Elevate your next ramyun fix with this quick, easy and intensely-flavoured spicy sauce spiked with Gochujang and a hot chilli-garlic oil. Don&#39;t skip the peanut butter, as it adds a subtle creaminess to offset the shades of heat.

Spicy Korean-Inspired Gochujang Ramen Noodles

noodles

garlic

tsp gochugaru ((can sub crushed red chilli flakes))

sesame seeds

spring onions

1½ tbsp sesame oil

tbsp gochujang/ red chilli paste

1½ tbsp smooth peanut butter

tbsp rice vinegar

tbsp light soy sauce

lime juice

brown sugar

Cook ramen noodles/ noodles of choice according to package instructions. Drain and set aside, reserving some of the noodle water.

Add the garlic, gochugaru, sesame seeds and spring onions to a heat-proof bowl.

Gently heat the sesame oil and and once hot, pour it over the the chilli-garlic mixture. Let it sizzle for a few minutes , then whisk in the remaining ingredients (gochujang, peanut butter, rice vinegar, soy sauce lime juice and brown sugar).

Taste and adjust according to preference, for instance adding more lime juice for a zing. You could even add a dollop of your favourite hot sauce to amp up the heat. 

Now mix in the noodles along with a splash of the noodle cooking water. Toss until evenly combined and serve with more spring onions for garnish.

Stir up spicy chilli garlic noodles in less than ten minutes with your favourite instant noodles and a handful of staple Asian pantry ingredients!

Chilli Garlic Ramen Noodles

tbsp spring onion (green part)

tbsp crushed red pepper flakes

peppercorns

paprika

tbsp neutral flavoured oil

tbsp dark soy sauce

tsp rice vinegar/ Chinese black vinegar vinegar

hot sauce of choice (optional)

Cook your instant ramen noodles according to package instructions. Drain, reserving the cooking water.

Meanwhile, in a a heat-proof bowl, mix together the garlic , spring onions, sesame seeds, crushed red pepper flakes and finely-ground Sichuan peppercorns

Heat the oil and pour it over the garlic and spice mixture. Let it sizzle for a few minutes.

Mix in the dark soy sauce, rice vinegar and chilli oil if using.

Add the noodles along with a splash of the cooking water if required to loosen up the noodles.

Serve hot, with a sprinkling of sesame seeds and spring onions on top.

A quick and tasty ramen noodle stir-fry that packs in layers of flavor. Use frozen vegetables and ground chicken (or meat or vegetarian protein) for the ultimate easy pantry meal.

Ground Chicken Stir-Fry with Ramen Noodles

Japanese-style ramen noodles

Asian chili garlic sauce

vegetable oil

mixed vegetables

chicken broth

baby spinach leaves

Put the chicken in a medium mixing bowl. Add the ramen soup base packets, chili garlic sauce and garlic. Stir to combine.

Heat the oil in a large non-stick skillet over medium-high heat until it begins to shimmer.

Add the chicken to the pan and cook until it's cooked through (no longer pink), stirring frequently, 3-5 minutes.

Empty the noodles, toppings packets and frozen vegetables into the pan. Add the broth or water and stir to coat the noodles. Simmer 5 minutes, stirring occasionally, until the liquid is completely absorbed and the noodles are softened.

Remove from the heat and stir in the spinach until it wilts, about 1 minute. Serve warm.
