Keto Meatloaf | The Best, Easy, Low Carb Meatloaf Recipe You'Ll Make

Tbsp (14 grams) Macadamia Nut Oil

Medium Onion (100 grams) chopped

Cup Celery (100 grams) chopped into tiny pieces

Cloves Garlic, minced

Tsp. Oregano

Tsp. Chili Powder

Tsp. Italian Seasoning

Lbs. (907 grams) 80/20 Ground Beef

Cup (112 grams) Shredded Cheddar

Cup (35 grams) Almond Flour

Heaping 1/4 Cup (25 grams) Grated Parmesan

Eggs

Tbsp (30 grams) Liquid Aminos –

Salt & Pepper

Cup (80 grams) Keto Ketchup

Keto Meatloaf | The BEST, Easy, Low Carb Meatloaf Recipe You'll Make

Grease a 9&#215;5 loaf pan with cooking spray and set it aside.

In a large skillet over medium heat, add and heat the Macadamia Nut Oil.

Now, add the onion &amp; celery and cook until soft and translucent.

Next, add the garlic, oregano, and chili powder, and Italian seasoning and cook until fragrant.
Once fragrant, let the mixture cool.

Now, when the mixture cools, use a large bowl to add and combine all of the ingredients &#8211; except for the ketchup.

Shape meat mixture into the size of a large loaf, and add it to the pan. *If using bacon, wrap it in bacon before adding the meatloaf to the pan.

Cook for 40 minutes, remove, and cover with ketchup (if using)

Return to oven and cook for another 15-20 minutes (once the internal temp gets to 165°F).

Let it rest 10-15 minutes before cutting into it.

Garnish with fresh oregano, or more Italian seasoning.

Cover the air fryer basket with tin foil.

Set the air fryer to 380 degrees Fahrenheit, and cook for 20-30 minutes.

Add the keto ketchup if using, and if it&#8217;s browning to quickly cover it with foil.

Cook for an additional 15-20 minutes. *Just make sure the internal temp. reaches 165°F

I must say I make a great meatloaf and was looking for different recipes because I now I subscribe to keto.  Well, I’m not a fan of almond flour but I used it and added some red hot pepper and jalapeños.  This was so delish I can’t tell you.  The cumin, oregano, cheeses....So simple but so tasty. Ty ty!

I have never really cared for meatloaf that much but my husband has always been a meatloaf fan.  I made your keto meatloaf tonight exactly as written and it was INCREDIBLE.  The best flavor - moist - DELICIOUS!!!

This was delicious.  This Meat loaf recipe was very moist and tender which is not the usual outcome for meat loaf.    I thought it was easy to prepare.  Thank you for sharing and all you do.  I usually make your desserts which are also delicious.  I am going to have to investigate more main dishes.

I used green pepper in place of celery because it's what I had on hand and I draped a few optional slices of bacon across the top. The meatloaf was excellent - both flavorful and very moist. I will definitely be using this recipe again!

How does a cheesy meatloaf make you feel?

I'm not even sure if I've commented on this already, but I've made this recipe SIX TIMES already and I love it so much. Such depth of flavor. I sometimes skip the bacon if I don't have it, but it doesn't matter. It's just as good either way. I make it in a square pyrex glass pan and cut it into 9 pieces. I freeze them and just thaw them when I want a piece. If I didn't freeze it, I'd just pick at it all day until it was gone!

This tasted great, actually better than non-keto variations imho. One thing we did differently was use coconut flour instead of almond flour because it's much cheaper. I was worried it would taste like coconut but it wasn't the case. You only need to use 3 or 4 teaspoons of coconut flour because it is significantly more absourbant than almond or wheat flour.

I tried this recipe while changing up a couple of things such as the soy sauce for worchestire and the celery for green pepper; I also skipped on the chili seasoning. It still came out amazing! I def recommend to try! Made this for my bf and he loved it! Will be making again! :)

Made this recipe 2nd time, first time I use celery but tonight I use bell pepper instead of celery and it turn out more moist and juicy, it was GREAT!

Very tasty when finished but after an hour of cooking the meatloaf was not cooked all the way under the bacon, and that side of the bacon wasn’t cooked all the way...I ended up peeling back the bacon and cooking longer then it got all nice and crispy and completely cooked

Very good. Macros come out to 473 calories, 31.2g fat, 3.8g carbs, 42.6g protein when I import the recipe into MFP and set it to 6 servings.

Just made it for dinner and finished eating. The best meatloaf I have ever had and my partner (who is not eating keto) agreed!! So delicious, juicy and rich flavor!! Served it with fresh sliced tomatoes and my partner had sweet potato fries as well with his.

Love this recipe. The bacon imparts so much flavor. I use ground turkey instead of the beef. It's so juicy, I don't feel the need for the beef. Leftovers reheat nicely. So delicious; this is a keeper!

Super delicious!! My whole family loved it.  I also love how easy it is to make.

I made a half recipe and left off the celery, Parmesan and oregano and added bell pepper and dry ranch dressing and it was very good and filling. I would make it again.

