Spinach Ricotta Manicotti

manicotti shells ((or 18 dried cannelloni tubes))

salt

oz (250 g) frozen spinach, (thawed)

lb (500 g) ricotta cheese

mozzarella cheese ((4 oz | 120 g))

Parmesan

eggs

garlic, (finely chopped or minced)

Italian seasoning

nutmeg ((optional))

pepper

olive oil

garlic, (finely chopped (or minced))

oz (800 g) American tomato sauce, ((Passata))

water ((swirl

tomato paste

basil

black pepper

mozzarella cheese

In a large shallow dish, cover manicotti shells with boiling water and season generously with salt. Cover with foil or plastic wrap and set aside to soften slightly (about 7-10 minutes while you prepare your sauce).

MANICOTTI

Heat the oil in a medium saucepan over medium-high heat. Sauté onion until transparent (about 3 minutes), then addd the garlic and cook until fragrant (about 30 seconds). Add the tomato sauce (Passata), water, paste and herbs. Bring to a boil, then lower the heat and simmer, covered, for 10 minutes.

Stir in salt and pepper to taste. Use now, or store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.

MARINARA SAUCE

Squeeze excess water from the thawed spinach.

Combine filling ingredients in a bowl until well combined.

FILLING

Preheat oven to 350°F | 175°C.

Spray the bottom of a 9 x 13-inch ovenproof baking dish with nonstick spray. Spread out about 2 ladles (or 1 cup) of the marinara sauce on the bottom of baking dish.

Transfer filling mixture into a strong ziplock bag. Cut a hole in the bottom corner of the bag (see photos in post, or use a piping bag).

Once manicotti tubes have softened slightly but are still firm to the touch, use a slotted spoon to transfer them from the boiling water to a plate. &#x27;Pipe&#x27; filling into manicotti tubes and arrange them in a single layer over the sauce in the baking dish. Top with remaining sauce and cheese.

Cover with foil and bake for 30 minutes. Uncover and bake for a further 10-15 minutes, or until pasta shells are cooked through.Serve immediately.

ASSEMBLE AND COOK

Ricotta, chèvre, mozzarella, Parmesan cheese and spinach are combined and stuffed inside manicotti pasta and then slow cooked in marinara sauce with even more cheese on top for a delicious recipe everyone in the family is going to love!

Preheat the oven to 350 degrees F. Coat a 9&quot;x13&quot; baking dish with cooking spray.

Heat the olive oil in a large pan over medium heat. Place the sausage in the pan. Cook for 3-4 minutes, breaking up the meat into small pieces.

Add the onions to the pan. Cook for an additional 4-5 minutes or until onions are softened and sausage is browned and cooked through.

Add the garlic and cook for an additional 30 seconds. Remove the pan from the heat.

Place the ricotta cheese, egg, mozzarella, parmesan, Italian seasoning and salt and pepper in a large bowl. Stir to combine.

Add the meat mixture to the ricotta mixture. Stir until well mixed.

For the filling

Cook the manicotti in salted boiling water for 1-2 minutes less than the package directions state. Drain and cool slightly.

Spread 1 cup of the marinara sauce over the bottom of the pan.

Use a spoon or piping bag to fill each manicotti with the meat and cheese mixture.

Arrange the manicotti in a single layer in the pan. Pour the rest of the sauce over the top.

Cover and bake for 20 minutes. Uncover, sprinkle the mozzarella cheese over the top, then bake for an additional 10-15 minutes or until cheese is melted and browned.

Sprinkle with parsley, then serve.

Spinach and ricotta manicotti is one of those dishes that are edible—dare I say, enjoyable—even under the most inauspicious of circumstances (think: cafeteria steam tables). So how great would it be if you optimized every ingredient and served it fresh from the oven? (Hint: really, really great.)

Spinach and Ricotta Manicotti Recipe

(450 grams) high-quality ricotta cheese (see note)

Kosher salt

(225 grams) fresh spinach, washed

(225 grams) fresh arugula, washed

(120 grams) grated Parmigiano-Reggiano, divided

Adjust oven rack to center position and preheat oven to 375°F (190°C). Line a large plate or a rimmed baking sheet with a triple layer of paper towels or a clean kitchen towel. Spread ricotta on top and cover with more paper towels or another clean kitchen towel. Let drain for 5 minutes, then remove towels and transfer ricotta to a large bowl. (You may need to use a spatula to scrape all of the ricotta off the towels.) Set aside.

