  Smoked pulled pork is one of those classic barbecue staples that has spanned the nation.   Each region with their own spin on how to smoke a pork butt   low and slow where you can just pull apart the meat with your own hands (wearing gloves of course) because it is just so juicy and tender it falls right off the bone.    Award winning Pitmaster  Melissa Cookston    was generous enough to share with us her Perfect Pulled Pork recipe complete with a special marinade injection. How to Make Pulled Pork  Be sure to cook your pork shoulder (also referred to as a pork butt or boston butt) low and slow, between 200°F and 250°F until the meat is fall off the bone tender (usually when it reaches an internal temperature between 195°F to 205°F). By then all the intermuscular fat has dissolved leaving the meat extremely juicy. Test the meat by either using a probe or your finger. If the pork feels to “springy, it’s not tender yet! There should be a slight indentation in the meat when it is cooked just right. Fat Side Up or Fat Side Down?  There’s a lot of debate about whether you cook a pork butt (or brisket for that matter,) fat side up or fat side down. To settle the debate- it doesn’t really matter! We recommend placing the fat cap on the side the heat comes from- usually on the bottom. How Many Pounds of Pulled Pork Per Person  When cooked and pulled, a bone in pork butt well lose about 30 to 40 percent of its weight. Estimate about 1/3 to ½ pounds of meat per person when selecting your pork butt.   Note: It is recommended to use    Apple Hardwood Pellets with this recipe.This recipe uses Pit Boss    Hickory Bacon Rub seasoning.Melissa Cookston’s Pork Butt Marinade Injection Recipe  1 BOUILLON CUBE, CHICKEN    2 TBS BROWN SUGAR    3/4 CUP PEACH NECTAR    1/2 TBS SOY SAUCE    3/4 CUP WHITE GRAPE JUICE    2 TBS WORCESTERSHIRE SAUCE    3/4 CUP ICE   Place bouillon cube in water in a small saucepot.   Heat and stir until bouillon cube completely dissolves.   Add brown sugar and stir until it is dissolved.   Turn off heat and add remaining ingredients, except ice and stir.   After all ingredients are dissolved, add ice and stir to help cool it down.   Allow to cool and refrigerate for at least an hour before using.

TBSP PIT BOSS HICKORY BACON RUB

8lb Pork Butt Roast, Bone-In

TBSP Soy Sauce

CUP White Grape Juice

Worcestershire Sauce

Fire up your Pit Boss Grill and set at 250°F. 

Using a meat injection needle, inject across the meat in a checkerboard pattern, injecting approximately 1 tablespoon per site. 

Try to spend extra time around the bone, as this will help radiate the flavor through the meat while it’s cooking. 

Sprinkle meat side thoroughly with Pit Boss Hickory Bacon Rub, then rub in while wearing gloves. 

Allow to rest 30 minutes before placing on grill. Place in smoker at 250 degrees. 

After 3.5 hours, or when internal temperature hits 145 degrees, remove butt, place in pan fat side down, and add seasoning and drizzle with honey. 

Cover in foil and return to smoker at 275 degrees. 

Check for tenderness when pork butt approaches 190 degrees. 

The bone should be showing 1&#039;&#039; or more when it is at 194 degrees. 

When it’s tender, remove from smoker and let rest for 30 minutes to 1 hour. 

Wearing &#039;&#039;hot&#039;&#039; gloves (I like cotton gloves with a nitrile glove pulled over them) remove the bone and hand pull the pork, placing aside any large pieces of fat. 

Use your leftover pulled pork in this perfect Mexican pulled pork quesadilla recipe! It wows with black beans, chiles, and melty cheese.

Pulled Pork Quesadilla

Homemade BBQ sauce (or your favorite BBQ sauce)

Preheat

If you’d like to keep your quesadillas warm between batches, preheat the oven to 200 degrees F.

To a large mixing bowl, add the pulled pork, black beans, red onion, green chiles, and cilantro.

Stir

Assemble the quesadillas and cook: Warm a large nonstick skillet over medium heat. Lightly coat the skillet with nonstick spray or lightly brush with olive oil. Lay a tortilla in the skillet and sprinkle 2 tablespoons cheese over half. Top with ½ cup of the pork mixture.

Cook

Sprinkle an additional 2 tablespoons cheese on top, the fold the tortilla over the cheese to create a half moon. To cook 2 quesadillas at the same time, slide the folded quesadilla to one side of the skillet with the straight edge running down the middle, then cook a second quesadilla beside it (the open sides of the quesadillas will point away from each other).

Melt

Cook quesadillas on both sides until the tortillas are golden and the cheese is melted, about 5 to 6 minutes total. If desired, transfer cooked quesadillas to a clean baking sheet and place on the lower rack of the oven to keep warm. Repeat with remaining quesadillas.

Serve

Transfer the quesadillas to a cutting board and let rest 1 to 2 minutes. Slice into wedges and serve hot with a drizzle of BBQ sauce (I like to warm the sauce first), Greek yogurt, and green onions or cilantro as desired.

Depending on how you&#x27;re serving your pulled pork, you may opt to skip the rub entirely and just season the roast with salt and pepper. Choose whichever rub fits your plans best!

Air Fryer Pulled Pork Taquitos

Heat the air fryer to 400°F.

Heat a medium, nonstick skillet on medium heat. Add a tortilla, spritz both sides with cooking spray, and heat until softened on both sides. Transfer to a dish and cover with a lightly moistened paper towel to keep warm. Repeat with the remaining tortillas.

In a bowl, combine the jalapeno, salsa, seasonings, pork, and cheese.

Take a ~2 tablespoons filling and pack down the middle of a tortilla. Take one side of the tortilla and roll over the filling, using your fingers to get a tight roll, then roll up the rest of the tortilla around the filling creating the ~¾-inch diameter taquito.

Put taquitos in the basket of the air fryer in a single layer (this will require cooking in 2-3 batches depending on the size of your air fryer basket). Cook 5-6 minutes until tortillas are crispy and golden.

Serve with condiments of choice, such as sour cream, guacamole, and salsa.

Keto Nachos using Leftover Pulled Pork

Give leftover pulled pork a new lease of life in another wonderfully comforting dish. These pulled pork stuffed shells are a delicious combination of flavorful pork, cheesy goodness, all nestled in tomato sauce.&nbsp;

Pulled pork stuffed shells

oz large pasta shells ((6 oz is approx 1/2 box))

garlic (chopped)

pulled pork

arugula (lightly packed)

mozzarella (shredded)

ricotta

parmesan

marinara sauce

Preheat oven to 350F.

Cook the pasta shells according to packet instructions so they are al dente. Drain and set aside on a baking sheet.

Meanwhile, warm the oil in a medium skillet over a medium heat. Add the garlic and cook a minute or two until fragrant. Next add the pork and cook a minute to soften. Add the arugula and cook, folding it in so it all wilts down. Set aside to cool a minute.

Mix together 1/2 of the mozzarella (ie 1/4 cup) with the ricotta, add the pork mixture and mix.

Put approximately 1 1/4 cups of the marinara sauce in the bottom of a baking dish.

Fill the pasta shells with the pork-cheese mixture and set in the marinara in rows. (You might not use quite all of them, but a couple often break in boiling.)

Top with the remaining marinara sauce, the rest of the mozzarella and the parmesan.

Cover and bake for 30-40 minutes, uncovering for the last 5-10 minutes.
