Easy Keto Lemon Chia Pudding Recipe

Mix chia seeds with your chosen milk (very thoroughly!), cover and refrigerate overnight. 

Add more liquid as needed to reach desired consistency (optional). Sweeten to taste and serve with toppings of choice.&nbsp;

Keto Chia Pudding

tbsp monk fruit sweetener (can sub swerve)

tsp sugar-free vanilla extract

full-fat coconut milk (from a can)

Add all the ingredients to a bowl and whisk them together for about 60 seconds. You should notice the mixture start to thicken slightly. 

Place the bowl covered in the fridge for at least one hour, or overnight. 

Remove from the fridge and give it another stir. If the pudding is too thick, add a little splash of coconut milk. 

Serve on its own or topped with a dollop of plain yogurt and a few berries.

You are going to be blending all of your ingredients together in a Vitamix or blender, so get it set up. 

Melt the coconut oil in the microwave, for about 45 seconds or so.

While that is melting add the almond milk, sweetener and vanilla to the blender, and blend for 30 seconds until they are combined. 

Now drizzle in the coconut oil while the blender is in motion for 30 seconds to prevent it from clumping up.

Add the chia seeds and pulse for about 30 seconds. Let it sit for 5 minutes and pulse again. Do this 2-4 more times until the pudding starts to thicken up.

That’s how simple it is. Now pour the chia pudding into one big dish or individual dishes and store them in the refrigerator for up to 5 days.

A low carb chia pudding, made rich with coconut oil. I typically keep this recipe super simple -- chia seeds, almond milk, and coconut oil. Add a sweetener of choice, and an optional flavor extract if desired. This healthy low carb chia seed pudding is perfect for meal prepping! 1 NET CARB PER SERVING

flavor extract (almond or vanilla, optional)

Add almond milk and sweetener to a blender, and pulse to combine. Drizzle in melted coconut oil while processing to keep coconut oil from clumping.

Add chia seeds, and pulse. Let sit for 5 minutes, and pulse again. Repeat 2-3 more times until the pudding has started to thicken.

Pour into jars, and refrigerate to fully thicken. The coconut oil helps the pudding become thicker and creamier when cooled.

Store in the refrigerator for up to 5 days.

Fast Chia Seed Pudding (ready in 5 minutes)

Heat 1/2 cup (118 mL) of the nondairy milk until it is very hot but not quite boiling (do not worry if it begins to boil slightly, it will be fine). You can heat the milk in the microwave or in a small saucepan on the stove.

Stir

Stir together the hot milk, chia seeds and maple syrup in a glass jar (with 1 cup (237 mL) capacity). The chia seeds will begin to gel immediately.

Stand

Let the mixture stand for 2 minutes longer. Stir to combine. The pudding should be very thick. If not, let sit for another 1 to 2 minutes.

Stir in the remaining milk (cold!), vanilla, and optional salt into the chia mixture until combined.

Chill

Place the chia pudding in the freezer for one to two minutes to further cool the pudding. If not eating the pudding immediately, it can be placed in the refrigerator instead.

If leaving in the refrigerator for more than 30 minutes, cover the container until ready to serve the pudding.

I ran out of fruit at home and had to have breakfast that didn’t take a lot of time. Haven’t had chia pudding in years bc I wasn’t fond the first time doing it at home but I always added chia to my other breakfasts. This recipe may have converted me to a chia pudding girl after all! So quick and easy.
