Thick and chunky Fresh Homemade Pineapple Sauce is a tasty tropical topper for ice cream sundaes or pound cake. Great on biscuits too!

Fresh Homemade Pineapple Sauce

pineapple (chopped)

brown sugar

cornstarch

salt

corn syrup

vanilla

lemon juice

To the bowl of a food processor, add the pineapple and pulse to lightly puree, still leaving some larger chunks. Set aside.

In a medium saucepan, combine the sugar, cornstarch and salt.

Stir in the corn syrup and the pineapple.

Over medium heat, bring to a boil while gently stirring constantly. Stir until mixture thickens, about 2 - 3 minutes.

Stir in the vanilla and remove the saucepan from the heat.

Stir in the lemon juice. Set aside to cool slightly.

Serve warm or store in the refrigerator in a tightly covered container for up to 7 days.

This luscious sauce is silky smooth and perfect for ice cream or dipping apples.

Add sugar and cornstarch to a saucepan over medium heat. Gradually add water and stir to combine. Cook until mixture starts to boil and then boil for 1 minute, stirring constantly. Remove from heat.

Stir in lemon zest, lemon juice and butter. Let cool 30 minutes before serving. Serve warm.

Pacific Red Pineapple Sauce

In a bowl mash strawberries with sugar. Transfer to a saucepot with lemon juice and pineapple juice.

Bring to a boil, reduce to a simmer, cooking for 30 minutes, stirring frequently.

You can serve this hot over cake or brownies or serve it cold over ice cream.
