This lovely old-fashioned recipe for Cottage Cheese Griddle Cakes came from an old magazine cutting that my mum kept - I am still going though her things two years after she passed away. I cannot ever remember her making these, but she did make the most amazing Drop Scones (Scotch Pancakes) and these little cheesy griddle cakes remind me a lot of that style of pancake. I love the fact that this recipe uses very little flour too, and is protein rich with cottage cheese, eggs and milk. The original recipe suggested serving these straight from the &quot;griddle&quot; with crispy fried bacon, or with butter, jam or honey.

Cottage Cheese Griddle Cakes

(6 ozs) cottage cheese, NOT low-fat

How do you make a big, soft fluffy scone? If you have Gemma's secret scone recipe it's easy! Enjoy piping hot buttery scones in no time.

Gemma's Famous Fluffy Scone Recipe

400 g self-raising flour

sugar

butter

g cream

salt

g milk

Pre-heat oven 220 degrees Celsius. Prepare a tray with baking paper.

Place self-raising flour and sugar in TM bowl. Blend 9 sec/ Speed 9.

Add cubed butter to the flour. Blend 9 sec/Speed 9.

Add cream, egg, salt and milk to the TM bowl. Combine 30 sec/Speed 4. (the ingredients should have only just come together.)

Flour your bench or Thermomat and turn the dough out onto the bench or mat.&nbsp; (Use lots of flour as the mix will be very wet).

Gently pat the dough into a 2cm thick rectangle. Avoid overworking the dough.

Using a cookie cutter cut 10 scones.

Place scones on the tray so they're just touching each other.

Brush the top of the scones with a little milk.

Bake for 15 mins or until golden brown.&nbsp;

Afternoon Tea Sandwiches (Cucumber, Egg and Cress, Smoked Salmon)

½ an English (hothouse/seedless) cucumber

Salt

white sandwich bread

Dijon mustard OR curry powder ((optional))

Salt and black pepper

(5 ½ ounces) cream cheese, (at room temperature)

red onion

capers, (drained and finely chopped)

lemon juice

whole wheat (wholemeal) sandwich bread or pumpernickel bread

(7 ounces) sliced smoked salmon ((preferably Scottish style))

Peel and thinly slice the cucumber using a mandoline or sharp knife. You’ll need 36 slices. Place cucumber slices on a paper towel, lightly salt the cucumber, and top with another paper towel. Let stand for about 20 minutes to allow excess moisture from the cucumbers to be absorbed.

In a small bowl combine soft butter, herbs, and lemon zest until smooth.

Spread a thin layer of lemon herb butter on all 8 slices of bread. Top 4 slices of buttered bread with 9 cucumber slices each in even rows. Top with the remaining slices of bread, buttered side down.

Use a serrated knife to cut off the crusts and then cut the sandwiches into 4 squares/quarters, 3 rectangles/fingers, or diagonally into 2 triangles/halves.

Cucumber Tea Sandwiches:

Mix/mash together the egg, mayonnaise, mustard or curry powder if using, and salt and pepper. Divide the mixture over 4 slices of buttered bread. Top with cress and the 4 remaining slices of bread, buttered side down.

Egg and Cress Tea Sandwiches:

Combine the soft cream cheese with the onion, capers, and lemon juice and zest until smooth. Spread a thin layer of the onion-caper cream cheese on all 8 slices of bread. Top 4 slices of bread with sliced salmon, then cover with the remaining slices of bread, cream cheese side down.

Traditional Gluten Free Victoria Sponge Cake is made with two layers of vanilla sponge filled with strawberry jam and whipped cream. It&#x27;s a light cake perfect for afternoon tea.

Gluten Free Victoria Sponge Cake

xanthan gum (4 grams)

baking powder (13 grams)

fine sea salt (5 grams)

unsalted butter (softened)

eggs (room temperature)

vanilla extract

milk (room temperature)

strawberry jam (9 ounces)

Homemade Whipped Cream

Preheat oven to 325 degrees. Spray 2 8-inch round cake pans with non-stick spray and line the bottoms with parchment paper.

In a medium bowl, whisk together the gluten free flour, xanthan gum, baking powder, and salt. Set aside.

Add the butter and caster sugar to the bowl of a stand mixer fitted with the paddle attachment. Beat the sugar and butter together until light and fluffy.

Add the eggs, one at a time, beating well after each addition. Scrape down the bowl as needed to make sure there isn’t any butter stuck to the bottom. Then add the vanilla extract and milk and mix until completely incorporated.

Add the dry ingredients to the wet ingredients and beat until combined.

Transfer the batter to the prepared baking pans, dividing the batter evenly between the two, and smooth the batter into an even layer.

Bake for 22-26 minutes or until a cake tester comes out clean. Be careful not to overbake and dry out the cakes.

Cool the cakes in the pans for 20 minutes. Then remove from the pans and cool completely on a wire rack.

When the cake is completely cooled, make the whipped cream by adding the heavy cream, powdered sugar, and vanilla extract to a large bowl. Use a hand mixer to beat until soft peaks form.

To assemble, place one cake layer on a cake stand or plate. Spread the strawberry jam in an even layer over the cake, leaving about half an inch from the edge. Then top with the whipped cream.

Gently place the next cake layer on top of the cake and dust the top with some powdered sugar. Serve immediately.

375 gr bananen (3 grote)

60 gr dadels

vorm van ca 24 x 24cm, bijvoorbeeld een braadslede of brownievorm

1. Verwarm de oven voor op 180 graden (elektrisch), 160 graden (hetelucht).


2. Pureer de bananen en de dadels (zonder pit) glad met een staafmixer. Mix de eieren er doorheen. Voeg de bloem, koekkruiden, het bakpoeder en een snuf zout toe en spatel dit door het beslag.


3. Schenk het beslag in een ingevette bakvorm van 24 x 24 cm. Bak het bananen brood in 55 &#8211; 60 minuten goudbruin in de voorverwarmde oven. Het brood is gaar als je er met een satéprikker in prikt en deze er schoon en droog uitkomt. Haal uit de vorm en leg op een afkoelrekje.


4. Schil de kiwi en snijd in plakjes. Wanneer het brood is afgekoeld besmeer je hem met kokosyoghurt en legt er de plakjes kiwi op. Garneer met de kokossnippers. De kokosrasp kun je eventueel kort roosteren in een droge koekenpan, zo krijgen ze een lichtbruin kleurtje.
