A rich, warm, fragrant and delicious Vegan Lebanese Chickpea Stew flavored with warm spices like cumin and za'atar.

Vegan Lebanese Chickpea Stew

chickpeas ((canned,

garlic

tbsp cumin

za'atar

tsp red pepper flakes

paprika

roasted bell pepper

With a mortar or pestle, or in a food processor, crush the cumin and the garlic together until you have a very coarse paste.

Heat the oil in a saucepan.

Add the cumin and garlic mixture and saute a minute or so until it turns fragrant.

Add the tomato paste, red pepper flakes, and paprika. Saute, stirring frequently, for about two more minutes.

Add the chickpeas and stir to mix. Add four cups of water, the za'atar, bay leaves and the roasted red pepper. Mix well.

Once the mixture comes to a boil, lower the heat until it boils gently, and cook for 15 minutes. I like to mash some of the chickpeas with the back of the ladle to thicken the stew slightly.

Add salt to taste and stir in the parsley. Turn off the heat.

Serve hot. This is perfect with rice, brown or white. You can also serve with some crusty bread, or some whole wheat pita bread.

This vegetarian Lebanese stew is perfect for winter. Made in a slow cooker, it's a hearty dinner that's full of earthly Middle Eastern flavours.

Begin this recipe the day before, by placing the dried chickpeas in a large bowl and covering them with water to soak overnight.

The next day, turn on your slow cooker's sauté function. If your slow cooker doesn't have this function, heat a fry pan over medium heat to complete steps three and four.

Heat olive oil in slow cooker and sauté onion until soft.

Add garlic and eggplant. Fry these off for a few minutes, stirring frequently, until the eggplant is tender. If you're doing this in a frypan, once you've completed this step, transfer the onion, garlic and eggplant to your slow cooker.

Now add the tomato paste, fresh tomatoes, capsicum and all the herbs and spices.

Stir through the stock and drained chickpeas and mix to combine all the ingredients.

Place lid on your slow cooker and set on high for 3.5–4 hours.

When stew is ready, remove the lid and give it a good stir. Taste and season with salt and pepper to taste. Serve warm with bread.

This hearty stew with okra is a delicious meatless variation of the classic bamia recipe from the Middle East. We made it with tomatoes, coriander, and allspice, plus chickpeas for extra proteins.

In a skillet, sizzle sliced onions, garlic, and allspice with oil for 5 minutes.

Next, add chopped okra, tomatoes, coriander, bay leaves, and chickpeas with their canning water. Simmer the stew for 15 minutes.

Finally, stir in the lemon juice and maple syrup. Serve the stew with steamed rice or couscous.

In a heavy bottomed saute pan over medium-high heat, heat the olive oil, then add the beef, season with 7 Spice, salt and pepper. Sear for 5-7 minutes until the meat is browned on the outside. Remove and set aside, keep any oil and juices in the pan.

In the same pot, add the onions, garlic and cilantro cook for about 2-3 minutes until fragrant.

Add the tomato sauce and deglaze the pot. Then add fresh tomatoes and 4 cups of boiling water to the pot and bring to a boil. Return the cooked beef to the pot along with peas and carrots. Lower heat and simmer for 30-45 minutes until sauce thickens.

Serve over traditional Arabic rice pilaf and sprinkle fresh cilantro for garnish.
