1. In a medium size pot, whisk together the egg yolks and sugar until the yolks are pale yellow in color. Add the milk, vanilla, and sea salt. Set the pot over medium high heat. Bring the mixture to a low boil. Cook, stirring consistently, until the mixture thickens and easily coats the back of a wooden spoon, about 8-10 minutes. Once thickened remove from the heat.&nbsp;2. Place a fine-mesh sieve (strainer) over a large heatproof bowl and immediately strain the custard into the bowl. Cool slightly, cover and place in the fridge for 4 hours or overnight.3. To make the cookie dough. In a large bowl, beat together the butter, brown sugar, and sugar until combined. Add the egg and vanilla and beat until combined and creamy. Add the flour and salt, beat until combined. Stir in the chocolate chips. Spread the cookie dough in an even layer on a parchment lined baking sheet. Freeze 20-30 minutes and then roughly chop the cookie dough into small, bite size pieces.&nbsp;4. To make the oatmeal Cookies.&nbsp;Preheat the oven to 350 degrees F.&nbsp;5. In a large bowl beat together the oatmeal, flour, brown sugar, baking soda, salt, canola oil, egg, and vanilla until the dough is moist and all the ingredients are combined. The dough will be crumbly. Mix in the chocolate chips.6. Using your hands clump together a tablespoon of dough. Use you hands to really squeeze the dough into a ball. Place on a parchment lined baking sheet. Repeat with remaining dough.7. Bake for 12-15 minutes or until set and golden. Let cool completely.8. Churn the ice cream in an ice cream maker according to the manufacturer’s instructions. During the last few minutes of churning, add the cookie dough pieces.&nbsp;9. Using an ice cream scoop, scoop 1 scoop of ice cream on to half of the cookies. Sandwich with the remaining cookies, gently pushing down. Transfer to the freezer and freeze for 4-6 hours or until firm (or eat now!). Remove 5-10 minutes before eating to soften. Enjoy!

Chocolate Chip Cookie Ice Cream Sandwiches

Cream butter, sugar, and brown sugar in a stand mixer bowl on medium speed for about two minutes.Add eggs, vanilla, and lemon juice, blending with mixer on low speed for 30 seconds, then medium speed for about two minutes, or until light and fluffy, scraping down bowl.

With the mixer on low speed, add flour, oats, baking soda, salt, and cinnamon, blending for about 45 seconds. Don’t overmix.

Portion dough with a scoop (about three tablespoons) onto a baking sheet lined with parchment paper, about two inches apart.

Preheat oven to 300°F. Bake for 20 to 23 minutes, or until edges are golden brown and center is still soft. Remove from oven and cool on baking sheet for about one hour.

This dough is perfect to have in the freezer; slice off as many biscuits as you need and bake them fresh. They also make a quick dessert with ice cream between, says Valli.

6-7 rectangle shaped ice cream sandwiches (depending on the size)

candy bar, chopped (I used Twix)

chocolate syrup, to drizzle

Small-batch Ice Cream Cookie Sandwiches

oat flour ((120 g⁣))

almond flour ((14 g⁣) or more oat flour)

maple syrup ((42 g⁣))

tbsp sugar ((24 g⁣) coconut/brown works best)

tbsp (nut) milk ((45 g⁣))

tbsp chocolate chips ((30 g⁣) I used minis)

(dairy-free) ice

Line a standard loaf pan with parchment. ⁣

Mix oat flour, almond flour, sugar, maple syrup and vanilla. Add enough nut milk to form a non-sticky cookie dough. Fold in chocolate, press into pan, freeze to set, about 1 hour.⁣

While the ice cream softens, cut your cookie layer into two.⁣

In the loaf pan make a giant square sandwich with two layers and ice cream.⁣

Freeze to set another hour or so, slice, and enjoy (keep frozen!)

Stir milk, cream, and brown sugar in a medium saucepan over medium-high heat until mixture comes to a rolling boil (it may look curdled which is fine).

