This is one of the best known and most representative recipes of the Dominican cuisine. It could probably be called Dominicans' official breakfast dish. A must-try for those sampling our cuisine. Learn how to make it with this simple step by step recipe.

Mangú (Mashed plantains)

Peeling

Peeling: Peel the plantains (see how-to) and cut lengthwise, then divide each half into two. Remove the center where the seeds are located (optional, this is just my preference for a smoother mangú).

Boiling

Boiling: Boil the plantains in enough water to cover them plus an inch until they are very tender, having added the salt to the water before the water breaks the boil.

Mashing

Mashing: Remove the plantains from the water and mash them right away with a fork until they are very smooth and there are few to no lumps (be careful not to burn yourself). Mix in olive oil, and water at room temperature and keep mashing and mixing until it turns into a smooth puree.

Cooking onions

Cooking onions: Heat a tablespoon of oil in a skillet over low heat. Add onions and cook and stir until they become translucent. Pour in vinegar and season with salt to taste.

Serving

Serving: Garnish mangu with the onions and serve with sunny-side-up eggs or Dominican scrambled eggs, Dominican fried cheese, or fried slices of Dominican salami.

Mangú Dominicana is made very commonly in the Dominican Republic by boiling plantains and then mashing them. Mangú is typically topped with red onions and served at breakfast.

Instant Pot Mangú from the Dominican Republic

Peel your plantains and cut them into 1-1.5 inch pieces. Place them in the Instant Pot with the water and secure the lid. Turn the cooking pressure to HIGH for 6 minutes. When the cook time has completed, perform a Quick Release.

Mash the plantains with a potato masher. You can also add some butter if you wish!

Remove the mangú from the Instant Pot and wash the pot. Turn the pot to SAUTE and add the olive oil until warmed.

Add the red onion to the pot and stir occasionally until the onion is cooked all the way. Add some salt to taste.

Place the red onions on top of the mangú. Enjoy!

Corta los plátanos en 8 trozos. Coloca los plátanos en una olla de 2 cuartos de galón, cubierta con agua. Calienta hasta hervir; reduce el fuego a medio. Cocina aproximadamente 20 a 25 minutos o hasta que los plátanos estén tiernos. Deja los plátanos en el agua. 
 


Con una cuchara perforada retira los trozos de plátano del agua. Coloca el plátano en un tazón mediano con mantequilla, con un tenedor forma un puré agregando el agua del líquido de cocción.

Cubre el puré de plátanos con las rebanadas de cebolla; sirve con huevos fritos.

Tablespoons Vegan Butter (¼ cup or 56 grams)

¼ Cup Reserved Water (282 grams/milliliters)

Red Onion (optional for topping)

Cilantro (optional for topping)

Olive Oil (optional for topping)

Cut each plantain in half lengthwise then cut each half into 3 inch pieces.

Add the plantain chunks to a large pot or saucepan and cover with water.

Add the salt and bring the water to a boil over high heat. Once boiling, reduce the heat to a low simmer and cook for 20 minutes or until fork tender. When the plantains are finished, reserve 1 1⁄4 cup (283 grams/milliliters) of water from the pot and set aside.

Using a strainer, drain the water and put the plantains back in the pot.

Use a potato masher or fork to mash the plantains.

Add the butter and continue mashing until the plantains are mostly broken down.

Add the reserved water a little at a time while mashing until the plantains are semi-smooth like mashed potatoes.

Taste and season with any additional salt or add black pepper if preferred. serve as desired or top with pickled red onion, cilantro, or a drizzle of olive oil.
