Cooking beets is quick and easy in a pressure cooker! Here's how to make Instant Pot beets, which is half the time of oven roasting.

Wash the beets well. Slice off the stem and root end of each of the beets. (You can save the greens to use in salads.)

Place the stainless steel trivet into the Instant Pot, then place the beets on top. Add 1 cup water. Lock the lid of the Instant Pot. Place the pressure release handle (vent) in the “Sealing” position.

Cook on high pressure for 12 to 20 minutes

Press the Pressure Cook button, making sure the “High Pressure” setting is selected, and set the time: 12 minutes for small beets and 18 for very large beets. Note that it takes about 5 minutes for the pot to “preheat” and come up to pressure before it starts cooking. (During cooking, avoid touching the metal part of the lid.)

Quick release

Vent the remaining steam from the Instant Pot by moving the pressure release handle to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. Open the pressure cooker lid.

Test

Because beets all vary in size, the timing varies. Test doneness by sliding in a knife to make sure that the beets are tender. If the knife slides right in, they&#8217;re done! If there is resistance, cook 1 to 2 more minutes on High Pressure.

Rinse and peel

Allow to cool under water, then rub off the skin with your fingers (it will come right off!). Serve immediately, or store in the refrigerator for 3 to 4 days.

Clean beets to remove any dirt or dust. Cut off and discard roots and stems.

Place a rack into the bottom of a 6 Qt instant pot and add 1 cup water. Place beets over the rack in a single layer, cover with the lid and set the valve to the “sealing” position. Pressure cook on high pressure then do a quick pressure release by carefully flipping the valve to the “venting” position until all of the steam is released according to the pressure indicator.

Cool the beets and wear gloves to peel the skins.

How to Cook Beets in the Instant Pot

Wash and trim the beets. Cut the stems so that they are about 1/2 inch long.

To your Instant Pot add the steaming rack inside and arrange beets on top of the rack.

Set Instant Pot to &#8220;Pressure Cooker&#8221; mode and cook on high pressure for 12 minutes.

When the beets are finished cooking, do a quick release method.

Unlock the lid and test the beets. Using a sharp knife poke the beets. If the knife pierces the flesh without too much resistance, they’re done. If the beets still seem a little too hard, cook them under high pressure for 2 to 5 more minutes.

Let the beets rest for 10 minutes. Once cooled, slide the skin right off using your hands.

Beets can be stored in an air tight container in the refrigerator for up to a week.
