Take 1 liter milk in a pan and boil on low flame for making it thick. Keep stirring the milk or the milk will burn. Grind the peanuts coarsely and add them to the milk. Keep stirring the mixture continuously. After the milk has become thick, add grinded peanuts and keep stirring Add almond milk powder and keep stirring. Keep for boiling the mixture for 10 minutes and then add sugar to it.  keep stirring the mixture continuously. . Add cardamon. Boil for another 20 25 min on low flame. Add dry fruits. Cool down the mixture. . Transfer it to a mould.. Let it freeze overnight. . Remove the ice cream from the mould. Your Malai kulfi is ready!!!

Kulfi Ice Cream (No-Churn Indian Ice Cream)

saffron ((7-8 strands soaked in 1 tablespoon hot water))

heavy whipping cream (chilled (1 pint))

oz sweetened condensed milk (chilled (1 can))

cardamom

rose water (or kewra essence (see notes for substitution))

assorted nuts (pistachio, cashews, almonds) (finely chopped (see notes))

Soak saffron strands in hot water while you whip the cream. Alternatively, add saffron and cold water to a microwave safe bowl and heat for 25-30 seconds.

Soak Saffron

In a large mixing bowl, add heavy cream and start whipping using a hand mixer. Alternatively, use a stand mixer and use the whisk attachment. Whip the cream till it forms stiff peaks.

Whip Heavy Cream

Add a scoop of whipped cream into the condensed milk bowl and mix to combine. This lightens the condensed milk. Then pour the condensed milk into the whipped cream. Using a spatula (not whisk) gently fold the two together till you reach a silky-smooth consistency. 

Combine with Condensed Milk

Add soaked saffron along with the liquid, crushed cardamom, rose water and chopped nuts into the bowl and gently fold it in. Mix till well combined.

Mix Flavorings and Nuts

Pour this mix into a parchment lined metal pan or a glass bowl. Seal it tightly using an airtight lid or a few layers of plastic wrap and stick it in the freezer. Chill for 6-8 hours for the ice cream to set properly. Enjoy!

Kulfi Ice Cream (No Churn Eggless Indian Ice Cream)

Kulfi or Indian ice cream is a sought-after dessert, this recipe uses mainly three ingredients – evaporated milk, heavy cream, and sugar. Check out how to make kesar pista Kulfi without condensed milk in an ice cream maker.

Indian Ice Cream (Ice Cream Maker)

oz Evaporated milk (1 can)

tbsp Organic cane sugar

Heavy cream

Salt

Cardamom powder

tbsp Pistachios ((chopped))

15-20 strands Saffron

Mix the sugar, pinch of salt, and evaporated milk with the whisk attachment of a hand blender (on low speed) until the sugar dissolves.

Add the heavy cream and cardamom and mix it. Do not whisk at this stage

Add the saffron strands and refrigerate the mixture for atleast 2 hours.

Mix the ingredients well and the mixture will have a golden color from the saffron.

Pour the ingredients into the ice cream machine bowl.

Start the ice cream machine for 35 mins, preferably on the gelato setting.

Add in the pistachios at about 25 mins or as per manufacturer instructions for add-ins.

Kulfi is ready and is of soft-serve consistency. It can be stored in an air-tight container or kulfi molds for a firmer consistency. Freeze the kulfi in a container at -5 deg F for 6-8 hrs.

Anjeer Kulfi Using Ice Cream Maker

Soak the dried fig in water for about 30 minutes

Blend the soaked dried fig (discard water) coarsely using a hand blender.

Add a can of evaporated milk, sugar and a pinch of salt and continue blending. All sugar should dissolve and the dried fig is blended well.

Add heavy cream and mix it gently.

Refrigerate the mixture for atleast 2 hours.

Pour the ingredients into the ice cream machine container.

Blend the milk, thandai syrup, and salt using a hand blender or stand mixer until everything is well mixed.

Cashews ((raw, chopped))

Raisins

Add the heavy cream and vanilla extract and mix it. Do not whisk at this stage.
