed chickpeas, fire-roasted corn, pickled red onions, sharp cheddar, and quinoa with a healthy yogurt ranch dressing. Vegetarian, gluten free, and so flavorful.

BBQ Ranch Chickpea Quinoa Bowls

red onion, very thinly sliced

apple cider vinegar

kosher salt

dry (uncooked) quinoa

vegetable broth

olive oil

chickpeas, rinsed,

smoked paprika

BBQ sauce

frozen/thawed fire-roasted corn, warmed

avocado,

white cheddar cheese

2% plain Greek yogurt

mayonnaise

lemon juice

Tbsp. finely chopped fresh chives

dill (or 2 tsp. fresh)

Pickle Red Onions:Place red onions in a medium heat-proof bowl.In a medium pot, combine vinegar, 1/2 cup water, sugar, and salt; bring to a boil. Turn off heat and pour vinegar mixture over red onions.Let sit for at least 30 minutes (or up to 2 hours) at room temperature. (Note: you can prepare and refrigerate red onions up to 3 days in advance.)

Cook Quinoa:Using the same pot, combine quinoa, vegetable broth, and a pinch of salt; bring to a boil. Reduce heat to low, cover, and cook until quinoa is fluffy and liquid is absorbed, about 15 to 18 minutes. Remove from heat, stir, and place lid back on to let grains steam until you&#39;re ready to assemble the bowls.

Prepare Yogurt Ranch:In a medium bowl, combine Greek yogurt, mayo, lemon juice, chives, dill, garlic powder, onion powder, salt, and pepper; mix to combine.

Sauté Chickpeas:Heat oil in a medium skillet over medium heat. Once hot, add chickpeas and cook for 4 to 5 minutes, stirring only occasionally, until slightly crisp. Season with smoked paprika, garlic powder, and a pinch of salt.Add BBQ sauce and cook 1 to 2 more minutes, allowing sauce to glaze over chickpeas. (Note: if you prefer saucier beans, add an extra 1 to 2 Tbsp. of BBQ sauce.) Remove from heat. 

Divide quinoa mixture evenly between 3 bowls. Top with BBQ chickpeas, fire-roasted corn, pickled red onion, sharp cheddar, and avocado. Drizzle yogurt ranch dressing overtop, and garnish with fresh chopped chives, if desired.

Super simple yet delicious! Ingredients were all pantry staples. Single recipe made 4 large bowls. Entire family loved this recipe!
