5-Minute Korean Silken Tofu

(300 grams) package soft silken tofu

soy sauce

tsp Gochugaru (Korean chili flakes) (to taste)

tsp honey (or sugar)

tbsp sesame oil

tsp sesame seeds

garlic (minced)

Prepare the tofu by soaking up the excess liquid with a paper towel, or by carefully tilting the open package over the sink. Place a serving plate on top of the tofu and transfer it onto the plate.

Cut tofu into 1/4 inch thick pieces, and pat dry to remove moisture (this will yield a crispy exterior). Lightly season with salt and pepper and set aside.

Add all sauce ingredients into a bowl. Add onion, green onion, and chili pepper, and mix to combine.

Heat oil in a large skillet over medium heat, carefully add the tofu pieces and sear both sides until golden-brown, about 2-3 minutes.

Pour the sauce over the tofu and cook for about 5 minutes, flipping occasionally. Cover and simmer for another 2-3 minutes until the sauce is reduced to a thick consistency.

lb (one package) baby potatoes (cleaned)

tbsp vegetable oil (or any neutral oil)

sesame seeds (to finish)

Combine all sauce ingredients in a bowl.

Add salt and vinegar to a pot of boiling water. Add potatoes, cover, and cook until tender on medium-low heat, about 10-15 minutes. Drain and set aside.

In a large skillet over medium heat, add oil and pan-fry your potatoes for about 5 minutes until golden brown. Pour in the sauce and simmer until thickened, stirring frequently for even coating.

5-Minute Silken Tofu (Soft Tofu)

This Korean Cucumber Salad or Oi Muchim (오이무침) is an easy yet hearty and refreshing salad that you can enjoy as banchan (Korean side-dish) with rice and your favourite mains.

Korean Cucumber Salad (Oi Muchim, 오이무침)

lb Korean, Japanese, or English cucumbers cucumbers

tsp salt

tbsp gochujang

liquid

tsp gochugaru

sesame seeds

scallion chopped (optional)

tbsp rice vinegar

Slice the cucumbers into 1/4 to 3/4-inch (0.6 to 1.9-cm) thick pieces. It’s totally a personal preference if you want your cucumber pieces on the thicker side. I sliced mine into 1/2-inch thick pieces since I like a good bite.

Place the sliced cucumbers on a strainer with a catch basin. Add in the salt and mix to coat the cucumbers well. Allow the cucumbers to sit for 30 minutes or even longer to release excess liquid.I left mine for 1 hour in the refrigerator. The longer you leave the salted cucumbers, the more liquid it’ll draw out and will release less liquid when it sits in the dressing later on. If you’re enjoying this salad immediately, then you can leave it to sit for 30 minutes. But if preparing ahead, I prepare to allow the cucumbers to sit longer to really draw excess water out.

Meanwhile, mix all the dressing ingredients together in a bowl. Feel free to adjust everything to your desired taste.

Drain any excess water from the cucumber, transfer to a large bowl, pour in the dressing, and mix everything well.

Top with more sesame seeds, if desired. This is best enjoyed cold. You can enjoy this as-is, as banchan (side dish) with rice, and even noodles.

Storage tip: I simply place mine in an air-tight container in the refrigerator. Can last for 2 weeks or even longer.

Fry the tofu in oil until golden brown on both sides.

In a bowl, combine soy sauce, water, sesame oil, gochugaru, sugar, half of the sesame seeds, minced garlic, and the white part of the scallion.

Pour the mixture into the pan with the fried tofu and give it a mix to evenly coat all the tofu pieces with the sauce.

Close the lid and simmer for 5-6 minutes or until the sauce has reduced by half.

Garnish with the green part of the scallion and leftover sesame seeds.

Transfer to a plate and enjoy as a side dish with rice or noodles.
