In a large bowl, combine the flour, baking soda, baking powder, and salt. Whisk and set aside. In a medium bowl, whisk together the sugar, coconut oil, greek yogurt, eggs, vanilla extract, lemon juice, and lemon zest. Continue to whisk until the sugar dissolves. Pour the wet ingredients into the dry ingredients and fold until *JUST* combined. Do not overmix. Fold in the raspberries. The batter will be super thick, you didn't do anything wrong!

Sanitize bottles and caps by dipping them in a large pot of boiling water. Let stand on a dish towel until completely dry.

Wash and dry lemons. Use a ribbon citrus peeler to zest the lemons onto a plate. Be sure to avoid getting any of the white lemon pith in the zest, or the end product will taste soapy. Reserve zested lemons for other use such as making lemonade or lemon curd.

Place 1/4 cup loosely packed lemon peel in each bottle (zest of 3 lemons or .30oz). Use a funnel to pour approximately 1 1/2 cups of vodka into each bottle.

Place caps tightly on bottles and shake occasionally for 6-8 weeks, or until lemon thoroughly infuses into the alcohol.

Combine flour and baking soda. Beat butter, granulated sugar, dry pudding mix and lemon zest in large bowl with mixer until blended. Add ricotta and eggs; mix well. Gradually add flour mixture, mixing well after each addition.

Roll dough into 82 (1-inch) balls. Place, 2 inches apart, on baking sheets.

Bake 12 to 14 min. or until edges are lightly browned. Cool 5 min. on baking sheets. Remove to wire racks; cool completely.

Whisk powdered sugar and lemon juice in medium bowl until blended. Dip tops of cookies halfway into glaze; return, dipped sides up, to wire racks. Immediately top with some of the sprinkles. Repeat with remaining cookies. Let stand until glaze is firm.

Preheat oven to 350°F if using a silver 9-inch springform pan (or to 325°F if using a dark nonstick springform pan). Mix graham crumbs and melted butter until well blended; press firmly onto bottom of pan. Beat cream cheese and 3/4 cup of the sugar in large bowl with electric mixer on medium speed until well blended. Add 3 of the eggs, one at a time, mixing on low speed after each addition just until blended. Stir in 1 Tbsp. of the lemon peel. Pour over crust.

Bake 45 to 50 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate at least 4 hours before serving.

Microwave on HIGH 2 min.; beat until butter is completely melted and mixture is well blended. Microwave an additional 2 min. or until mixture just comes to boil and is slightly thickened; stir. Cool completely. Cover and refrigerate until ready to use. Drizzle sauce evenly over cheesecake slices before serving.

Combine dry pudding mix, nuts, flour, lemon zest and cinnamon in large bowl. Add apples; toss until evenly coated.

Cut cheese into 1/2 inch cubes.

Pack half of aromatics into bottom of clean, sterilized 16 ounce wide-mouthed glass jar.

Pack half of cheese loosely on top of that. Then add remaining aromatics.

Add remaining cheese to fill jar. Pour olive oil over the top, taking care to fully cover all of the cheese and additions, to avoid any oxygen getting to the ingredients (which would increase chance of spoiling early).

Tightly close jar with cover and turn jar upside down and over a few times. Then leave it on the counter for 3-4 hours to infuse and refrigerate overnight before eating, up to 2 weeks. The olive oil will likely solidify in the refrigerator, so set out an hour or so before serving at room temperature.
