This easy, healthy recipe for sautéed kale is delicious. As the kale cooks in the pan, it wilts, turns bight green, and becomes tender. Kale may sound like a boring side, but this is one of our favorite side dishes to make.

Lemon Garlic Sauteed Kale

This sauteed kale recipe is fresh greens cooked with butter, garlic and onions until tender, then topped with fresh herbs. A simple and healthy side dish that pairs perfectly with chicken, fish and beef.

Sauteed Kale

onion (finely diced)

salt

black pepper

kale leaves (stems removed, cut or torn into 1 inch pieces)

chicken broth broth

garlic

herbs

Heat the olive oil in a pan over medium high heat. Add the onion and cook for 3-4 minutes or until just softened.

Add the salt, black pepper and red pepper flakes to the pan. Stir to combine.

Place the kale in the pan, and pour in the chicken broth.

Cook for 5-6 minutes, stirring occasionally, until kale is tender and most of the liquid has evaporated.

Add the garlic and cook for 1 minute, stirring constantly.

Sprinkle the fresh herbs over the top, then serve.

The kale may need to be trimmed based on personal preferences. You may choose to keep the thick central ribs intact or remove them. For this recipe, I just removed the tougher ends.

Next, stack the leaves on top of each other (if using curly kale you may only be able to do a few leaves at a time). Using a sharp knife, cut the leaves widthwise in to thin strips across the leaves. Once done, give it a quick rough chop.

Prep the kale:

Very tasty seasoning and fast! Made it with no oil, just water and only 1 tbs nutritional yeast.  Used fresh, young collards from my garden instead of kale.  I tend to use fresh garlic but really enjoyed the stronger flavor from the garlic powder.

Finish and serve

Stir in the olive oil, and&#8230; you&#8217;re done! The farro should be chewy but soft, and there will be just the slightest amount of really delicious brothiness left in the pan. Top with your favorite things &#8211; I highly recommend the Parmesan and the red pepper flakes. It&#8217;s almost too simple and too good to be true.

I'm so very happy to find this recipe in my inbox today, Lindsay, as farro is my absolute favorite grain, and there really are not many recipes utilizing it. This is an outstanding recipe.  Followed the directions exactly, adding fresh basil, red pepper flakes, and Parmesan right before serving.  This is a keeper - thanks so much!

This is a really decent base. I did end up adding some balsamic vinegar, and used some vegetable broth instead of water to up the flavor. Next time I might add some tomato paste and sauté the onion and garlic first. Either way, you can’t beat the simplicity of this recipe.

This was absolutely delicious! I had some chicken broth laying around so I used that instead of the water. The olive oil and cheese make it so luscious. Definitely will be making this a ton. I made the chicken meatballs to go with and it was all so easy and stress free.

I used my homemade veggie stock in place of the water, added a diced small to medium zucchini in the first step (since I’m currently drowning in squash), and then finished it with about 6 oz of small shrimp that had been sautéed with butter and garlic, in addition to about 2/3 cup of crumbled feta - it was the perfect meal!

Easy meal with just a few ingredients—great for warm lunches during the week. In my freezing cold office. I used veggie broth because I had it, and added cannelloni beans.

Recipe video above. A ripper kale recipe - it's time to think beyond a salad! There's an enormous amount of kale hidden in amongst all that buttery, garlicky rice...  Try this with spinach, chard or even grated carrots!&nbsp;

Garlic Butter Rice with Kale

tsp extra virgin olive oil

Salt and pepper

tbsp (30 grams) unsalted butter

garlic cloves (, minced)

white rice ((Note 2))

chicken broth ((or vegetable))

Place kale in a large bowl. Drizzle over oil, sprinkle with a small pinch of salt and pepper. Scrunch with hands for 30 seconds, set aside while rice cooks.

Melt butter in a large pot over medium high heat. Add garlic and stir for 1 minute until just starting to turn golden and is incredibly fragrant.

Add rice, stir for 10 seconds.

Add broth, stir, then cover.

Turn heat down to medium or medium low so the liquid is simmering very gently. Cook for 12 - 15 minutes until all liquid is absorbed (tilt pot to check).
