Dice the onion, peel and slice the carrots, slice the celery, and mince the garlic.

Dice the ham into bite-sized chunks. Add the ham and cooking oil to a large soup pot. Sauté the ham for 3-5 minutes over medium heat, or until it achieves a decent amount of browning. Remove the browned ham to a clean bowl.

Add the onion, carrots, celery, and garlic to the pot in place of the ham. Sauté the vegetables for about 5 minutes over medium heat, or until the onions have softened. Allow the moisture released from the vegetables to help dissolve the browned bits of ham from the bottom of the soup pot as you stir.

While the vegetables are sautéing, add one of the three cans of beans to a blender, with the liquid from the can, and purée until smooth. Drain the remaining two cans of beans.

Add all three cans of beans (one puréed and two drained) to the soup pot with the vegetables. Also add 1/4 tsp dried thyme, some freshly cracked pepper (about 10 cranks of a pepper mill), and 2 cups chicken broth. Stir to combine, then turn the heat up to medium-high and allow the soup to come to a boil.

Once it reaches a boil, turn the heat down to medium and allow the soup to continue to boil for 15 minutes, stirring occasionally. As the soup boils it will reduce and thicken. If the soup becomes too thick, add more chicken broth or water to achieve your desired soup consistency.

After the soup has boiled for 15 minutes and has thickened, stir the cooked ham back into the soup. Give the soup a taste and adjust the salt or pepper to your liking. I did not add any additional salt, but I did top each bowl with a little fresh pepper. Serve hot!

Slow Cooker Ham and Noodle Soup

Add all the ingredients except the pasta and the 1 pound of ham to a slow cooker.

Just add enough water to cover the ham bone, too much water will make a weaker stock. We used approximately 8 cups of water for this size ham bone. Set on high and cook for 6-8 hours

Remove and discard the ham bone and the onion quarters.

Taste the stock for seasonings, then add in the pound of reserved ham and pasta.

Stir, cover and cook on high for an additional 30 minutes.

Garnish with the chopped parsley if desired.

Very good recipe, made it as written once and once altered it. Both ways were very tasty. Works great in Instapot too. If you really don't have a ham bone here is a little trick. Put in 3 tablespoons of powdered Consomme and several good shakes of liquid smoke. This is almost the same but it's probably more likely you have a ham bone than those things anyway lol.

Place beans, ham bone, cubed ham (if using), and water in the Instant Pot. Note: Make sure that the water does not go past the max fill line. The amount of water used may vary based on the size of the Instant Pot and the size of the ham bone.

Lock lid into place and turn the valve to SEALING.

Set to HIGH pressure 90 minutes.

When the timer goes off press cancel and do a natural release for 15 minutes.

Turn the valve to release the remaining pressure, remove lid, and remove the ham bone, pulling any excess meat off of the bone before disposing of it.

Serve and enjoy!

Instant Pot Instructions

Wash and rinse beans.&nbsp;

Quick-soak the beans by putting them in a pot with enough water to cover the beans with an inch of water. Bring to a boil for a few minutes and then turn off the heat letting them soak for an hour. After soaking drain water and return beans to pot.

&nbsp;Place ham bone, cubed ham, and water in the pot with the beans.  In this stove top version you should add enough water to cover the ham bone completely so if you may need more than the amount listed above depending on the size of your pot.

Bring to a boil and let cook for 5 minutes before turning the heat to low and placing a lid on top.&nbsp;

Cook for at least 3 hours or until the beans reach the desired tenderness.

oz Pasta Shells (I used Orecchiette)

Chicken Broth

Heavy Cream (also called heavy whipping cream)

Ham ((1/3 lb.) diced)

Frozen Peas (thawed)

Tbsp fresh Parsley (chopped)

Add PASTA, CHICKEN BROTH, HEAVY CREAM, GARLIC, and BLACK PEPPER to the Instant Pot. Press pasta shells under the liquid to submerge.

Secure the lid and turn the pressure release valve to the &quot;Sealing&quot; position.

Select &quot;Manual&quot; or &quot;Pressure Cook&quot; on HIGH pressure (2 minute for thin pasta or 3 minutes for thicker pasta). * see footnotes for pasta list

When cook cycle completes, let the cooker sit undisturbed for a 10-minute natural pressure release (NPR). DO NOT SKIP THIS STEP ... the pasta is still cooking.

Carefully turn the pressure release valve to the &quot;Venting&quot; position to release any remaining steam.

Open the lid, stir in PARMESAN CHEESE until creamy. Then stir in DICED HAM, and PEAS. (I like to microwave them both just before adding them in)

Put the lid back on the pot on &quot;keep warm&quot; mode with the pressure valve in &quot;venting&quot; position, allowing everything to warm through. You can also use the &quot;saute&quot; function as a reheat function, stirring as needed.

Leftover Ham Alfredo Pasta (Instant Pot Instructions)

Add PASTA, CHICKEN BROTH, HEAVY CREAM, GARLIC, and BLACK PEPPER to a soup pot or skillet. Bring to a boil over high heat.

Reduce heat to medium-low and cook until shells are almost completely cooked, stirring as needed (7-10 minutes depending on type of pasta).

Stir in PEAS and HAM, reduce heat to low and simmer until pasta is cooked to your liking, stirring as needed (3-5 minutes).

Stir in PARMESAN CHEESE until creamy.

Leftover Ham Alfredo Pasta (Stove Instructions)

Serve Alfredo pasta warm, garnished with fresh parsley.

Refrigerate in an airtight container up to 5 days.

To reheat, add a splash of cream or chicken broth to revive the creaminess. Then heat using the stove or microwave on medium heat, stirring as needed.

Add ham bone, bay leaf, and 1 teaspoon fresh thyme. Stir in chicken stock and water. Bring to a boil, reduce heat, and simmer uncovered for 60-90 minutes, stirring occasionally, until split peas are cooked down and soup is thickened to desired consistency. (Stir more frequently as the soup begins to thicken and add a little additional stock or water if it gets too thick for your tastes.)

Add diced ham during the last 15 minutes of cooking. When ready to serve, remove and discard ham bone and bay leaf, and stir in remaining 1 teaspoon fresh thyme. Season to taste with salt, if needed. Serve hot with croutons and cracked black pepper.
