This easy Savoury Muffin recipe is a great way to get some extra veggies into the kids. These muffins are freezer friendly and both regular and Thermomix instructions included.

Easy Savoury Muffin Recipe

self raising flour (300 grams)

tsp onion flakes

cheese cheese

zucchini (grated)

sliced ham

eggs

extra virgin olive oil

milk (130 grams)

tomato (chopped)

salt and pepper

Line a 12 hole muffin tin with paper cases and pre-heat your oven to 180℃ fan-forced.

Place the self raising flour and onion flakes into a large bowl and add the grated zucchini, ham and grated cheese

In a jug, combine the eggs, oil, milk and salt and pepper and whisk to combine.

Pour into the bowl with the flour mixture and use a large spoon to mix to combine.

Divide the mixture between the paper muffin cases until they are around ⅔ full.

Finely dice the tomato and sprinkle on top of the muffins before placing them into the pre-heated oven to bake for 18 - 20 minutes or until cooked through when tested with a skewer.

Conventional Instructions

Place the cheese (which has been cut into 3 cm pieces) into your Thermomix bowl and mix for 8 seconds, speed 8 to grate. Transfer to a new bowl and set aside until needed.

Without washing the bowl, place the zucchini (which has been cut into 3cm pieces) into your Thermomix bowl and mix for 5 seconds, speed 5.

Scrape down the sides of the bowl and add the self raising flour, onion flakes, ham (which has been torn into pieces) grated cheese, eggs, oil, milk and salt and pepper. Mix for 10 seconds, speed 5 on REVERSE.

Scrape down the sides of the bowl and mix for 5 seconds, speed 4 on REVERSE.

Thermomix Instructions

Easy Chocolate Cake Recipe

caster sugar (Approximately 1 cup and 2 tablespoons)

self raising flour (Approximately 2/3 cup)

Preheat your oven to 180 degrees (fan forced) and line a muffin tray with 12 paper cases.

Melt the butter in the microwave and set aside to cool slightly.

Sift flour and cocoa into the bowl of an electric mixer, then add all the other ingredients.

Beat for approximately 3 minutes until ingredients have all combined and the mixture is smooth.

Divide the mixture amongst the cupcake cases and bake for 15 - 18 minutes or until a skewer inserted in the middle comes out clean.

Allow the cupcakes to cool in the tin for five minutes before transferring to a wire rack to cool completely.

This easy no bake Choc Chip Muesli Bars recipe takes no time at all to make and is the perfect snack for the kids. Both regular and Thermomix instructions included.

No Bake Choc Chip Muesli Bars

rolled oats

puffed rice

brown sugar

honey

cinnamon

tsp vanilla extract

chocolate chips

Line a 18 x 28cm slice tin with baking paper and set aside until needed.

Place the butter, brown sugar and honey into a small saucepan and cook over a low heat for 10 minutes or until the mixture thickens.

In the meantime, place the oats, puffed rice and cinnamon into a large bowl and gently stir to combine.

Add the vanilla extract to the cooked honey mixture and stir well before adding to the bowl with the dry ingredients and stirring through until well combined.

Pour the mixture into your prepared slice tin and use the back of a spoon to push it firmly down to flatten the surface.

Sprinkle the chocolate chips over the top of the slice and gently press them into the slice.

Transfer to the fridge to chill for six hours (preferably overnight) before cutting into bars.

Yummy and easy to make these no bake chewy choc chip muesli bars are perfect for the lunchbox and super kid friendly! Better than bought ones.

quick oats

rice rice

quinoa flakes

linseeds (flaxseeds)

In a sauce pan, melt the butter with the honey and the coconut sugar.

Bring to the boil, then allow to simmer for about 5 minutes, it will be thick and gloopy.

Remove from the heat and stir through the vanilla.

Add the oats, puffed rice, quinoa flakes, desiccated coconut, flax seeds to the hot mixture and mix well.

Line a baking dish (mine was about 22cms by 33cms) with either: a double layer of baking paper or a silicone mat.

Press the mixture down well into the baking dish.

Top with the chocolate chips, pressing them into the mixture.

Refrigerate for 2 hours.

Remove from the fridge and the baking dish and slice into bars. I got 20 yumbox sized ones from this batch.

Store in the fridge in a sealed container with baking paper in between the layers.

These delicious cheese and bacon rolls are just like bakery ones and quick and easy to make with a conventional or Magimix Cook Expert method.

