Instant Pot Pot Roast with tender beef, potatoes, carrots and a flavorful gravy. This easy pot roast recipe is the perfect meal for Sunday dinner.

Instant Pot Pot Roast

beef chuck roast

Kosher salt

black pepper

olive oil

onion (coarsely chopped)

garlic (minced)

tomato paste

Worcestershire sauce

beef broth

thyme (or 1 teaspoon dried thyme)

carrots

baby potatoes

cornstarch

Cut the beef chuck roast in half.

Sprinkle the salt, pepper and 1 teaspoon dried thyme (if not using fresh thyme) on all sides of the beef. (If using fresh thyme sprigs you will add them later.)

Heat the olive oil in the Instant Pot using the saute setting until hot.

Place the seasoned beef in the pot and brown on both sides, about 4 minutes per side. Do not move the beef until you are ready to turn it; once it has seared it should easily release from the bottom of the pot. After browning the beef on both sides transfer it to a clean plate.

With the Instant Pot still on saute mode, add the onion to the pot. Cook until softened and lightly browned, stirring often and scraping up any browned bits from the bottom of the pot, about 4 minutes. Stir in the garlic and press cancel to turn off the Instant Pot.

Add the tomato paste, Worcestershire sauce and beef broth. Stir and scrape up any browned bits from the bottom of the pot.

Place the beef back in the pot. If using fresh thyme sprigs add them now.

Close the Instant Pot lid and turn the steam release valve to the sealing position. Cook on Manual/Pressure Cook, high pressure, for 60 minutes. When the cook time ends, allow the pressure to release naturally for 10 minutes and then quick release any remaining pressure by turning the valve to the venting position.

Open the Instant Pot and add the carrots and potatoes on top of the beef. Close the lid and pressure cook for 10 minutes more on high pressure using the Manual/Pressure Cook function. When the cook time ends allow the pressure to release naturally for 10 minutes.

Remove the beef and vegetables from the Instant Pot. Discard the thyme stems. Use two forks to shred the roast into chunks.

Thicken the juices in the Instant Pot (optional): Turn the Instant Pot on saute mode. Stir together 2 tablespoons cornstarch and 2 tablespoons water in a small bowl and pour into the liquid in the pot. Cook, stirring occasionally, until gravy has thickened slightly.

Serve pot roast with the gravy.

This easy meal is perfect. The instant pot does most of the work for you and leaves the meat moist and delicious!

Instant Pot Bottom Round Roast

Open meat package and pat it dry with a paper towel. Salt and pepper both sides of the roast

Plug Instant pot in and press the sauté button. Let the IP heat up (the display will display &quot;hot&quot;) and add olive oil and once that heats up add the roast fat side down. Sauté for 3 minutes and flip to the other side for another 3 minutes. Remove and set aside

Add wine and use a wooden spoon to scrape the bottom of the IP insert to deglaze. Make sure to get all the flavor crystals

Add the meat back into the IP, then add broth, onions, rosemary, sage and oregano

Seal the IP and make sure the venting knob is in the sealed position. Press pressure cooker button and set the time for 60 minutes. Make sure the mode is normal and the pressure is high

Once the IP beeps, let it release the pressure naturally (this can take up to 30 minutes). The float valve or silver button will drop on the lid

Add carrots, potatoes and celery. Seal IP and make sure the venting knob is sealed. Press pressure cook button and set timer for 10 minutes - the IP won&#x27;t take as long to come to pressure this time

Wait 10 minutes before doing a quick release (see notes at how to do this)

Remove meat to a platter and take the vegetables out of the broth. Let the meat rest for 10 minutes before shredding or cutting into it

Take two forks and shred the meat however large or small you want it

Plate some meat and veggies and ladle on some gravy

Create the seasoning

In a small bowl, combine seasoning salt, garlic, parsley, onion powder and pepper. Sprinkle over roast to season.

Sear the roast in the Instant Pot

Turn Instant Pot to saute. When it reads "hot", add the oil and sear roast on all sides. To do this, place the roast in the pot and do not move for 2-3 minutes. When you flip it, it should release from the pan easily.

Add the sauce ingredients

To the Instant Pot add broth, tomato paste, vinegar and Worcestershire sauce -- if there are brown bits stuck to the bottom from the meat, give them a scrape and they should release easily. Stir to combine.&nbsp;

Place the lid on and pressure cook

Put the lid on and turn the valve to sealing. Select Manual or Pressure Cook and set the cook time for 55-65* minutes on high pressure, depending how large your pieces are. (see notes below) 

Let pressure release and open the lid

When the cook time is over, turn the Instant Pot off and let the pressure release naturally for 10 minutes before turning the valve to venting and opening the lid.

Add the potatoes and carrots

Add the Little Potatoes and carrots, put the lid back on, turn the valve to sealing and select Manual or Pressure Cook for 3 minutes.

When the cook time is over, let pressure release naturally for 10 minutes before moving the valve to venting, releasing remaining pressure and opening the lid.&nbsp;

Serve the roast beef with gravy and vegetables

Remove beef from the Instant Pot and slice or pull as desired. Serve with potatoes and carrots.

OPTIONAL: If desired, combine equal parts corn starch and water, stir into the remaining juices and turn the Instant Pot to saute. Whisk continuously until juices are thickened. Taste sauce and adjust seasoning as desired, adding a tablespoon of honey if you want to add a little sweetness.

For the Instant Pot, set your pot to saute and sear the roast on both sides in olive oil.

Add in all of the packages followed by the water.

Close the lid and seal, and make sure that the value is set on SEALING.

Use the manual button and then set for 120 minutes.

Let it release naturally ( about 24-26 minutes)

Remove and serve in the bucket of gravy!

For a crockpot, follow instructions 1 and 2 and then cook on low for 8-10 hours.