Incredibly good!  Very moist.  Not crumbly and didn't fall apart.  Definitely recommend.

This Keto Meatloaf Is Unbelievably Flavorful

Big Mac Keto Meatloaf is made with pork rinds and ground beef, stuffed with cheese, and topped with Big Mac sauce for the best low carb meatloaf recipe EVER.

Big Mac Keto Meatloaf

Pork rinds (finely crushed)

Worcestershire sauce

Onion powder

Salt

Garlic powder

American Cheese

Mayonnaise

Dill pickle relish

Yellow mustard

White wine vinegar

Paprika

Preheat oven to 350 degrees F.

In a large bowl combine ground beef, pork rinds, egg, Worcestershire sauce, onion powder, salt, and garlic powder. Mix ingredients until fully combined.

Press ½ of the ground beef mixture into the bottom of a parchment paper lined loaf pan. Make a slight indentation in the center of the ground beef leaving a 1 inch edge.

Place cubed American cheese into indentation and the cover with the remaining ground beef mixture pressing it into the bottom half so the meatloaf is sealed.

Bake for 60-70 minutes.

While the meatloaf bakes whisk all of the Big Mac sauce ingredients together in a bowl. Set aside.

When done baking remove the meatloaf from the oven and let rest for 10 minutes.

Remove the meatloaf from the pan and then top with Big Mac sauce.

Pizza Meatloaf

onion, diced

lb pork

pork panko

red pepper flakes

parsley

oz mozzarella cheese

low carb marinara

Preheat oven

Mix ingredients

In a large bowl, mix onion, ground beef, ground pork, pork panko, red pepper, oregano, parsley, egg and garlic.

Put meatloaf in pan

Place into a 7” round cake pan, loaf pan or casserole dish. Push down to mold meat to fit the loaf pan or dish.

Marinara time

Add of the marinara to the top of the meatloaf and spread to cover evenly. Cover with aluminum foil and place into the oven at 375 degrees for 30 minutes.

Pepperoni

Remove foil, add remaining sauce and ½ of the pepperoni slices. Replace foil and place back into the oven for 20 minutes. 

Finish your pizza

Add cheese and remaining pepperoni to the top of the meatloaf. Place back into the oven for 5-7 minutes, or until cheese is melted. Serve pizza pie style.

Air Fryer Keto Meatloaf

Cheddar cheese (shredded)

tomato sauce (divided use)

Salt and pepper

Preheat

Mix the ground beef, vegetables, and cheeses. You&#039;ll need to knead them in with your hands.

Beat

Beat the egg and 1 teaspoon of the tomato sauce.

Blend

Blend in to the meat mixture. The mixture will be a little wet but should hold its shape.

Shape

Brush

Air fry

Place on a piece of parchment and add to the air fryer basket. Cook for 8 minutes. Check the internal temperature with an instaread thermometer. Cook until it&#039;s 160F in the center.

Rest

Let rest for 5 minutes. The internal temperature will continue to rise.

Follow instructions above but bake at 350F for about 20 minutes.

This looks fantastic, but does the Parmesan cheese used as a binding agent affect the taste as I'm not very fond of cheese except on cheese burgers.

This French Onion Meatloaf recipe is the pinnacle of keto comfort food. Juicy meatloaf with caramelized onions and Gruyere cheese for a one-of-a-kind taste sensation.

French Onion Meatloaf

tbsp butter or bacon grease

onion

thyme leaves

lb ground pork (or another lb ground beef)

pork almond flour)

onion powder

tsp black pepper

Gruyere cheese (grated)

In a large skillet over low heat, melt the butter or bacon grease. Once melted, add the sliced onions and toss to coat. Sprinkle with salt and cook, stirring frequently, until the onions are soft and golden brown, 15 to 20 minutes.

Stir in the thyme leaves, cook one more minute, then remove from heat and set aside.

Preheat the oven to 350F and line a large rimmed baking sheet with parchment paper.

In a large bowl, combine the ground meat, pork rinds, onion powder, pepper, and an additional 1/2 teaspoon salt. Stir in the egg and half of the caramelized onions, then use your hands to thoroughly combine.

Transfer to the prepared baking sheet and form the mixture into a loaf about 5 by 9 inches. Bake 40 to 50 minutes, until the internal temperature reaches 160F. Remove and turn off the oven.

Top with the shredded cheese and the remaining onions and place back in the warm oven to melt the cheese, about 5 minutes.

This was delicious!!  Will definitely make again. I used a beef/pork combination ground meat. Didn’t have an egg but it stayed together just fine. Highly recommend!

This was SOOOOOO good!  Followed the recipe exactly but used almond flour instead of pork rinds.

Since I only had the ground beef on hand, I used the same amount of spices with some paprika and some pepper flakes. Including the caramalized onions on top. No cheese for my husband.

Sounds like you over-cooked it. Did you test the internal temperature?

Mine turned out quite dry… followed the recipe!  Flavor was good though.