500 g strong white bread flour

300 ml water (body temp)

yeast

g salt

egg (lightly whisked)

tbsp milk

grated cheese

rashers bacon (finely chopped)

Combine the yeast and water together and allow to froth for a minute.

Add the flour, salt and yeast/water combo to a large bowl and mix well to combine.

Take the dough out of the bowl and knead for 5 minutes on a floured bench until a dough is formed.

Place in a large bowl and cover with a damp towel for 1 hour.

On a floured bench, knock back the dough. Roll into a large log and shape into 12 equal roll shapes.

Line a tray with baking paper and put the rolls on it. Cover with a damp towel for 30 minutes.

Preheat the oven to 240 degrees celsius.

Squash the rolls down slightly. Whisk the egg and milk together and brush the tops of the buns.

Combine the grated cheese and bacon and cover the tops of the buns.

Lower the oven temp to 200 degrees celsius and place the buns in the oven for 20 minutes.

Remove and place on a wire rack.

Soft, oatmeal, cinnamon cookies that are egg-free, dairy-free, refined sugar-free, and flourless!

This makes a great lunchbox filler for a day out and is equally good at home from the fridge

10-minute couscous salad

Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper, and dice the cucumber. Add these to the couscous, fork through the pesto, crumble in the feta, then sprinkle over pine nuts to serve.

Not quite LCMs are the perfect replacement for storebought LCM bars, or rice crispie bars!

Combine the dry ingredients in a large bowl and mix well.

On the stove over medium heat combine the rice malt syrup, honey and coconut oil. (In the video I did this step in the microwave, until it was bubbling)

Add the wet to the dry ingredients, mixing well to stir and combine all the bits from the bottom of the bowl.

Press into a lined 24cm square baking dish (I used a 22cm square silicone cake pan this time- no need to line!).

Refrigerate for three hours or until set.

Cut into the sizes you want.

Keep in the fridge.

Puffed Rice Bars

There is a nostalgia in the cream rolls. For a very long time, these cones of flaky pastry filled with cream ruled the Indian bakeries. Today you will find a thousand options to choose from, as the bakeries are packed with new products influenced by the western market. But there was a time only fewer items were seen on the shelves of glass cased display of bakeries. This recipe of the homemade cream roll is simple and turns out very delicious.

Cream Roll Recipe

puff pastry sheet

tbsp all purpose flour

Full -fat whipping cream

Thaw the puff pastry sheets. Refer to the article above for the method. Lightly dust the workspace with flour and place the sheet on the top.

Without adding any pressure roll out the sheets gently using a rolling pin.

Cut it into long ribbon-like pieces using a pizza cutter. https://amzn.to/3m5lo4O Make sure that all the pieces are neither too wide nor too thin in width.

Now, take metal cones https://amzn.to/39S0bJo and roll a strip of puff pastry sheet around it. Roll other pieces around the cones as well. 

Place the shaped-cones on a baking tray lined with a parchment paper. Slightly brush https://amzn.to/2ICBCoC the shaped cones with eggwhite. Make sure to keep the seam side down when baking.Bake in a preheated oven at 160*C for 25 minutes

While the pastry is cooling, prepare the whipped cream. Whip heavy cream until soft peaks, then add in remaining confectioner’s sugar and vanilla.  Whip until stiff.

Carrot cake bites are so easy to make with shredded carrots, oat flour, dates, cinnamon, nutmeg and ginger. These bites are healthy, gluten free, nut free, dairy free, and oil free.

Carrot Cake Bites

unsweetened shredded coconut (+ ⅓ cup for rolling)

pumpkin seeds (raw

sunflower seed butter (or nut butter)

nutmeg

½ tsp ground ginger

Shred the carrots to create 2 cups worth. This will take approximately 2 large carrots.

Add the shredded to a food processor along with dates, oat flour, unsweetened shredded coconut, unsalted sunflower seeds, sunflower seed butter, cinnamon, nutmeg, ground ginger, and salt. Blend on low until everthing comes together into a sticky mixture.

Scoop out 1 Tbsp of carrot cake batter and roll into a ball between your hands. Place on a plate and repeat the process for the rest of the batter untill all balls are formed.

Add 1/3 cup of unsweetened shredded coconut to a shallow bowl and roll each carrot cake bite into it. You might have to gently press the shredded coconut into sides.

Place in an airtight container and store in the fridge for up to 1 week. Grab 1-2 carrot cake bites for an energizing snack.
