Homemade Pancake Mix

all-purpose flour

baking powder

baking soda

salt

sugar

pancake mix above

milk (or as needed)

butter

Combine all ingredients. (You can easily double or triple this part)

Store tightly sealed in a cool dry place.

Dry Pancake Mix

Preheat &amp; lightly grease a griddle or pan over medium to high heat.

Combine 1 cup of pancake mix with egg, ½ cup milk &amp; butter or oil. Add additional milk as needed.

Pour ⅓ cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 – 2 minutes).

To Make Pancakes

DIY homemade pancake mix. It's so easy to make and it makes incredibly tasty perfectly fluffy pancakes. You'll love having a head start on once you have this on hand!&nbsp;Yield: Dry mix yields 5 batches of 8 - 9 pancakes.

(2.5 lbs) all-purpose flour*

(4.2 oz) dry non-fat milk powder

(3.5 oz) granulated sugar

(2.2 oz) baking powder

Tbsp salt

Tbsp vegetable oil or melted butter

In a large mixing bowl whisk together flour, dry milk, sugar, baking powder and salt for about 1 1/2 minutes to evenly distribute everything. 

Pour into an airtight container and store 8 months (or earlier if ingredients expire before then).

To make mix: 

Preheat an electric griddle to 400 degrees F. In a large mixing bowl whisk together water, oil and egg until well blended. 

Add in 2 cups (10 oz) of the pancake mix and whisk until combined (batter should still be slightly lumpy, don't over-mix).

&nbsp;Pour batter 1/3 cup at a time onto griddle (butter griddle first if necessary), if batter is thick spread outward slightly.&nbsp;

Cook until bottom is golden brown then flip and cook opposite side until golden brown. Serve immediately with butter and maple syrup.

Cook on one side until there are bubbles forming and popping on the top of the cake and the edges touching the griddle/pan don't look wet. Carefully flip once, and cook for 2-3 minutes on the other side.
