Delicious meatballs with the sweet and savory flavors of Korean BBQ. Served over a bed of rice these Korean BBQ Meatballs make a delicious dinner, and re-heat really well for a quick weeknight leftover dinner!

Korean BBQ Meatballs

½ cup (low sodium) soy sauce

light brown sugar

garlic cloves

ginger

brown sugar

soy sauce

mirin (optional)

sesame oil

¼ small Asian pear, peeled, cored and chopped

¼ yellow onion, chopped

garlic

fresh ginger, minced

green onion, thinly sliced (plus more for garnish)

beef

salt and pepper

sesame seeds,

steamed white or brown rice,

Preheat oven to 375˚F.

Place all glaze ingredients into a small saucepan and simmer for 10 minutes. Remove from heat and set aside until completely cooled and thickened.

Place all marinade ingredients into a blender and blend until smooth.

In a mixing bowl, pour marinade ingredients over ground beef and lightly season with salt and pepper. Mix everything together until evenly combined.

Line a rimmed baking sheet with foil. Roll beef mixture into 24 even sized balls and place onto prepared baking sheet, ½ inch apart.

Bake meatballs for 12 to 15 minutes or until just cooked through.

Remove meatballs from oven and brush each one with cooled glaze.

Place baking sheet until broiler and broil glazed meatballs for 30 seconds to 1 minute.

Remove meatballs from broiler and brush with more glaze.

Pile meatballs over a platter of steamed rice and finish with sliced green onions and toasted sesame seeds.

These easy Korean meatballs are baked in the oven and made of a mixture of beef, ginger, garlic, green onion, soy sauce and gochujang.

Korean-Inspired Meatballs

panko bread crumbs

garlic (minced)

onion

tbsp minced cilantro

tsp fish sauce

tsp gochujang

tsp minced ginger

tsp sesame oil

Preheat oven to 375F and line a baking sheet in foil.

In a large bowl, mix beef with egg, bread crumbs, garlic, onion, cilantro, soy sauce, fish sauce, gochujang, ginger, and sesame oil.

Shape mixture into 1-inch balls and place 1-inch apart on prepared baking sheet.

Bake for 20-24 minutes, or until fully cooked.

Korean Inspired Meatballs is a quick and easy meal prep recipe using bagged slaw for a quick meal prep short cut to get those veggies in! 

Korean Inspired Meatballs {Meal Prep}

meatballs (your choice of meat)

olive oil

Basmati rice

scallions (garnish)

sesame seeds (garnish)

honey

tbsp Hoisin sauce

soy sauce (low sodium)

garlic, grated or minced

tbsp gochujang (korean chili paste)

water

tbsp rice vinegar

Heat a large skillet, with olive oil, on medium to high heat.

When the skillet is hot, add the meatballs. Browning and crisping up the sides. You are not cooking the meatballs all the way through here.

While the meatballs are browning, add all of the sauce ingredients to a small mason jar and shake. You could also add to a bowl and whisk.

Once the meatballs are browned, add the sauce to the skillet.

Allow the meatballs to simmer (with the lid on). After 8-10 minutes, use a thermometer and check that the meatballs are cooked through. 165°F for turkey, 160°F for beef.

Remove the lid and allow the sauce to reduce down (about 5 minutes).

Add the slaw mix to the skillet. If you want the sauce to remain thicker like a glaze, saute the slaw mix in a separate pan. When you add the slaw mix, it will release moisture and thin the sauce out.

Once the slaw is cooked down, remove from heat.

Divide the cooked rice into 4 meal prep containers.

Add 5 meatballs to each container and then distribute the sauce and veggies evenly between the containers. Allow to cool before securing the lid and placing in the fridge.

Keep refrigerated for up to 4 days.

Weeknight dinner doesn&#039;t get much easier than this! These Korean pork meatballs are simple to throw together and are so delicious!

Korean Meatballs

lb Ground pork

Egg (beaten)

Panko

Bulgogi sauce (see below)

Soy sauce

Brown sugar

Garlic (crushed)

Fresh ginger (grated)

1½ Tablespoons Sesame oil

Apple juice (or pear juice)

Green onions (finely chopped)

In a large bowl, combine the ground meat, egg, and panko, and mix them together for 30-40 seconds. Don&#39;t over-mix!

Cover the bowl in plastic wrap, then let it rest in the fridge for at least 30 minutes.

Set the oven to preheat to 425°F. Remove the meat mixture from the fridge, and roll the meat into 1&quot; balls, setting each one on a foil lined baking sheet.

Bake for 20 minutes, until the interior temperate reaches 165°F minimum.

Remove the meatballs and set aside. In a separate bowl, combine all bulgogi ingredients in a bowl and whisk well.

Toss the meatballs in the bulgogi sauce, then serve over rice and enjoy!

Sweet and spicy Korean meatballs. Ready in 30 minutes and perfect for both weeknights and festive appetizer parties. 

Korean Meatballs with Gochujang Drizzle Sauce

scallions, (chopped (about 1 cup))

breadcrumbs

gochujang

olive oil*

garlic ((6 cloves))

grated ginger, (or 2 teaspoons dried ginger)

salt

black pepper

94% beef

distilled vinegar or rice vinegar

Heat oven to 425ºF (218ºC) with rack set in lower-middle position.

Reserve 2 tablespoons scallions for serving.

In a large bowl, combine remaining scallions, breadcrumbs, egg, gochujang, soy sauce, olive oil, garlic, ginger, salt and pepper.

Mix to combine. Add ground beef and mix just until combined.

Shape meat mixture into 20 balls (about 2 ½ tablespoons each or #24 scoop (1.5 ounces)), and arrange on a greased rimmed baking sheet. Bake until golden brown and cooked through, 13–15 minutes.

For the sauce, combine honey, gochujang, toasted sesame oil, and vinegar. Arrange meatballs on a platter and drizzle with sauce or serve on the side. Sprinkle reserved scallions over top.

For a full meal, serve with basmati rice, charred broccolini or steamed vegetables (see notes for instructions).
