Salads are an excellent keto option for lunch or dinner. They are really quick and easy to put together and this keto salad is great served as a platter.

Big Fat Keto Salad

100 g Shredded chicken (4 Ounces)

eggs

Bacon rashers (Cooked)

Mini cucumbers (quartered lengthways) (100 grams/4 Ounces)

g Cherry tomatoes (halved) (4 Ounces)

Olives

0.5 Avocado (sliced)

60 g Feta (crumbled) (2 Ounces)

Cups Cos lettuce leaves

tbsp Extra Virgin Olive Oil

Dijon Mustard

tsp Apple Cider Vinegar

Lemon

tbsp Chives (Chopped)

Salt and pepper

Place all your salad ingredients on a large serving plate or platter. This is where you get to be creative. We like to serve the dressing in a small bowl on the platter, so make sure you place the dressing bowl on the platter first and then arrange salad ingredients around it.&nbsp;

Salad

Combine all the dressing ingredients in a jar with a lid. Then shake till all the ingredients are well combined.

Place dressing in small bowl on platter.

Our Keto Coleslaw is a creamy, tangy and colorful side dish. This classic cabbage salad is a staple recipe that everyone can enjoy!

Keto Coleslaw & Creamy Dressing

green cabbage (thinly sliced)

red cabbage (thinly sliced)

scallions (thinly sliced)

parsley (fresh)

Low Carb Mayonnaise

sour cream

apple cider vinegar

lemon juice

garlic powder

salt

pepper

In a large mixing bowl, add the cabbages, scallions, and parsley and toss together. Set aside while you make the dressing.

In a small bowl, add the remaining ingredients and whisk together until smooth.

Pour half the dressing into the salad and mix well. Continue to add the dressing until the salad reaches your desired level of dressing (we like to add it all).

Taste your coleslaw and season with additional salt and pepper if desired.

Serve and enjoy.

Keto Salmon Cottage Cheese and Rocket Salad

cottage cheese (full fate)

tbsp green onion (chopped)

tsp dill (chopped)

salmon

lemon

rocket

sea salt and black pepper (to taste)

In a bowl, combine cottage cheese, sour cream, green onion, lemon juice, sea salt and black pepper. Mix well.

Smoked Salmon Cottage Cheese Rocket Salad - Low Carb Keto-friendly Recipe

A keto cobb salad made out of hard boiled eggs, cheese, chicken, and bacon.

Keto Salad

bacon

avocado

chicken breast

oz Cheddar Cheese

romaine lettuce

salt/pepper

Start by chopping the lettuce and placing into a salad bowl.

Chop all remaining ingredients and place them into individual piles atop the lettuce.

Salt and pepper to taste.  Add oil and vinegar or your dressing of choice.  Enjoy!

Keto Strawberry-Chicken Salad with Maple-Balsamic Vinaigrette

tbsp balsamic vinegar

tbsp Lakanto maple-flavored syrup

Dijon mustard

spring mix salad (2 cups per serving)

pecans

feta cheese

chicken breast (3 oz per serving)

strawberries (1/3 cup per serving)

Add vinegar, syrup, and mustard, to taste to a food processor or blender. Pulse a few times to combine mixture.

Turn the food processor or blender on low, and then slowly drizzle in the olive oil as the food processor or blender remains on low. Add salt and pepper to taste and combine on low.

Assemble four individual salads using the "per serving" measurements.

Drizzle dressing on top, about 2 1/4 tbsp per serving of salad.

Creamy Cucumber Salad

cucumbers

red onion (sliced thin)

dill (chopped)

mayonnaise

white wine vinegar

garlic (grated)

Add the sour cream, mayonnaise, white wine vinegar, garlic, sweetener, pepper, lemon juice and zest in a small mixing bowl.

Whisk until well combined, then set aside at room temperature while you chop the veggies.

Slice the cucumber to the thickness of your liking and add it to a large bowl.  If you use English cucumber, which I highly recommend, you don’t have to peel it or remove the seeds.

Add the red onion, dill and the dressing over the top of the cucumbers. Stir until well combined and the dressing is coating the cucumbers and onion.

Chill in the fridge in an airtight container for at least 1-2 hours to allow the cucumber to absorb the dressing.

Dressing Ingredients:

red wine vinegar

extra virgin olive oil

Shred chicken and place in bowl

Add chopped egg, bacon, blue cheese, avocado slices, salad greens, chives and toss.

In a separate bowl or salad dressing container, mix vinegar and olive oil until blended. Drizzle over salad and serve.

Cup Green Peas

Water

Cut turnips and carrots

Peel the turnips entirely. Cut all the turnips into bite sized pieces with a sharp knife, as regular potatoes typically do. At the same time, cut fresh carrots and place them all into a bowl ready for cooking.

Cut onions and pickles

Cut onion and all the pickles into small tiny squares and place them aside. At the same time, prepare your other ingredients. 

Prepare the salad dressing

In a big glass bowl, add yogurt with mayonnaise and approximately 1/3rd of a cup of liquid left from your pickle jar. Season with a pinch of salt and pepper and mix. 

Boil turnips with carrots

Place turnips and carrots into a cooking pot, add boiling water, bring to a boil and let it cook until tender for 15 minutes maximum. 

Strain and shock

Once your carrots and turnips are boiled, strain them through a strainer and pour a very cold pot of water to shock them, so they immediately stop the cooking process.

Add all into a big glass bowl

Add all remaining ingredients in a large mixing bowl, such as the onion, pickles, and green peas. Pour the whole dressing you have stored in the fridge. 

Mix together and season

Using two spatulas, gently mix the ingredients and salad dressing together. Refrigerate for at least 2 to 3 hours before you are ready to serve.
