This quick vegetable side dish is perfect for spring parties.  Radishes and turnips with a honey glaze and sprinkled with fresh mint and chive are a bright addition to any menu.

Honey-Glazed Radishes and Turnips

Honey-glazed chicken wings

1kg pack chicken wings

tbsp clear honey

soy sauce

sesame seeds

milliliters soured cream

buttermilk

mayonnaise

lemon juice

smoked paprika

red chillies

celery

baby carrots

Heat oven to 220C/200C fan/gas 6. Put the chicken wings in a large roasting tin. Mix the honey, soy and 1/2 tbsp sesame seeds in a bowl, then pour over the wings. Use your hands to mix and ensure all the wings are coated, then roast for 20 mins until cooked through, sticky and golden.

Meanwhile, combine the soured cream, buttermilk, mayonnaise, lemon juice and paprika. Season well, then chill until ready to serve.

When the wings are cooked, scatter over the remaining sesame seeds and the chilli. Serve with the dip, and some carrot and celery sticks for dunking.

Honey Glazed Salmon

salmon fillets, (skin on)

In a small bowl, whisk together the honey and soy sauce. Add in the minced garlic and orange juice. Stir and set aside.

Pat dry salmon fillets with a paper towel and season with salt and pepper on both sides of fillet.

Heat oil in a large nonstick skillet over medium high heat. Place salmon in the pan and pan fry fillets for 2-3 minutes per side, occasionally pressing down gently on fillets.

Add prepared glaze over salmon and reduce heat.

Simmer until salmon is cooked through (120°-130° is medium rare, 135°-145° is well done) and glaze thickens.

Make sure to spoon some glaze over the salmon as it cooks.

These delicious Honey-Glazed Apple Bran Muffins are moist, tender, studded with sweet chunks of apple and laced with cinnamon. They rise up with high-domed tops and come together quickly with one bowl and no mixer!

Honey-Glazed Apple Bran Muffins

Preheat oven to 400˚F (204˚C). Spray 16 muffin cups with non-stick spray (Or see tip above for making a small loaf of bread in addition to 12 muffins.)

Whisk together oil, sugar and eggs in a large bowl until well blended. Add molasses, buttermilk and vanilla. Stir to combine.

Sprinkle baking powder, baking soda, cinnamon and salt over the top of the egg mixture. Stir well to combine.

Add the wheat bran, whole wheat and all-purpose flours. Stir just until all of the flour mixture is incorporated (do not overmix). Add apples and stir to combine.

Spoon batter into prepared muffin tins, filling almost to the top. Bake for 12-15 minutes until firm to touch and a tester comes out clean.

Allow to sit in muffin tin for 5 minutes, then remove to a cool rack.

For the muffins:

Combine butter and honey in a small microwave-safe bowl. Cover with a paper towel and cook in the microwave on high power for 20-30 seconds until the butter is melted. Stir well with a fork to combine. Brush mixture over the top surface of warm muffins.

Serve warm or allow the muffins to cool completely before storing in an airtight container. Freeze for longer storage.
