Preheat oven to 400 degrees.

Line baking sheet with parchment or foil for easy clean up.

Combine parsley, chives, Feta, lemon, salt and pepper on cutting board.

Run knife through it several times, chopping up all ingredients to mix.

Spread on fillet.

Bake for 20 minutes or until cooked through.

Serve!

Sticky, sweet and spicy salmon with a zingy black bean and corn salad. This one’s healthy and fresh but feels like a treat.

To make the marinade, add the ancho chilli paste, ½ the honey and the juice of ½ your limes to a bowl and mix to combine. 

Pop the salmon on a plate, skin-side down. Use a spoon to coat the salmon with the marinade. Set aside at room temperature for 10 mins.

For the pickled red onions, finely slice the red onion and add to a bowl along with the juice of ½ the remaining lime and a pinch of salt. Mix to combine then set aside until ready to serve.

Place the salmon in the air fryer and cook at 180°C for 8-10 mins (depending on the thickness of your salmon) until cooked through.

For the salad, add the olive oil, remaining honey and the juice of the remaining limes to a large salad bowl along with a pinch of salt and pepper. Whisk to combine.

Halve the cherry tomatoes and dice the avocado. Drain and rinse the beans. Drain the sweetcorn. Thinly slice the chilli. Add all to the salad bowl and mix to combine.

Reserve a few coriander leaves for garnish. Finely chop the rest and toss through the salad before serving.

To serve, divide the salad between plates then top with the salmon and pickled onions. Finish with a dollop of yoghurt and the coriander leaves. Serve with tortilla chips, if you like.

Cannot recommend this enough, such a quick one and so tasty! I'd use less honey in the salad dressing, but that's personal preference. Otherwise, this is another winner.

A delicious, sweet and savory salmon recipe with a homemade blackening seasoning mix.

Baked Blackened Salmon

salmon filet ((or 4, 4-6 oz pieces))

tbsp paprika ((smoked

brown sugar

tsp chili powder ((use cayenne if you prefer it spicy))

garlic powder

tsp sea salt

oregano

tsp fresh cracked pepper

Preheat oven to 400 degrees fahrenheit. Prepare a sheet pan with foil and spray with nonstick spray.

In a small bowl, combine blackening seasoning ingredients. Stir to combine, and set aside.

Place salmon on sheet pan. Rub with olive oil using clean hands, or a basting brush.

Spoon blackening seasoning over salmon.Use as much or as little seasoning as you desire, being cautious of cross contamination with the raw salmon. Leftovers can be placed into an air tight container and stored in a spice cabinet for up to 3 months.

Bake for about 15 minutes, or until fish is 135 degrees at its thickest most internal part. Allow to rest and come up to temperature (fish is considered full cooked at 145 degrees Fahrenheit internally), for about 5-10 minutes.
