Place a 6-quart heavy bottomed soup pot over medium heat. Add the oil, onions, and garlic. Sauté for 3 minutes.

Next add the potatoes, chopped kale, chicken broth, sherry, lemon zest, smoked paprika, and 1/2 teaspoon salt to the pot. Bring to a boil, then lower the heat. Cover and simmer for 15 minutes to soften the potatoes and kale.

Peel the casing off the sausage. Cut the sausage links into quarters lengthwise. Then slice into thin wedges. Stir in the sausage, white beans, and heavy cream. Simmer another 5 minutes. Taste, then salt and pepper as needed.

Portuguese kale soup, caldo verde, is something you’ll experience literally everywhere in Portugal, from Lisbon’s trendiest restaurants to farmhouses scattered at the edge of villages. Understandably so. Its simple yet sustaining character is appreciated everywhere.

In a large pot over medium heat, warm the oil. Add the chouriço and cook until lightly browned on both sides, 3 to 5 minutes.

Using a slotted spoon remove the sausage to a plate. Try to let the sausage drain well into the pot; its fat will flavor the soup.

Dump the onions into the pot. Sprinkle with salt and cook, stirring occasionally, until softened and translucent. Add the garlic and cook for 2 minutes more.

Stir in the potatoes, add the water or combination of water and chicken stock, and bring to a boil. Reduce the heat so the soup gently simmers. Cook until the potatoes are almost tender, 10 to 20 minutes. Remove from the heat and let the soup cool slightly.

When the caldo verde has cooled a little, purée it using an immersion blender. (Tradition states that one slice and only one slice of chouriço is added to each bowl although some chefs like to add half the sausage to the soup before puréeing. It’s your choice.)

Add the kale to the soup, bring everything back to a boil, and then reduce the heat and simmer until tender, 2 to 5 minutes. Season with more salt, if needed, and pepper.

Ladle the caldo verde into bowls and garnish with the remaining slices of chouriço. (The soup can be cooled, covered, and refrigerated overnight. Simply warm over low heat before serving.)

Select &quot;Sauté&quot; on the Instant Pot and add the OLIVE OIL.

When the display reads &quot;Hot&quot;, add ONIONS, CARROTS, CELERY, and GARLIC; sauté a few minutes until slightly tender, stirring as needed.

Stir in TOMATOES, WHITE BEANS, VEGETABLE BROTH, ITALIAN SEASONING, CRUSHED RED PEPPER, and SALT.

Secure the lid and turn the pressure release valve to the &quot;Sealing&quot; position.

Press &quot;Cancel&quot; on the Instant Pot. Select &quot;Manual&quot; or &quot;Pressure Cook&quot; and set the Instant Pot on &quot;High&quot; pressure for 1 minute.Note: In real time, the pot takes about 15 minutes to pressurize and pressure cook the soup for 1 minute.

When the cycle completes, allow the Instant Pot to sit for 10-15 minutes, undisturbed, for a natural pressure release (NPR).

Turn the pressure release valve to the &quot;Venting&quot; position to release any remaining steam. Unlock and remove the lid.

Stir in KALE (or other greens); close lid and rest for 5 minutes to wilt the kale (keep pressure valve open to prevent pressure building again)

Press &quot;Cancel&quot; or allow the cooker to stay in &quot;Keep Warm&quot; mode.

White Bean and Kale Soup Instant Pot Instructions

In a 3 qt soup pot on medium-high heat, heat OLIVE OIL until it shimmers (about 2 minutes).

Add ONIONS, CARROTS, CELERY, and GARLIC; sauté a few minutes until slightly tender, stirring as needed.

Stir in TOMATOES, VEGETABLE STOCK, BEANS, SALT, ITALIAN SEASONING, and (optional) CRUSHED RED PEPPER.

Bring the bean soup just to a boil; then lower heat and simmer 10 minutes, stirring as needed.

Add KALE (or SPINACH) to the pot and continue simmering until kale is wilted.

Serve warm. Garnish options: lemon zest, fresh parsley, croutons, or grated Parmesan cheese.

Heat the butter in a large pot over medium high heat. Add the onions and potatoes and saute until golden brown, 5-8 minutes, sprinkling with salt and pepper. Add 6 cups of the broth and the kale; simmer for 5-10 minutes until the kale softens and becomes a darker green.

Transfer the soup to a heavy-duty blender. Puree for 2-3 minutes or until the soup is completely smooth. Transfer the pureed soup back the pan and stir in the milk and the remaining 2 cups broth depending on how thick you want the soup to be. Season with salt and pepper and serve with yummy paninis, toasted wheat bread, or crackers, cheese, and hummus.

THE BEST dairy-free alternative is to use Cashew Milk - it tastes creamy.  
Soak 1 cup of cashews (preferably raw) in water overnight.  Drain.  Rinse.  Blend with 3-4 cups of water. Strain if necessary.

Heat the olive oil in a Dutch oven or other heavy soup pot over medium-high heat.

Add the onion, celery and carrot.  Reduce heat to medium-low and cook for 5-7 minutes or until the vegetables are beginning to soften.

Working in batches, add the kale and cook until it wilts.

Add the garlic and cook briefly, 10-15 seconds or until fragrant.

Add the chicken broth and bring it to a boil.

Add the bay leaves, crushed red pepper flakes, cannellini beans and a wedge from Parmigiano-Reggiano.

Reduce the heat to medium-low and simmer for 15-20 minutes.

Add lemon juice to taste along with salt and black pepper to taste.

While the soup is simmering, preheat your oven to 400 degrees.  Line a rimmed baking sheet with parchment paper.

Cut the baguette on the bias into 1/2-inch slices.  Place on the prepared baking sheet.

Combine the garlic and olive oil in a small bowl.  Brush over the bread slices.

Sprinkle with freshly ground black pepper then top with even amounts of Parmesan cheese.

Place in the oven and bake for 5-7 minutes or until the cheese is melted and the bread is crispy.
