Luscious and incredibly delicious, expect this homemade paleo and keto eggnog to vary little (if at all!) from the traditional holiday classic!

Homemade Paleo & Keto Eggnog

nut milk (macadamia

heavy cream (or coconut milk*)

cinnamon

nutmeg (freshly grated, plus more for garnish)

xylitol (allulose

vanilla extract

dark rum or bourbon (to taste)

Add nut milk, heavy cream, cinnamon and nutmeg to a medium saucepan and simmer for about 8-10 to infuse. Remove from heat and set aside while you prepare the yolks.&nbsp;

Add egg yolks and sweetener to a large bowl and, using a whisk or an electric mixer (easier), beat them until light, fluffy, and most of the sweetener has dissolved (if using erythritol, some granules will remain).&nbsp;

Gradually temper the hot mixture into the egg and sugar mixture. Tempering means adding the hot milks (very!) little by little to your egg mixture while whisking constantly, so your eggs don't curdle. &nbsp;

Return everything to the saucepan, and cook over medium/low heat for roughly 8-10 minutes, or until your mixture reaches 160°F/70°C and coats the back of a wooden spoon. Remove from heat and sieve onto a medium mixing bowl. Stir in vanilla and liquor of choice, to taste. Cover and transfer to the refrigerator to chill.

Your eggnog will continue to thicken while chilling. So give it a good stir right before serving, and feel free to thin it out with a little nut milk until desired consistency is reached.&nbsp;

This keto eggnog recipe is thick, rich, creamy and low carb.

Heavy Whipping Cream

flax milk ((almond, cashew and coconut milk will also work!))

Separate the eggs into two medium bowls, and set the egg whites aside.

Using a whisk beat the yolks until they turn light yellow in color. Once the color has lightened add 3 tbsp of the confectioner sugar and mix again.

Add the heavy whipping cream, flax milk, and nut meg to the yolk mixture and whisk to combine. Set aside.

Using a hand mixer whisk the egg whites until you get soft peaks. Add the remaining tbsp of swerve and whisk until you get medium peaks.

Add the whites to yolk mixture and whisk together briefly until fully combined. Chill for 3-4 hours.

Once chilled the mixture will separate slightly so give it another whisk prior to serving. Garnish with additional nutmeg, if desired.

This easy, low-carb keto eggnog is thick and delicious with or without alcohol!


Keto Eggnog

erythritol, granular (or less if you don't like it sweet)

pumpkin pie spice

nut milk (I used Califia Farms, Coconut Almond Blend)

heavy whipping cream

Creamy Sugar-Free Keto Eggnog Recipe

250 ml heavy whipping cream

250 ml almond milk unsweetened (unsweetened)

tbsp butter

tbsp granulated sweetener of choice (or more to your taste)

tbsp brandy ((optional))

whipped cream (to garnish (optional))

Heat

Place all the ingredients (apart from the brandy) in a saucepan and mix gently whilst heating. 

Cook

Cook for 3-5 minutes on a gentle low medium heat. Do not allow to boil. The mixture will slowly thicken as the eggs gently cook.

Serve

Remove from the heat, stir in the brandy, pour into glasses, garnish with whipped cream, and a sprinkle of nutmeg.
