Combine buttermilk and flour in a glass container, and leave to hydrate for 5 minutes.

Sprinkle the dough with the salt and soda then mix well into the batter. 

Stir in any additional flavours, then place on your baking pan. Slice a cross into the top of the loaf about 2 cm deep.

If you want to add a topping, brush the top of the loaf with beaten egg, milk or water then sprinkle on seeds or cheese.

Bake at 400F (200C) for 30-40 min (until a toothpick comes out clean).

Delicious! I made the cinnamon raisin variation &amp; loved that it was not super sweet. I used some kefir that had turned to curds &amp; regular kefir. Great recipe &amp; excited to try the variations.

This easy pasta recipe with creamy lemon pepper sauce flavored with garlic, fresh lemon and cracked pepper is the 20 minute dinner your week needs.

500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Melt butter in a large pan/skillet.

Add garlic and allow to saute gently for 30 seconds until fragrant.

Pour in the cream and lemon juice then add the pepper.

Allow to come to a simmer and cook for 5 minutes until the sauce coats the back of a spoon.

Remove from the heat and stir in the Parmesan and the parsley.

Season to taste then add the cooked pasta.

Toss with the reserved pasta water until the pasta is coated and creamy.

Serve with Parmesan cheese and freshly cracked pepper.

Lemon Pepper Fried Catfish

Rinse catfish fillets under cool water and lightly pat dry. Add the buttermilk to a shallow dish and coat the fillets in the buttermilk; set aside.

In a shallow bowl stir together the cornmeal, flour, garlic powder, and lemon-pepper seasoning. Allow excess buttermilk to drip off each filet then coat in the breading mixture, pressing lightly to ensure a thick crust. Allow to rest for 5 to 10 minutes.

Pour the oil into a deep cast-iron skillet to a little less than halfway full. Heat the oil over medium-high heat until the oil reaches about 350°F.

Fry in batches for 5 to 6 minutes on each side or until golden brown and cooked through. Drain on paper towels. Serve immediately with my Dill Pickle Tartar Sauce.

Lemon Pepper Chicken Fettuccine

6-8 oz fettuccine

Save 3 Tbsp of water from cooking pasta

Tbsp butter

Water from cooking pasta

Cook pasta, drain and set side. Make sure to save a little bit of pasta water.

Cut off the dark green leaves off the leek and the very bottom by the roots, discard what you cut off or save it for making homemade vegetable stock. Wash the leeks and cut them length-wise in half. Thinly slice the leek halves into half circles. Set aside.

Preheat a medium cooking pan, over medium heat. Add some vegetable oil.

Cut chicken breast in half, width-wise, and season each side generously with lemon pepper seasoning.

Cook seasoned chicken breasts until done. Take them out of the pan and set aside.

In the same cooking pan, add butter and sliced leek and cook until golden, stirring often. Season with a little bit of salt.

Once leeks are cooked, add pasta water, chicken stock and lemon juice. Mix well.

Add lemon pepper seasoning, mix and taste if you need to add any more salt.

Stir in pasta into the sauce and cook for about 5 minutes.

Slice chicken and either mix it into the pasta or add it on top of pasta.

Grate some Parmesan cheese on top. Add some diced green onion on top as well. Serve immediately.

These Baked Lemon Pepper Chicken Breasts are coated in a buttery lemon pepper sauce and then roasted in the oven to tender, juicy perfection!

Baked Lemon Pepper Chicken Breasts

lbs boneless, skinless, chicken breasts, (sliced in half length-wise)

Preheat oven to 450°F. Mix together the melted butter, salt, lemon-pepper seasoning, garlic powder, and onion powder together. Rub onto chicken breasts.

Place chicken into the oven and bake for 18 minutes. Remove baking dish from oven and place aluminum foil on top and bake for another 4-5 minutes.

Remove chicken breasts from oven and allow them to rest for 5 minutes and serve.

Lemon Pepper Wings

lb (900 grams) chicken wings,

aluminum free baking POWDER (21 grams)

Nonstick cooking spray

Lemon Pepper Seasoning *see note*

Preheat oven to 250F. Adjust oven racks to upper-middle and lower-middle positions.

Dry the wings thoroughly with paper towels.

Line a baking sheet with aluminum foil, then place a rack on the foil. Spray the rack with nonstick cooking spray.

Toss the wings with baking powder and salt.

Place the wings on the baking tray in a single layer.

Place wings on the lower-middle oven rack and bake for 30 minutes.

Move wings up to the upper-middle rack and increase the oven temperature to 425 F. Bake for 40 – 50 minutes, until golden brown and crispy on both sides, using tongs to flip the wings halfway through.

Remove from the oven.

Toss with Lemon Pepper Sauce and serve.

Lemon Pepper Salmon – Easy Grilled Salmon Recipe

Heat the grill to high heat (450-500°F). Brush the grates well and wipe grate with oiled paper towels until grate is black and glossy, 5 to 10 times, re-dipping towels in oil between applications.

Combine olive oil with lemon juice, lemon pepper seasoning, and salt if using.

Brush the salmon with half of the lemon pepper sauce and place it skin side up on the hot grill. Sear until surface is firm and grill marks have formed. Once you place the fillet on the grill, don’t move it until it’s ready to flip.

When the fish is about 70% done, about 6 minutes, it should release along the charred grill marks more easily without sticking. Slide a thin spatula, preferably a fish spatula, between the fish and the grill to gently release any parts that might be sticking, and gently roll over to cook on the other side. Baste with the remaining Lemon Pepper sauce.

Cook until the fish reaches the desired temperature (see Notes) or until it flakes with a fork.

Trim off any excess fat, pieces of bone or cartilage. Spread out the skin on the chicken so it lays flat. Lightly toss with avocado oil then season liberally on all sides of the chicken leg quarters

Place leg quarters in a cast iron skillet and bake for about 20 minutes at 400 degrees f. Next add sliced lemon and butter to the pan in between the chicken quarters. Continue cooking in the oven until the chicken reaches an internal temperature of 175-185 degrees F.

Ladle some of the juices in the bottom of the pan over the chicken and garnish with fresh parsley.

With a paring knife or a good peeler, peel lemons, being sure to leave as much of the white part on the lemon as possible.

Line peels on a food dehydrator tray, set dehydrator for 135 degrees and dehydrate for 1 hour until lemon peels are dried.

Lemon Pepper Seasoning is easy to make from scratch using just a few simple ingredients, for bright, bold flavor without the additives and artificial ingredients often found in store-bought seasonings!

Preheat the oven to 170°F (or the lowest temperature your oven will go).

Zest the lemons using a microplane, taking care not to get any pith (you should end up with about 6 tablespoons of zest). Spread into a thin, even layer on a parchment paper-lined sheet pan. Bake until completely dried out, shriveled, and slightly darkened, which will likely take between 30 minutes to 1 hour depending on the thickness/texture of the zest.

Start breaking down the peppercorns by pulsing in a spice grinder, high-powered food processor, or high-powered blender. (If your appliance is not high-powered enough to grind the peppercorns, you may place them in a freezer-thickness zip-top plastic baggie and bash with the flat side of a meat mallet instead.)
