This Colombian classic breakfast dish known as Huevos Pericos made with eggs, scallions and tomatoes is one of my favorite ways to prepare eggs.

Huevos Pericos (Colombian Scrambled Eggs)

olive oil

scallions

roma tomato

eggs (beaten with fork)

salt salt

Heat olive oil in a medium nonstick skillet over medium heat.

Add the scallions and cook until they soften, about 3 to 4 minutes.

Add the tomato and season with adobo or salt, cook until the liquid from the tomato evaporates, about 3 to 4 minutes.

Add the beaten eggs to pan with more adobo or salt to taste and cook over medium heat, stirring a few times until just cooked.

Think of this recipe as your blueprint for cooking frittata-like breakfast items. Cook for a crowd and impress your friends at weekend brunch or to make your weekly meal prep super simple!

Keto Sheet Pan Eggs & Sausage Recipe

eggs, whole, cracked

egg whites

milk, full fat

coconut oil

caraway seeds

kosher salt and black pepper

favorite sausage link,

Avocado, quartered, sliced lengthwise

ricotta cheese, crumbled

Preheat oven to 350 F. Crack eggs directly into a blender or bowl (crack eggs into a bowl if you are using an immersion blender. Otherwise do this in the blender). Add the egg whites, milk, coconut oil, and season with salt, pepper, and caraway seeds. Blend for 10-20 seconds, avoiding over blending, until all ingredients are emulsified as one.

Liberally spray the bottom of the sheet pan with spray oil. Add parchment paper or foil on top, covering the entire length and width of the pan, and spray liberally a second time.

Slice the sausage links into half-moons and keep aside in a bowl until needed. Pour the egg mix into the pan carefully. Add sliced sausages by spreading around the pan as evenly as possible. Transfer pan carefully into the middle rack oven and bake for 30 minutes. Set a timer and rotate halfway through.

After 30 minutes, test the eggs by sticking a fork, toothpick, or cake tester in the middle of the pan and removing it. If eggs are fully set and none stick to your poking-tool of choice, the sheet pan eggs are done. Otherwise, add 2-4 minutes at a time. Remove from oven and cool on the side (set the pan on top of oven mitts or cooling racks to avoid cracking/burning the surface of your countertop). 

Portion into 8-6.5 oz/188g squares and transfer to a container. You may need a spatula to get the squares off the sheet pan.

You can still have delicious quiche on a ketogenic diet! Who needs crust anyway? This classic crustless spinach red pepper feta quiche is a family favorite at our house for breakfast, brunch, or dinner. Easy, quick, and tasty!

Stir pepper and spinach mixture into the egg mixture. Carefully pour mixture into pie pan and bake in 375°F preheated oven for 25 minutes. Allow to cool for 15-20 minutes before slicing.

These copycat McDonald&#39;s scrambled eggs are a quick, keto-friendly alternative to fast food breakfast. Use them to make healthy, low carb versions of your favorite fast food restaurant breakfasts at home.

COPYCAT MCDONALD'S SCRAMBLED EGGS - KETO, LOW CARB SCRAMBLED EGGS

Whisk egg and heavy cream for 20 seconds until well mixed and small bubbles form.

In an 8-inch skillet, melt butter over medium-low heat. Don’t allow to brown. Ensure butter covers entire surface of the skillet.

Pour egg mixture into the warmed skillet, swirling it around so that the egg covers the skillet evenly.

Cover with a lid.

Cook for one minute on medium-low or until the edges begin to sizzle and the top is set.

Remove skillet from heat, and tip skillet to slide the egg onto a plate.

Let rest for 30 seconds, and then use a silicone spatula to fold in half and then half again.

These eggs are a complete keto luxury. You get a pancake-like batch of scrambled eggs topped with some of your favorite sugar-free maple syrup. I sometimes even eat these for dessert.

Scrambled Cinnamon and Cream Cheese Eggs

tbsp organic cream cheese,

tbsp organic heavy (whipping) cream

coconut flour

tsp cinnamon

Sweetener

tbsp Golden Ghee

maple syrup

In a blender, combine the cream cheese, heavy cream, eggs, coconut flour, cinnamon, and sweetener to taste. Blend until well mixed.

In a medium skillet, melt the ghee over medium heat. Pour in the cream cheese and egg mixture. Using a spatula, gently stir the mixture to scramble it until it is cooked through, about 5 minutes.

Transfer to a plate and drizzle with your favorite keto-friendly sugar-free maple syrup. Serve immediately.

Super-easy and super-cute, you can eat these on-the-go or enjoy them as a snack whenever you need a quick keto protein snack!

Bacon, Cheese, and Onion Egg Bites

tbsp heavy whipping cream

bacon (chopped)

tbsp green onion

tbsp cheese (shredded)

Whip the eggs and cream. Add a touch of salt and pepper if you like, but I found the cheese and bacon gave them plenty of salt.

Fill the Dash Egg Bites cups 3/4 full with the egg mixture.

Divide the bacon, onion, and cheese, between the cups, careful not to overfill.

Top up with the remaining custard.

Bake in Dash Egg Bite Maker for about 7 minutes or until cooked through.
