Full-Fat Greek Yogurt

Mix everything and blend in a good quality blender.

Taste and add seasonings as needed.

Sweet Lassi:  Sub 2 teaspoons or more sugar/sweetener for salt. You could also use honey, agave nectar, or your sweetener of choice.

Mango Lassi: Add I cup ripe mango cubes and 1/4 teaspoons cardamom. You could also use a few saffron strands if you&#039;re feeling fancy. Sometimes people add a tinge of rose syrup to this but I find it overpowers the mango flavor a bit.

Savory Lassi: Roast cumin seeds, grind, add 1/2 teaspoons whilst blending.

Spicy Lassi: 2-3 thin ginger slices, 2 slices serrano chili and 1/8 cup chopped cilantro blended in. A squeeze of lime juice or lemon juice at the end is lovely.

Banana Lassi: 1 banana blended in, with some additional sugar if needed. Ground cardamom is delicious with bananas.

What The Heck Is This Yumminess Lassi: 1/2 teaspoons chaat masala (ready made)

Mint Lassi: 1/2 teaspoons dried mint whilst blending

Papaya Lassi: 1 cup papaya chunks and 1/4 teaspoons cardamom

The Perfect Sweet Lassi Recipe

plain, whole-milk yogurt

4-5 large/8-10 small ice cubes

whipping cream (or sub half and half)

Add all ingredients to a blender. Blend on high speed until smooth and no longer icy (~1 minute). It&#39;ll naturally become frothy on top.

Taste and add sugar for sweetness, ice for coolness, or 1-2 tbsp of yogurt for tartness. Serve immediately or refrigerate, covered, for 1-2 days.

Lassi Recipe | Sweet, Salted, Masala Flavors

curd ((Plain yogurt))

cardamom powder ((ground cardamoms, elaichi powder))

roasted cumin powder ((roasted jeera powder))

Chill the curd and water in the refrigerator. If you want to use saffron, soak it in 2 tbsps hot milk and let it rest for sometime.

Add curd to a large bowl. Whisk it well to break up lumps &amp; make it smooth.

If you do not have cardamom powder, then add few cardamoms to a spice jar and powder them. To make a fine powder quickly you can also add few tbsp of sugar and powder them.&nbsp;

Add sugar, cardamom powder and saffron to the smooth yogurt.

Whisk well. Pour water and whisk until very frothy. Taste test and add more water or sugar if needed. Transfer to serving glasses and garnish with chopped nuts.

Make Salted lassi: If you do not have cumin or jeera powder, just dry roast cumin on a low flame until aromatic. Cool and make a fine powder in a spice jar.

Add salt and cumin powder to the whisked yogurt. Whisk and pour water. Whisk again until frothy.&nbsp;

Make Mint Masala lassi: Pour curd, water, salt, sugar, cumin powder, chaat masala, mint leaves, lemon juice and chili to a blender.

Blend until frothy. Pour to serving glasses. Best served chilled.

Sweet Lassi Recipe - Indian yogurt drink

A mango lassi infused cake with all the flavours of the famous drink. A mango curd sandwiched between two layers of mango lassi sponge, finished with a saffron buttercream.

Mango Lassi Cake

flour

170 g white granulated sugar

175 ml neutral oil (e.g. sunflower

mango pulp

ml natural yoghurt

ml milk

tsp baking powder

tsp bicarbonate of soda

salt

lemon juice (from around 1-2 lemons)

g cornflour

g white granulated sugar

unsalted butter

butter

115 g icing sugar

tbsp milk

saffron

vanilla paste/extract

For garnishes:

pistachios

Preheat your oven to 160’C

Mix together the mango pulp, yoghurt and milk

Whisk together the oil, sugar and ground cardamom

Add the mango mixture and continue to whisk

In a separate bowl whisk the flour, baking powder, bicarbonate of soda and salt

Sieve the dry flour mix into the wet mix and whisk till everything is incorporated

Fold the batter with a spatula and pour equally into two lined and greased 7” cake tins. Bake for 45-50mins

Allow the cake to cool for 5-10 minutes before removing from the tin and turning out onto a wire rack to cool completely

For the sponge:

Place the mango pulp and sugar in a saucepan

In a separate bowl mix the lemon juice and cornflour together until the cornflour has completely dissolved

Pour the cornflour slurry into the mango mixture and whisk to combine

Place the saucepan on a medium-low heat and continue to mix using a whisk and a spatula

Once the mixture has thickened, place the heat on low and add the butter and milk and continue to mix until glossy and thick

Transfer this mixture to the fridge and allow to cool completely

Once cooled, blend with an immersion blender or regular blender into a smooth mango curd

For the mango curd:

Place the milk in the microwave and heat until steaming. Be careful not to leave milk in for too long as it can splatter. Then add the toasted and ground saffron and allow to infuse for at least 30 minutes

Whisk the softened butter until light and airy

Add the icing sugar and vanilla and continue to whisk

Finally add the saffron milk and continue to whisk

Place the buttercream into the fridge for around 10 minutes to firm up slightly before decorating

For the saffron buttercream:

Place the mango curd over the first layer of the sponge and spread into an even layer. Leave a small gap around the edge of the cake for the buttercream to fill in. This will ensure a neater finish

Place the second sponge on top and then add the buttercream. Smooth the buttercream over the top and sides

Decorate with mango pieces, ground pistachios and ground cardamom

Place the cake back into the fridge for 4 hours to allow the curd to fully set up. Enjoy this cake cold, straight out of the fridge for best results

Add the dahi, whole milk, rose syrup, rose water, and ground cardamom to a blender. Blend until completely smooth.
