<p>Heat oven to 190C/170C fan/gas 5. Prick the potatoes with a fork, rub with the oil, then toss with sea salt. Arrange on a baking sheet and bake for 1 hr. Let the potatoes cool for 10-15 mins, then cut a small cross in the top of each and pinch the bases to open a little. Add a teaspoon of soured cream to each, a little freshly ground black pepper, and a sprinkling of chives. Serve straightway.</p>

Heat oven to 200C/fan 220C/gas 7. Oil and season the potatoes, then bake for 1 hr until a knife slides in easily and the skins are crispy. Cool for 10 mins.

Halve the potatoes lengthways and scoop out the cooked potato into a bowl, leaving a thin layer behind so that the skins still hold their shape. Mash the potato with the butter, mustard and seasoning, then stir in the spring onions, 175g cheese and kidney beans. Pile the mixture into the potato skins and scatter with the remaining cheese. Can be made to this stage a day ahead and chilled. Bake for 30-40 mins until golden. Serve with the sausages and salad (see 'Goes well with').

1kg Maris Piper Potatoes

Tbsp Goose Fat

Garlic Bulb

Thyme

Rosemary

Peel your potatoes and quarter them. Add to a pan of boiling water with a large pinch of salt. Parboil for 10 minutes.

While the potatoes are cooking, add goose fat to a roasting tray. Place tray in the oven for 10 minutes so the fat can melt and heat through.

Drain your potatoes and re-add to the pan. Place a lid on top and give them a good shake. Remove the lid. The outside of the potatoes should be nice and fluffy. This is KEY to the crispiness.

Place your fluffy potatoes in the roasting tray. Add 10-12 whole garlic cloves (skin on), a large handful of rosemary, a large handful of thyme, a big pinch of salt and some pepper. Toss everything together. Place the potatoes in the oven for 1 hour and 15 minutes.

KEY PART OF THE METHOD. Every 25 minutes you need to remove the roasting tray from the oven and gently turn the potatoes in the goose fat. This will ensure a nice even golden outside.

Once the potatoes are gold all over, remove from the oven. Serve with some salt sprinkled on top and enjoy!

Heat the oven to 220C/200C fan/gas 7. Rub a little oil over each potato and put on the top shelf of the oven. Bake for 20 mins, then turn down the oven to 190C/170C fan/ gas 5 and bake for 45 mins-1 hr more until the skin is crisp and the inside soft. Make a cross in the centre of each potato, dollop over the soured cream and serve.

Heat the oil in a large non-stick pan over a medium-low heat and fry the onions for 10 mins, stirring occasionally until golden. Stir in the garlic, then add the mince and cook, breaking it up with a wooden spoon as you do, for a few minutes more until browned.

Add the passata, carrots, thyme, bouillon powder and pepper, then cover and cook over a low heat for 25-30 mins, stirring occasionally until the meat is cooked and veg is tender. Add a splash of water to loosen, if you like, then stir in the peas and cook for 5-7 mins more until tender. Serve hot over jacket potatoes. Once completely cool, the mince sauce will keep frozen for up to three months. Defrost in the fridge overnight and reheat until piping hot.

Heat your oven to 400 degrees.

Rinse the potatoes, dry them, and remove any eyes. I like to stab the potatoes with a knife a couple times just to eliminate the unlikely possibility that they explode while the cook.

Next, take 1 tablespoon of butter and slather it all over the potatoes. Place the potatoes in a baking pan, and sprinkle generously with salt.

Bake the potatoes for 45-60 minutes. You want the potatoes to be crisp on the outside but very soft on the inside.

Heat up your baked beans in a skillet until they a bubbling hot.

Place the potatoes on plates, then slice them in half. I like to mash up the inside of the potato a little with a fork. Then add a slab of butter. Top generously with beans and cheese.

You’re absolutely right on the Heinz beans from England. Been doing jacket potatoes for a while and much better w the English beans. Way less sweeter. Better. I did add sour cream and scallions.

Heat the oil in a non-stick saucepan over a low heat and fry the onion for 5 mins until golden. Add a drop of water if it looks like it’s starting to burn.

Stir in the garlic, then tip in the passata, dates, vinegar, bouillon and bay leaf. Grind in plenty of black pepper and simmer for 5 mins.

Tip in the beans and 400ml water, then simmer for 10 mins, stirring every now and then until thick. To freeze, leave to cool completely, then divide between freezer bags and freeze for up to three months. Defrost thoroughly in the fridge overnight and reheat in a pan until piping hot. Serve over jacket potatoes.
