Do you make your own sauce or buy jarred?

I must say this was very delicious. Great recipe and I will definitely make this a lot more. Instead of using crushed tomatoes I used store bought 0 calorie tomato sauce. It was so good. I also added zucchini noodles!!

I only use my homemade tomatoes that I can every year, so no sugar added.  Love these and especially the sauce.

Meatballs didn't know they could be this good, and the sauce is fresh tasting! I added some Worcestershire to the meat (cause beef and Worcestershire) I made them in the Ninja Foodie--Air Crisped a double-layer at 375 for 10 minutes, then finished everything in pot on saute. This is the perfect bring-a-dish...dish!

these are so much tastier than store bought frozen meatballs. My husband thought these were great too.

I am not the best cook, but this was a VERY good and easy recipe. Loved all of the natural ingredients, and it ended up tasting very authentic. Everyone in our family thought it tasted great, and it allowed me to continue my eating plan and the kids still got to eat something they enjoy too (we threw the meatballs in hot dog buns with mozzarella on top in oven).

These meatballs were yummy I used ground venison in place of beef . Super good and I am not really a venison fan

This recipe is excellent!! I made this tonight and it was enjoyed by all. I subbed the mozz for pepper jack, but other than that I followed the recipe to the T. For those worried about carbs just don't plate it with sauce. Eat them only with the sauce that's on the surface of the meatball. No extra sauce will make a huge difference since it's the tomatoes and onions that are the culprits. You won't be sorry 😊

OMG, I just made these meatballs. Tried them. They are the most flavorful meatballs I have ever eattenand I haven't  even tried to make the sauce yet. I will be making these again and freezing them to pop put of the freezer as needed.

You can also used ground pork rinds to bind instead of the mozzarella cheese. Works like breadcrumbs

The delightful part of this recipe is the blackened, burnt cheese crust that forms on the bottom of the skillet as your meatballs disintegrate into mush because the cheese has melted.  Might as well plan on a new skillet because no amount of deglazing is gonna clean that up.

Do you eat it by itself or serve it with something? I’m literally just starting keto now because my adult son just started having seizures and needs to go on the keto diet to help reduce or prevent seizures. This looks good btw.

This keto chicken enchilada soup is zesty, creamy, comforting, and brings way more flavor to the table than your average chicken soup recipe.

Low Carb Keto Chicken Enchilada Soup

Tablespoons oil

Cups Red Onion (chopped)

Bell Pepper (seeded + chopped)

Teaspoons Cumin

Teaspoon Chili Powder

Teaspoon Kosher Salt

Ounces Enchilada Sauce

Ounce Salsa

Cups Chicken Broth

Pound Chicken Breast (boneless + skinless)

Cup Sour Cream

Cup Sharp Cheddar Cheese (shredded)

Cup Green Onions (chopped)

Cup Fresh Cilantro (chopped)

Saute. Heat vegetable oil (2 tablespoons) in a large heavy bottom pot over medium heat. Stir in chopped onion (2 cups) and bell pepper (1) and cook until softened, about 5 minutes. Add cumin (2 teaspoons), chili powder (1 teaspoon), and salt (1 teaspoon). Stir to coat the veggies in seasoning, and cook until fragrant (about 2 minutes).

Simmer. Add the enchilada sauce (12 Ounces), chicken broth (2 cups), salsa (8 ounces), and chicken breast (1 pound). Stir to incorporate. Bring soup to a boil, then reduce to a simmer. Simmer uncovered for 30-40 minutes -- your soup is done once the internal temp of your chicken reaches 165 F (this will vary depending on how thick your chicken is).

Prep. Preheat oven to 375 F and line 2 baking sheets with parchment paper

Eggplant noodles. Cut off the ends of the eggplant, and use a veggie peeler to remove the skin. Cut lengthwise into 1/2&quot; thick slices. Place eggplant on prepared baking sheets and spray with cooking spray (or brush with oil) on both sides. Bake in preheated oven for 20-25 minutes, or until softened.

Assemble. Spread 1/3 of the red sauce along the bottom of a 9x13 pan. Followed by half of the eggplant, and half the cheese sauce. Repeat until you&#39;ve used all the ingredients -- your last layer should be the red sauce. Sprinkle the remaining 2 cups of mozzarella on top.

Preheat the oven to 400°F. Line a 20 × 14-inch baking sheet or two 14 × 10-inch pans with foil and grease well.

Arrange the kielbasa in a single layer on the baking sheet. Roast for 12 to 15 minutes, until it starts to brown on the bottom.

Meanwhile, in a large bowl, toss together the veggies.

In a small bowl, whisk together the oil, sea salt, Italian seasoning, paprika, garlic powder, and black pepper. Pour over the veggies and toss to coat.

When the kielbasa is done, remove the pan from the oven but leave it on. Flip the kielbasa pieces over and move them to one side of the pan, leaving space for the veggies.

Arrange the veggies in a single layer on the other side of the extra-large pan, or on the second pan if using two pans.

Roast for 18 to 20 minutes, until the veggies are tender and the kielbasa is further browned.

Saute veggies. Add the remaining tablespoon of oil, and reduce the heat to medium. Add chopped onion (1 large),  celery (2 ribs), and carrots (4) until soft, about 8 minutes. Stir in minced garlic (1 tablespoon) and thyme (1/2 teaspoon) and cook until fragrant, about 2 minutes. Add dry sherry (1/4 cup) and stir, loosening the brown bits at the bottom of your saucepan.

If frozen, increase cook time to 2 hours 15 minutes. Once cooked, open the bag and discard any liquid inside.
