Lightly browned kielbasa, a popular smoked sausage, tastes great served on a warm bed of sauerkraut. 

Kielbasa and Sauerkraut

Kielbasa

(drained

brown sugar

salt

pepper (freshly ground)

red pepper flakes

In a cast iron skillet brown pieces of sausage and then set aside.

Add sauerkraut to empty skillet and season with brown sugar, salt, pepper and red pepper flakes.  On medium high heat warm sauerkraut until it begins to brown off and dry out just a little bit.

Return sausage to the skillet on top of sauerkraut.  Cover skillet and allow to simmer for 5 - 10 minutes until sausages are heated through.

Place the sauerkraut, onion, and potatoes in the bottom of a slow cooker. Add the pieces of kielbasa and beer (or 1 cup of water). Top with spices.

Cook for 6 hours on LOW (or 4 hours on HIGH) or until the potatoes are tender but not mushy. Serve with mustard, if desired.

Kielbasa and Sauerkraut Recipe with Apples and Caramelized Onions

beef

olive oil

Vidalia onion (sliced 1/4 inch thick)

apples

garlic

thyme

caraway seeds

apple cider

beef stock (or chicken stock)

Heat a large, deep skillet over medium high heat.

Add the kielbasa to the skillet and sear on all sides until heated through.

Transfer the kielbasa to a platter and keep warm.

Add the olive oil to the pan and stir in the onion.

Cook the onion until slightly softened and caramelized.

Stir in the apples and cook until softened.

Add the garlic, thyme and caraway seeds to the pan cooking for 1 minute.

Stir in the sauerkraut and brown sugar tossing everything to combine.

Add the kielbasa back to the pan. Stir in the apple cider and beef stock.

Continue cooking until most of the liquid is absorbed.

Serve immediately.

Add butter to a saute pan set over medium heat. Once melted add the chopped onion and saute until beginning to turn golden brown, then add sliced kielbasa. Cook until sausage is seared and heated through.

Add sauerkraut to the kielbasa mixture, along with brown sugar and mustard. Stir to combine.

Cook for 5 minutes, or until most of the liquid has cooked out. Then serve immediately.

First time cooking this and my client said it was great. He asked for the instructions for when he can get back to cooking himself.

Husband liked it a lot. Personally I felt it was too sweet. If I were to make it again I’d reduce the brown sugar. Super easy recipe.

Hello, this is the recipe I have used for years, even the mustard, never a complaint! Once in awhile I may add a leftover piece of finally chopped granny Smith apple to the skillet, just to...kick it up a notch. Makes a slight yet enjoyable difference. If you use store bought sausage you may want to find a meat store/butcher near you, up grading can make a huge difference!! Oh, I never use canned, only jar or bag kraut, you will taste the difference here!!raf
