Thai Peanut Salad (Low Carb & Keto)

cabbage, shredded

cucumber,

red bell pepper

chicken

peanut butter, use all natural peanut butter

olive oil

tbsp rice vinegar vinegar

tbsp coconut aminos, tamari, soy sauce

granulated sugar substitute (or regular sugar)

garlic,

tsp ginger paste, ginger

red pepper flakes

Salt and pepper

Optional: garnish with cilantro

Make Salad

In a large bowl add cabbage, cucumber, green onions, peanuts, pepper, and chicken (if you're using it). (Image 1 and 2)

Make Dressing and Toss Salad. Serve

In a small bowl mix remaining ingredients. (Image 3) Pour dressing over the salad and toss. (Image 4) Add salt and pepper to taste. Enjoy!

Thai Peanut Salad (Low Carb and Keto)

This is THE BEST easy low carb keto coleslaw recipe. It's the perfect side dish to any dinner, not just BBQ! Also, the coleslaw dressing I use to make this keto coleslaw recipe with is completely sugar free, but you'd never know! Mostly because it's perfectly tangy, yet sweet at the same time. And, every serving has LESS THAN 1 NET CARB!

Keto Coleslaw | Best, Easy, Low Carb Coleslaw Recipe

Small head (400 grams) green cabbage

Medium sized carrot (50 grams)

Cup (85 grams) broccoli slaw

Heaping ⅓ cup (90 grams) Mayonnaise

Tbsp (15 grams) Unsweetened almond milk

Tbsp (15 grams) Rice vinegar

Tbsp (10 grams) Confectioners Swerve

¼ Tsp Celery salt

Use a hand peeler to peel the skin off of the carrot.

Once peeled, cut the end off of the carrot, and use a hand grater to grate it. The large “teardrop” shaped end of the grater is the one you’d like to use.

When that’s grated, transfer the shredded carrot to a large bowl, and set aside.

Now cut the stem off of the cabbage, and cut it in half.

At this point, remove any of the inner-stem, and slice it multiple times lengthwise, as well as a few times widthwise as well.

Once all of the cabbage is thoroughly shredded, transfer it to the bowl with the carrots.

Add the broccoli slaw if you’re using it.

Now, add all of the dressing ingredients - the mayo, almond milk, vinegar, Swerve, celery salt, and crushed black pepper.

Toss the salad until the dressing is well incorporated into the slaw, and everything looks creamy.

Store in an air-tight container for up to several days.

INCREDIBLE low-carb Mexican coleslaw with a lime dressing. Easy healthy recipe. Perfect for serving with all Mexican dishes.

Low-Carb Mexican Coleslaw Recipe (lime dressing)

400 g white cabbage

red cabbage

carrots ((optional))

lime juice

tsp cumin

tbsp fresh coriander/cilantro

60 ml extra virgin olive oil

+/- +/- salt and pepper (to taste)

spring onion/scallion (sliced)

Shred

Using a food processor and the shredding/grating blade, shred the cabbage and carrots (optional). Place in a large serving dish.

Mexican Coleslaw

Place all the ingredients for the lime dressing in a bowl as shown. Whisk with a fork and pour over the Mexican coleslaw. Gently stir to combine.

Lime Dressing

This was easy and delicious to make. I added a bit of Natvia sweetener to the dressing and a and it was perfect. Matched so well with the amazing pulled pork.

Uggh! We did not like this coleslaw at all. A lot of work to be so disappointed. Will not be making this again obviously.
