Basic Skillet Chicken Breasts

A recipe for a very tender and succulent oven baked chicken breast.

Slow Baked Chicken Breast (Moist & Tender)

chicken breasts

tsp kosher salt

tsp cane sugar

cayenne pepper

paprika

olive oil ((or vegetable oil))

butter

chicken broth

Preheat oven to 325F

Prepare the rub by mixing salt, sugar, cayenne pepper and paprika. Cover the chicken breasts with a thin layer of vegetable or olive oil first to ensure that the rub adheres properly. Cover each chicken breast with an even layer of the rub.

Place chicken breasts in a deep baking dish. Stick butter pats to the sides of the baking dish. Pour chicken broth into the baking dish carefully so as not to wash away the rub.

Bake at 325F uncovered for about 60 minutes until the internal temperature reaches 165F. To make sure the chicken tops are nicely browned and do not dry out, baste the chicken breasts in the juices 30-40 minutes into baking.

Remove from the oven, let rest for 5 minutes and serve your perfectly baked chicken breast.

Perfect Baked Chicken Breasts

Preheat your oven to 425 degrees Fahrenheit.

In a small bowl, mix together the paprika, onion powder, garlic powder, chili powder, oregano, salt, and pepper.

Heat an ovenproof pan over high heat. Once it&#8217;s hot, add the butter and let it melt then immediately remove it from the heat. The butter will brown almost instantly over high heat.

Place the chicken breasts in a bowl and pour the browned butter over the top. Sprinkle the spices evenly over both sides of the chicken. Place the chicken and any butter (it will solidify) into the pan you used to brown the butter. Add 2 tablespoons of water to the pan.

Bake the chicken uncovered for 18 minutes, or until the chicken reaches an internal temperature of 165 degrees. (Use an instant read meat thermometer to check this.) Let the chicken breasts rest for 5 minutes. Spoon the juices from the bottom of the pan over the chicken and serve.

I made this recipe at my daughter's house for family dinner. I timesed 2 the spices and timesed 3 the chicken. As each person tried it, he or she asked how I made it. They loved it. Fortunately, the recipe is short, as I had to repeat the telling about 8 times. We also offered some to the man laying carpet in the basement. I tried this recipe about 2 weeks ago to prepare chicken breast for a casserole.  I make tasty chicken in the oven ALL the time, but I’ve never used browned butter (usually EVO)- the butter makes it even better!  The breasts turned out SO perfectly moist, I’ve used this recipe about 5 times since then (swapping “rotisserie chicken” for this recipe).  I’ve subbed the chili &amp; paprika with curry &amp; turmeric with excellent results, too.   We all LOVE it, especially my husband &amp; picky 3 year old.  So thankful I stumbled across this! I use the high temp and small baking pan, but my chicken is marinated with small amt of olive oil and spices to my choosing.  Works great!!  I never knew about the high temp cooking method before!  So grateful this was here!!

Baked Chicken Breast 

Tired of dry, tough boneless chicken breasts? These Juicy, Tender Sautéed Chicken Breasts are so delicious and (like rotisserie chicken) can be used for a zillion different things as well as for an entreé!

Juicy Tender Chicken Breasts (on the stovetop)

garlic salt

sugar

mild paprika

dry Italian seasoning

black pepper

extra virgin olive oil

For the rub, combine all ingredients in a small bowl and stir well to combine. Set aside.

Place chicken breasts on a plate or shallow pan. Pat dry with paper towels. Sprinkle liberally with the rub, then rub it in with your hand. Allow breasts to sit with the rub on for 15-20 minutes, at room temperature.

Heat the butter and olive oil in a cast iron or heavy stainless steel pan over medium heat. Butter should sizzle a bit and be fairly hot but watch it at this point to prevent burning. Make sure the pan is large enough to accommodate all of the breasts without crowding.

Add the chicken and allow to sit for 3 minutes without touching. After 3 minutes, take a peek at the underside of one of the breasts. If it’s browning too quickly lower the heat a bit. Continue cooking for a total of 5 minutes or until the underside is nicely browned.

Flip breasts to the opposite side and immediately lower heat to medium-low. Cover and continue to cook for another 5-10 minutes OR until internal temperature reaches 160˚F when an instant thermometer is inserted into the center of the thickest part of the breast. (The time will vary depending on the size of each portion -see notes above in Café Tips)

Once 160˚F is reached, remove the chicken to a clean plate and cover loosely with foil. Allow to sit for 5 minutes, then slice and enjoy! If serving as an entreé, pour the delicious juices from the pan over the chicken.

Baked Chicken Breast with Greek Souvlaki Marinade

In a medium bowl, mix together olive oil, lemon juice, garlic, parsley, oregano, dill, paprika, salt, and pepper.

Place chicken breasts a large shallow bowl and pour the marinade over top. Toss chicken in the marinade to ensure that they are fully coated.

Cover the bowl with plastic cling wrap and place in the refrigerator for 1 hour to allow the chicken to marinate.

Preheat oven to 450 F. Place chicken on a quarter sheet baking pan and bake for 20-25 minutes, until chicken is no longer pink inside and the internal temperature reaches 165 F in the thickest part of the chicken breast (as read on a meat thermometer).

Remove the chicken out of the oven and let it sit for 5 minutes. Serve warm with a side of Greek salad, pita bread, rice pilaf, and Greek lemon roasted potatoes. And don't forget the tzatziki sauce.

Great flavor on the marinade! The only modification I'd make is cooking the chicken to 160 before taking it out - the residual heat will bring it up to 165, but cooking it up to 165 made it a little overcooked and chewy.