Meanwhile, whisk yolks, sugar, and salt in a medium bowl until mixture is pale yellow and sugar dissolves, a couple of minutes.Whisking yolk mixture constantly, slowly and gradually add 1/4 cup of hot cream mixture at a time (to prevent the eggs in the yolk mixture from scrambling.). Return to pan. Stir custard over low heat until thick enough to coat the back of a spoon, about 2-5 minutes (this isn&#x27;t a terribly thick custard, it will be runny like a gravy).

Place a medium metal bowl in a large bowl of ice water; set a fine-mesh sieve over metal bowl. Immediately strain custard into metal bowl. Let custard cool completely, stirring often.

Stir 1 Tbsp. bourbon and vanilla into custard. Add more bourbon to taste by teaspoonfuls, if desired. Do Ahead: Custard can be made 1 day ahead. Cover and chill.

Process custard in an ice cream maker according to manufacturer’s instructions. Transfer ice cream to an airtight container, cover, and freeze. Ice cream can be made 3 days ahead.

Brown Sugar Bourbon Ice Cream:

Preheat oven to 375° F and line 2-4 baking trays with parchment paper.

In a medium bowl, whisk together flour, soda, cinnamon, cloves, ginger and salt. Set aside.

In the bowl of an electric stand mixer, beat together butter and granulated sugar on medium speed for 1 minute until light and fluffy. Add in the eggs and molasses, and beat on medium-low speed until combined. Gradually add in the dry ingredient mixture and beat until combined. Cover and refrigerate dough for at least 30 minutes, until it is chilled.

Roll the dough into small balls, about 1-inch in diameter. Fill a small bowl with demerara sugar, and roll each ball in the sugar until it is completely coated. Place on cookie sheet at least 1 inch apart, then bake for about 8-10 minutes, until the cookies begin to slightly crack on top. (They may crack more while cooling.) Remove from the oven and let cool for a minute or two. Then transfer to wire racks to cool completely.

Use immediately or store in a sealed container for up to 1 week.

To assemble:Using an ice cream scoop, scoop ice cream onto one cookie and place another cookie on top. Eat immediately, or place in freezer to firm up (at least 30 minutes).

REESE'S Peanut Butter Cup Ice Cream Sandwich

Step 1

Remove wrappers from peanut butter cups. For each sandwich cookie, place 2 peanut butter cups on flat side of one cookie; place on paper towel. (Sandwiches may also be made using just 1 peanut butter cup).

Step 2

Microwave at medium (50%) 10 to 15 seconds or until peanut butter cups have softened. Immediately top peanut butter cups with 1/2 cup ice cream. Gently press second cookie on ice cream to form sandwich. Serve immediately.

Peanut Butter Cookie Ice Cream Sandwiches

In the bowl of an electric mixer, cream butter and sugars together on medium speed.

Add egg and egg yolk, vanilla extract, and peanut butter. Mix until creamy.

In a separate bowl, mix flour, salt and baking soda. Gradually add to wet ingredients on low speed until a smooth dough forms.

Scoop 1 inch balls onto a baking sheet (12 per batch), and press with a cookie stamp, or make a crosshatch pattern with a fork on top of the dough balls,

Bake 9-10 minutes, or until the edges are just turning golden brown. Remove from the oven, and transfer to a cooling rack.

When the cookies are baked and cooled, freeze the until very firm in an airtight storage container.

When the cookies are firm, add one scoop (about 1/4 cup) of vanilla ice cream on one cookie, and top with a second cookie. Work quickly and do a few at a time, stopping to add the assembled cookie sandwiches to the freezer as needed so the ice cream stays frozen.

Once all the sandwiches are assembled and frozen solid, prepare the chocolate for dipping.

For the Cookies

Stir together 3 cups of milk chocolate chips and 1 tablespoon oil in a heat safe glass bowl over a pan with a half an inch of simmering water (double boiler) until smooth. Dip half of each cookie sandwich into the melted chocolate, then roll it in the crushed peanuts. Place it on a parchment paper lined baking sheet and freeze. Once the chocolate is set, transfer them to freeze long term in an airtight container. The longer the cookies sit in the freezer, the softer the cookie will be and the easier they are to eat. I recommend making them one week ahead of time.
