Miracle Mushroom Risotto

(7 ounces) of Miracle Rice

butter

olive oil

pkg baby bella mushrooms, sliced

scallions chopped

chicken broth

heavy whipping cream

Salt and pepper

Light, fluffy homemade rolls - ready in just 30 minutes from start to finish. These are some of the easiest dinner rolls you'll ever make!

30 Minute Dinner Rolls Recipe

Tablespoons active dry yeast (yes, you read that right)

sugar

In the bowl of a stand mixer, combine warm water, oil, yeast, and sugar; let rest for 5-10 minutes or until frothy and bubbly (you can also make this recipe without a stand mixer - just use a big bowl, a large wooden spoon, and all your arm strength).

With a dough hook, mix in salt, egg and 2 cups of flour until combined. Then add remaining flour - 1/2 cup at a time (dough will be sticky). 

Spray your hands with cooking spray and shape the dough into 12 balls.

After shaped, place on lightly greased cookie sheet and let rest for 10 minutes. 

Bake for about 10 minutes or until tops are lightly golden.

With a pretty sparkle and topped with a candy cane kiss, these fabulous holiday cookies will be the star of your holiday season.

Red Velvet Candy Cane Kiss Cookies

(16.5 oz) Red Velvet Cake Mix

(8 oz.) pkg cream cheese, room temperature

c. (1 stick) butter

tsp. peppermint extract

(3.25 oz) bottle of Red Sugar sprinkles

Preheat oven to 350 degrees. Line cookie sheets with a silcone making mat or parchment paper. Set aside.

	Using a stand or hand mixer, cream together the butter and cream cheese. Add the edd and extract and cream together until fully incorporated and a smooth consistency. Gradually add the cake mix approximately one cup at a time, stopping to scrape down the sides of the bowl. Batter will be thick. In a seperate medium bowl (like a cereal bowl) pour about half of the red sugar sprinkles.

	Roll batter into 1" balls, and then roll in the the dough balls in the red sugar sprinkles. Place about 1 dozen cookie balls onto prepared cookie sheets and bake at 350 for 9-10 minutes. While cookies bake, unwrap the kisses, so they are ready to go when cookies come out of the oven. When cookies are done baking, immediately press a kiss into the center of the cookie, and let cookies cool on the sheet for 5 minutes. Transfer cookies to cooling rack to cool completely. Serve right away or store in airtight container at room temperature. Can also freeze cookies, and bring to room temperature prior to serving.

Line large baking sheet with aluminum foil and lightly spray with non-stick cooking spray.

Spread beans in a single layer on a large baking sheet and drizzle with olive oil.

Sprinkle with salt and pepper, then using your hands (or a large spatula), lightly toss beans until they are coated with oil and seasonings. Spread beans back out in a single layer.

Cook for 20-25 minutes, or until beans are tender and start getting brown spots on the outside.

This Instant Pot recipe is one of my favorite ways to use my pressure cooker - by melting the chocolate in the Instant Pot, you have the perfect fondue for dipping all your favorite foods. This chocolate fondue recipe will feed a crowd and is great for parties and entertaining.

Instant Pot Chocolate Fondue

(12 ounce) bag semi-sweet chocolate chips

milk chocolate chips

heavy cream

vanilla extract

Place instant pot liner in instant pot. Pour 2 cups of water into the liner. Place a glass bowl on top of the liner (you will want to find a bowl that has a "lip" so that it can sit comfortably on top of the liner).

Pour the chocolate chips, cream, vanilla, and salt into the bowl. Press the SAUTE button on the Instant Pot. Occasionally stir the chocolate and cream as the water heats up and the chocolate starts to melt. Continue stirring until chocolate is smooth (takes about 8-10 minutes).

Once the chocolate is completely melted, press CANCEL and then the KEEP WARM button.

Stir occasionally to make sure that the chocolate is still smooth and then dip in your favorite foods and enjoy!
