Cabbage and Mango Slaw- this healthy, detoxing recipe is low in fat, vegan and gluten-free. Makes a delicious summer side salad ... and perfect in Tacos!

Cabbage Mango Slaw

cabbage (½ of small purple cabbage)

mango (ripe but firm, not soft)

cilantro chopped, thin stems ok

¼ C finely diced or thinly sliced red onion

olive oil

orange

lime

salt

Slice or shred cabbage very thinly- Add to large bowl.

Peel mango with a vegetable peeler, then slice into thin strips, or cut into cubes and place in the bowl.

Zest one orange and add the zest to the bowl. Add the juice of half the orange, and half the lime

Add oil and salt and mix gently to combine.

Taste and adjust salt, heat and citrus. Often I will squeeze in the other half of the orange.

I have made this 3 times in the past month. It's so simple and healthy and satisfying. My family is getting a little tired of it but I could eat it every day.

I make this salad all the time. We all love it. I eat it for lunch or dinner, and on occasion, even for breakfast. I usually top if with some roasted cashews for a little salty, crunchy contrast. Yum!

frozen mango pieces (No bigger than 3cm pieces)

Place the Mango and Banana pieces into your Thermomix bowl and gradually increase the speed to speed 8 before blitzing for 30 seconds.

Mango Peach Salsa

jalapeno pepper

garlic

red onion

cilantro

mango

peach (chopped roughly)

Wash

Prepare the fruit and vegetables first by rinsing and scrubbing under cold water.

Chop

Finely chop the jalapeno, garlic, red onion, and cilantro in a small food processor.

Dice

Cut the flash of the peach from the pit and dice.

Recipe Prep

Chop the jalapeno, red onion,  garlic cloves, and fresh cilantro finely in a small food processor, pour into a medium-size bowl mixing bowl.

Cut the flesh of the mango away from the pit. Cut the flesh of the mango away from the skin and dice the fruit and add to the bowl.

Cut the flesh of the peach away from the pit. Dice the cut pieces of peach and add to the bowl.

Season

Add the salt, sugar, and zest and juice of the lime.

Refrigerate

Refrigerator the salsa at least one day before you plan on serving it.

Makes about 1 quart of fresh fruit salsa.

Imagine mango lassi reimagined in dessert form, this recipe became an instant classic at his Fitzrovia restaurant Pahli Hill when it opened in 2020. &#8220;Mangoes were a huge part of my upbringing in southern India and my favourite fruit. There are over 250 varieties. Alphonso mangoes are considered the king of mangoes and grow in a small region in Maharashtra called Ratnagiri. They have the perfect blend of a buttery texture and floral aroma. I decided to combine a classic French cheesecake recipe and my favourite fruit, at the peak of its season in April to June, to create this simple dessert at Pahli Hill.” Avinash Shashidhara

digestive biscuits (about 12), crushed

unsalted butter, melted

cream cheese

double cream

gelatine leaves

You’ll also need

18cm springform

Put the gelatine leaves in a bowl of cold water and set aside to soften.

Mix the crushed digestive biscuits and melted butter in a bowl and press the mixture evenly over the base of the cake tin. Chill in the fridge until ready to fill.

Put the cream cheese, double cream and caster sugar in a bowl and whisk to soft peaks with a handheld electric whisk (or whisk in a stand mixer). Fold in the chopped mango.

Remove the gelatine leaves from the water, give them a good squeeze to get rid of any excess water and put in a small pan. Melt over a very low heat – this won’t take more than 1 minute. Add some of the cheesecake mix to the pan to cool down the gelatine, then fold it into the rest of the cheesecake mix.

Pour the cheesecake mixture on to the biscuit base and chill in the fridge for 2-3 hours to set. Once set, decorate with the sliced Alphonso mangoes in an overlapping pattern, and serve.

When the weather starts heating up, we like to serve these fresh tofu spring rolls with avocado and mango. They&#39;re quick (ready in just 30 minutes), easy, and the only cooking required is some water heated in a tea kettle.

Tofu Spring Rolls with Mango and Avocado

rice noodles

firm tofu (drained)

English cucumber

rice paper spring roll wrappers

Cook rice noodles according to package OR place in dish, pour boiling water to cover, and allow to soften for 15 minutes. Drain thoroughly.

In the meantime, cut tofu, mango, cucumber, and avocado into thin slices.

Chop herbs.

Fill a wide, shallow dish with warm water to soak rice wrappers in.

Assemble rolls one at a time. Start by soaking the rice wrapper in warm water until softened (this will only take a few seconds). Place a slice or two of tofu, mango, cucumber, and avocado in the middle of the wrapper, about ⅓ of the way from the bottom. Top with a small handful of rice noodles. Sprinkle with a large pinch of basil and cilantro. Roll the spring roll as you would a burrito.

Make this mango and lime yogurt cake for a teatime treat. A straightforward recipe where you will definitely be rewarded for your efforts by its scrummy taste.

ready-to-eat dried mango, pineapple or apricots

natural yogurt

golden caster sugar

plain flour, sifted

coconut flakes (or desiccated coconut), toasted

Preheat the oven to 180°C/fan160°C/ gas 4. Grease and line a 900g loaf tin. Snip most of the mango into pieces, reserving a few slices.

Put half the lime zest, yogurt, sugar, oil, eggs, flour, baking powder and chopped mango into a large bowl. Beat with a wooden spoon until just smooth. Pour into the tin and bake for 50 minutes, or until a skewer inserted into the centre comes out clean. Turn out to cool on a rack.

Mix just enough of the lime juice with the icing sugar to give a thick, slightly runny icing. Pour over the cake, then top with the coconut, remaining lime zest and mango.

For this Onam, prepare a sweet ripe mango curry. This spicy yet sweet curry with a coconut and chilli base is brilliant with steamed matta rice. Enjoy this vegan gluten-free mambhazha pachadi.
