A healthier take on Sloppy Joes. Made with lean ground beef and lots of hidden veggies this a hearty yet healthy take on the classic sandwich. Sweet, tangy and satisfying!

Healthier Sloppy Joes

extra virgin olive oil

beef

carrots

celery

green bell pepper

red bell pepper

yellow onion (finely chopped)

garlic (minced)

brown sugar

red wine vinegar or apple cider vinegar

Worcestershire sauce

tomato sauce

ketchup

water

smoked paprika (optional)

salt and pepper (to taste)

In a large saucepan or skillet, saute ground beef in 1 tablespoon of olive oil over medium heat, breaking it up as it cooks. Once the meat has browned, add another tablespoon of olive oil and add the carrots, celery, bell peppers, onion and garlic. Cook, stirring occasionally, until the vegetables are beginning to soften, about 8-10 minutes.

Add brown sugar, vinegar, Worcestershire sauce, tomato sauce, ketchup, water and paprika to the meat and vegetable mixture. Stir to combine. Simmer over medium-low heat, partially covered, stirring occasionally. After about 15 minutes, the sauce should be thickened and the vegetables should be tender. If desired, you can add a splash of water, as necessary, to thin out the sauce.

Season to taste with salt and pepper. Scoop the sloppy joes into split buns and serve.

Sauté onion, pepper and garlic with drizzle of oil or broth until softened.

Add lentils and cook a few minutes. Add the rest of the ingredients.

Cook for about 20-30 minutes, depending on texture preference.

Serve with toppings of choice!

Instant Pot Sloppy Joe's (Paleo + Whole30)

coconut aminos

tomato paste

First, prepare the sauce by mixing all of the sauce ingredients together in a bowl or jar until they form a smooth sauce.

Pour the sauce in the bottom of the Instant Pot.&nbsp;

Breaking the ground beef into small pieces with your hands, add the ground beef to the Instant Pot on top of the sauce.

Chop the onion and bell pepper and add them to the instant pot on top of the ground beef. You don't need to mix anything, you want the sauce on the bottom so the Instant Pot will pressurize.

Secure the lid on the Instant Pot and close the pressure valve. Press the "manual" button (or "pressure cook" button) and set the time to cook for 15 minutes at high pressure. Quick release the pressure once finished.

Remove the top and mix the sloppy joes up, breaking up the beef into smaller pieces as needed. Taste and season with salt and pepper as desired.&nbsp;

Serve and enjoy.

Sloppy Joe Recipe

1.25 lbs 93% lean ground beef sirloin

tbsp steak seasoning salt

carrot (minced)

red bell pepper (minced)

tbsp red wine vinegar

Chop all the vegetables really fine, using a chopper or food processor.

Heat a large skillet over medium high heat. Add the meat to the pan and break it up as it cooks.

Season with steak seasoning and cook the meat until it browns.

Add onion, garlic, carrots, mushrooms and red peppers to the skillet.

Reduce heat to medium and add red wine vinegar and Worcestershire sauce, cook 5 more minutes.

Add tomato sauce and paste to pan, stir to combine. Cover and reduce heat to simmer and cook an additional 5 minutes.

Using a measuring cup, pile 1/2 cup of sloppy meat onto toasted buns.

Ground Turkey Italian Sloppy Joes

In a large skillet over medium heat, heat oil. Add onion and cook, 5 minutes. Add ground turkey, garlic, oregano, and red pepper flakes and cook until golden and no longer pink, 6 to 7 minutes.

Add marinara and stir until coated, then let simmer until slightly thickened, 8 minutes.

Heat broiler. Spoon ground turkey mixture onto hoagies and top with provolone, then broil until cheese is melty, 2 to 3 minutes.

Cook the sweet potatoes by poking holes all over with a fork, then cook in microwave 7 to 10 minutes, or slow cooker low 6 to 8 hours or oven 425F about 45 minutes, or until tender.

Whisk all the ingredients for the Mexican BBQ Sauce in a medium bowl until well combined. Set aside.

Heat the oil in a large skillet over medium-high heat and sauté the red onion for 3 to 4 min until softened. Add the garlic and sauté another minute.

Add the red bell pepper and jalapeño and sauté 3 to 4 minutes.

Pour the Mexican BBQ Sauce into the pan and simmer for about 10 minutes.

Add the pinto beans, black beans, and corn and stir to combine. Simmer another 5 minutes to heat through.

Taste and adjust seasonings as necessary or add salt/pepper to your liking.

Add the chopped cilantro and stir.

Serve hot on burger buns with guacamole and extra jalapeño slices, if desired.

The recipe arrived in my "inbox" at 5 am I had them made by 6 am. I took them to work  and treated  my co workers to lunch, they were yum yum YUMMY!!!  I did not have pinto beans so substituted kidney beans. The salsa I used had mango thertfore I did not add the sugar. Served in a soft tortilla wrap with lettuce and guacamole instead of a slider bun. Served as a taco salad on bed of romaine for lunch the second day. Will definitely add this recipe to my lunch/dinner "rotation"
