To hard boil the eggs, place the eggs in a sauce pot and add water until the eggs are covered by one inch. Place the pot over high heat and allow the water to come up to a full boil. When it reaches a full boil, turn off the heat, place a lid on the pot, and let the eggs sit in the hot water for 15 minutes. After 15 minutes, transfer the eggs to a bowl of ice water to cool.

To make the scallion herb cream cheese, combine the cream cheese, parsley, cilantro, green onion, garlic powder, salt, and lemon juice in a bowl. Stir together until evenly combined.

Place one bagel in each lunch box along with ¼ of the cucumber slices, ¼ of the grape tomatoes, ¼ of the cream cheese (1 oz.), and one hard boiled egg. Refrigerate up to five days.

Spread 1 Tbsp pesto over the surface of each tortilla (it does not need to cover the entire surface. Lay two slices of provolone over one half of each tortilla, followed by about 9 pepperoni. Lastly, add one handful of fresh spinach to each tortilla.

Roll each tortilla up, trying to keep the roll as tight as possible. With the seams facing down, slice the rolls into one-inch sections. Place the sliced roll-ups in your meal prep container. Pack them closely together to keep them from coming unrolled.

Slice the green bell peppers into strips. Divide the bell pepper strips between the four containers.

Fill four small containers with 2 Tbsp pizza sauce each. Refrigerate your roll ups, bell peppers, and pizza sauce for up to five days.

Drain the canned tuna well. Finely dice the celery, chop the walnuts, and slice the green onions.

Combine the tuna, celery, walnuts, green onions, mayonnaise, lemon juice, pepper, and salt in a bowl. Stir to combine.

Serve as a sandwich, salad over a bed of greens, or with crackers and vegetables for dipping. Refrigerate up to four days.

This fun spin on canned tuna is savory, sweet, and nutty. Sesame Tuna Salad is great on crackers, sliced cucumber, in lettuce wraps, or on salad greens.

Sesame Tuna Salad

soy sauce (0.04)

tsp toasted sesame oil (0.20)

red bell pepper (0.50)

In a small bowl, stir together the soy sauce, toasted sesame oil, brown sugar, and sesame seeds.

Drain the tuna well, then add it to a bowl. Dice the red bell pepper (I served the other half on the side with the tuna salad) and slice the green onions. Add the bell pepper and green onion to the bowl with the tuna.

Pour the prepared sesame dressing over the tuna and vegetables in the bowl. Carefully fold the ingredients together until everything is coated in dressing. Serve immediately, or refrigerate until ready to eat.

How to Make Tortillas with your Thermomix

Place all of your ingredients into your Thermomix bowl and blitz on speed 5 for 10 seconds to combine.

Set your Thermomix onto the kneading function and knead for 2 minutes.

Tip the Tortilla dough onto a floured bench and using your hands roll it into a ball.

Divide the dough into 10 even pieces (or 8 if you want to make larger tortillas) and roll them out into a circle as thinly as you can.

Place a single tortilla into a preheated frying pan (you do not need to add oil or grease) and cook for 1 - 2minutes or until bubbles start to form on the surface of your tortilla before flipping it over to cook for a further minute on the other side.

Remove the tortilla from your frying pan and place onto a plate and cover with a tea towel, or place in your Thermosever.

Repeat until all of the tortillas have been cooked.

This easy Thermomix Chocolate Chip and Zucchini Muffins recipe makes a yummy lunchbox treat or snack for the whole family.

Thermomix Chocolate Chip and Zucchini Muffins

zucchini (1 medium zucchini, cut into 3cm pieces)

greek yoghurt

coconut oil (liquid)

maple syrup

eggs

tsp vanilla extract

self raising flour

cacao

dark chocolate chips

Preheat your oven to 180 degrees celsius (fan-forced) and line 2 x muffin trays with 18 paper cases.

Place the zucchini into your Thermomix bowl and mix for 6 seconds, speed 6 to grate.

Scrape down the sides of your Thermomix bowl and add the greek yoghurt, coconut oil, eggs, maple syrup and vanilla extract. Mix for 10 seconds, speed 4.

Scrape down the sides of your Thermomix bowl and add the self raising flour and cacao. Mix for 12 seconds, speed 4 to combine.

Add 100 grams of the chocolate chips and use your spatula to stir them through.

Divide the mixture between the paper cases and sprinkle with the remaining chocolate chips.

Place the muffin trays into your preheated oven and bake for 15 - 18 minutes or until cooked through when tested with a skewer.

Thermomix Cheese and Vegemite Scrolls

Preheat your oven to 210 degrees celsius (fan-forced) and line an oven tray with baking paper.

Place the flour, butter and salt into the Thermomix bowl and mix for 10 seconds on Speed 9 until mixture is the same consistency as bread crumbs.

Add the milk and mix for 7 seconds on Speed 4 to combine.

Select the Kneading Function and mix for 2 minutes.

Turn the dough out onto a floured bench and using a rolling pin, roll the dough out until you have a 30cm x 40cm rectangle.

Spread the Vegemite over the dough, leaving a 2cm gap around the edges. Sprinkle the cheese - reserve approximately 1/4 cup of cheese.

Cut into 12 slices – approximately 2cm thick.

Place on a baking tray and sprinkle with the remaining grated cheese.

Bake in oven for 25 minutes or until golden brown on top and cooked through.

Preheat your oven to 200 degrees celsius and line a 12 hole muffin tin with paper cases.

Place the bananas (which have been chopped in half), greek yoghurt, coconut oil, eggs and vanilla extract into your Thermomix bowl and mix for 10 seconds, speed 5 to combine.

Scrape down the sides of your Thermomix bowl and add the remaining ingredients. Mix for 10 seconds, speed 4, REVERSE to combine.

Scrape down the sides of your Thermomix bowl and mix for a further 5 seconds, speed 4, REVERSE.

Spoon the mixture into your muffin tin and sprinkle with the extra rolled oats. Place the muffin tray into the oven and bake for approx 20 minutes or until lightly golden and cooked through.

Carefully remove the Banana Oat Muffins from the oven and allow them to cool in the muffins tin for 10 minutes before transferring to a wire rack to cool completely.

Wash and slice the celery into sticks. Slice each apple in half, remove the core, then cut into slices. Sprinkle the lemon juice over the apple slices to slow browning, if desired.
