These sweet Korean lentils have take out worthy flavor without compromising kidney friendly nutrition!

Sweet Korean Lentils

water

coconut aminos

brown sugar

garlic (minced)

ginger

red pepper

sesame oil

olive oil

onion

red lentils

green onions (sliced)

Mix all sauce ingredients together in a jar or large measuring cup.

Heat oil in a medium to large pot and over medium- high heat.  Add the onion and sauté for 3-5 minutes, until the onion is soft and begins to brown.

Add the lentils and sauce, bring to a gentle boil.  Reduce to a simmer, cover and cook for 8-10 minutes.  The lentils will be tender and most of the liquid absorbed.

Spoon lentils into four servings, garnish with green onions.

Low Sodium Jalapeno Cheddar Corn Muffins

kidney friendly corn muffin mix

canola oil

milk

jalapenos,

oz sharp cheddar cheese, shredded

Preheat oven to 400 degrees.

Whisk together corn muffin mix, oil, milk, and egg until smooth.

Add diced jalapeno and shredded cheddar cheese. Stir until evenly mixed

Grease muffin pans using a non-stick spray (approximately 20 muffins)

Spoon mixture into muffin pans. Fill approximately half way.

Bake for 16-20 minutes or until muffins are golden brown on top.

Israeli Couscous Low Sodium Greek Salad

cucumber, chopped

bell pepper, chopped

red onion, thinly sliced

cherry tomatoes

feta cheese, crumbled

pine nuts

Israeli couscous, cooked

T Greek Dressing

Add all ingredients to a bowl.

Toss gently to evenly distribute ingredients. Enjoy!

quinoa

baby spinach

cucumber

apple

blueberries

walnuts (chopped)

mint leaves (chopped (optional))

lemon juice (to taste)

Dijon mustard

sea salt

black pepper

Make dressing: In a jar, add olive oil, lemon juice, Dijon mustard, and season with salt and pepper.  Close the lid and shake vigorously to mix.  Add some maple syrup if you prefer a sweeter dressing.

In a large bowl, add cooked quinoa, spinach, cucumber, apple, blueberries and optional mint.

Pour dressing and toss to combine right before serving. Top each serving of salad with 2 Tbsp. of chopped walnuts.

These yummy bite sized snacks are packed with iron and healthy fats! No cooking required, they come together quickly and store beautifully in the fridge or freezer.

Delicious Iron Rich Chocolate Bites

apricots

cashews

coconut (divided)

2½ oz dark chocolate chips (about 6 tablespoons)

salt (to taste)

Place dried apricots in a bowl. Add enough hot water to submerge the apricots and let soak for about 10 minutes until slightly softened.

Add dried apricots to a blender or food processor. Blend to a fine mixture or a rough paste. Stop and scrape the sides as needed.

Add the roasted cashews, ½ cup shredded coconut, dark chocolate chips, and a pinch of salt to the blender or food processor. Pulse until the nuts are broken up into small pieces and the mixture is well combined.

Pour out mixture into a plate and shape into 20 small balls with slightly damp hands. 

Transfer the remaining shredded coconut onto a plate and roll the balls in the shredded coconut to coat. 

Enjoy immediately or store in an airtight container in the fridge for up to a week or in the freezer for up to one month.

Variations

Personalize It: Feel free to use your favorite seeds or nuts in this recipe. Cashews, pine nuts, pistachios, sunflower seeds, and sesame seeds are some higher iron nuts and seeds.

Lower Potassium: halve the serving size to 1 bite.
