tbsp plain/all-purpose flour*

tbsp unsweetened cocoa powder

tbsp stevia

¼ tsp baking powder

olive oil

tbsp unsweetened almond milk* (+1 tbsp for topping (optional))

chocolate chips ((optional))

In a small mug, mix together the dry ingredients.

Add in the oil and milk and mix until we’ll combined.Top with a few chocolate chips and microwave for 50-60 seconds. (For reference, my microwave is 700W and it took 55 seconds).

Allow the mug cake 1-2 minutes to cool before enjoying.

Gosh this was good - I accidentally undercooked it and created a molten middle pudding! Really hit the chocolate spot, thanks for the recipe!

This recipe is absolutely amazing, I sadly am out of both Stevia and Almond Milk so I had to replace those with regular granulated sugar and 2% Milk. Which brought the calories up to around 160 instead of 99, which is still pretty good as some recipes out there are 300+ ! So this is way easier to fit into my calorie deficit. This cake satisfied my cravings and sweet tooth, I recommend trying this!! I think It would also taste great with some ice cream on top, definitely going to make this again, especially once I buy more ice cream, would prob taste amazing with the caramel halo top.

Pre-heat oven to 190°C (375°F).

Line a 9-inch spring form pan with parchment paper on the bottom. Spray the sides of the pan with cooking spray.

Preheat oven to 350°F

Place graham crackers, sugar and butter into a food processor and pulse a few times. Add 1 tbsp water and pulse a few more times until it has a texture of coarse meal.

Gently press the crust into the lined pan. Set aside.

To make the crust:

In a blender add the cream cheese, cottage cheese and lemon zest and blend together until it is really smooth.

Add the eggs one at a time and mix.

Add the vanilla extract, sugar and flour into the cottage cheese mixture and pulse until blended.

Pour the cheesecake batter into the pan. Bake in the oven for about 45 minutes, until the cheesecake is set.

Let it cool on a rack, then place in fridge for at least 4 hours or as long as overnight.

Top with fresh berries if using (or topping of your choice) and cut into 12 slices.

To make the cheesecake filling:

Preheat the oven to 350 degrees. Spray a 9-inch round baking pan with cooking spray. Line the bottom with parchment and spray the parchment.

In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a medium bowl, whisk together the buttermilk, melted butter, sugar, applesauce, eggs, and vanilla until smooth. Pour the wet ingredients into the dry and gently fold to just barely combine—some lumps are ok and be careful not to overmix.

Gently fold in the berries, again, just until combined and a few lumps remain.

Spread the batter into the prepared pan into an even layer. Sprinkle the remaining sugar evenly over the surface.

Bake until the top is golden and a toothpick inserted into the center comes out clean of batter, 40 to 45 minutes. Serve warm.

I made this twice. First time as directed. Second time one cup less berries. It was much  better with less. 3 1/2 cups is a lot and all I tasted.

This was very yummy without being overly sweet. So good with a scoop of vanilla ice-cream or some Cool Whip. We didn't finish the whole thing immediately, and found it had gotten a bit soggy by the next day. But 10 minutes in the oven at 350 brought it right back, so we were able to enjoy it for several days.

Melt the butter in the microwave for 30 seconds, then let it cool

Skinny Tiramisu for One

ladyfingers (halved)

ml espresso or coffee

g Philadelphia lightest cream cheese

g 0% fat yogurt

tsp unsweetened cocoa powder (plus more for dusting)

Brew your espresso and mix in 1 tsp of cocoa powder.

Cream together the cream cheese, yogurt, sweetener and vanilla extract until smooth. Set aside.

Prepare

Cut the ladyfingers in half and dip them into the coffee.

Layer the tiramisu by alternating ladyfingers and the cream cheese mix until there is two layers of both.

Assemble

Refrigerate for at least 30 minutes.

Top with 1-2 tsp of cocoa powder and serve immediately.