If Using Fresh Pasta: Bring a large pot of salted water to a boil over high heat. Working in batches, add pasta squares to boiling water, 6 at a time. Cook for 30 seconds, then, using tongs, transfer to a clean kitchen towel to drain, laying them out in a single layer. Repeat until all pasta squares are cooked, reserving boiling water for step 4. Set aside, keeping squares separated from each other. Continue with step 4.

If Using No-Boil Lasagna Noodles: Bring a large pot of salted water to a boil over high heat. Place noodles in a 9- by 13-inch casserole dish. Using a ladle, transfer just enough boiling water from the pot to cover noodles. (Keep remaining boiling water to boil spinach and arugula in step 4, adding more if water level gets too low.) Let pasta sit, agitating occasionally, until pliable but not mushy, about 5 minutes. Drain pasta, then dry on a clean kitchen towel. Cut each noodle in half crosswise to make twelve 4- by 4-inch squares of pasta. Set aside, keeping them separated from each other to avoid sticking. Wipe casserole dish dry.

Add spinach and arugula to boiling water and cook just until wilted, about 20 seconds. Drain greens into the bowl of a salad spinner set in the sink. Run under cold water until thoroughly chilled, then spin in salad spinner to dry. 

Spread greens over a clean kitchen towel or a double layer of paper towels and roll into a tight tube, pressing to remove excess moisture. Transfer to a cutting board and roughly chop.

Add greens to bowl with ricotta. Add half of mozzarella, half of Parmesan, egg, garlic, and nutmeg. Season with a large pinch of salt and a few grinds of black pepper, then fold with a wooden spoon or spatula to combine.

Spread half of tomato sauce in an even layer in casserole dish. Working with 1 square of pasta at a time, place a few tablespoons of ricotta mixture in a row along the center of the square, then roll it up. Place roll, seam side down, in casserole dish. Continue until all of pasta and filling are used up.

Spoon remaining sauce over manicotti, keeping it tidy along the center of each row of rolls. Sprinkle remaining mozzarella cheese over sauce. Sprinkle all over with remaining Parmesan. Cover tightly with foil.

Place in oven and bake for 30 minutes. Remove foil and continue baking until cheese is well browned and bubbly, about 15 minutes longer. Remove from oven and let rest for 10 minutes. Sprinkle with parsley or basil and serve.

Manicotti can be prepared through step 8 and refrigerated for up to 3 days before baking. Bake as directed in step 9.

Manicotti or Crespelle depencing on which part of Italy you are from, are stuffed crepes. You can use cannelloni shells in place of the crepes.

Thermomix recipe: Crepe Manicotti with Ricotta

Basic

Batch Marinara Sauce

Grams mozzarella, cubed

Grams Mature Cheddar Cheese cubed

Teaspoons Caramelised Garlic Paste garlic

Red Onion

400 Grams baby spinach leaves

Handful Basil leaves, fresh

Pinches Pink Salt Flakes

Black Pepper freshly cracked to taste

Egg Yolks

500 Grams Fresh Ricotta Cheese drained

Premake the crepes well in advance. They are best filled when cooled.

Premake the Marinara Sauce, up to 3 weeks in advance.

Place the cheeses (except ricotta) into the Thermomix bowl and mill *10 sec/speed 10.* Remove about half of it from bowl and set aside.

Add onion, garlic or garlic paste, some of the basil, and as much spinach as you can fit into the Thermomix bowl and chop *5 sec/speed 8*. Scrape down and around the blades tip out into a large mixing bowl.

Repeat with all the remaining spinach, one bowlful at a time until it is all chopped. Add seasoning, yolks and ricotta to the mixing bowl and stir by hand until well combined.

Preheat oven to 180°C and pour a little of the Marinara Sauce into the bottom of a lasagne tray or several smaller baking dishes.

Fill each crepe with the spinach mixture and roll, tucking in one end so the filling has nowhere to go. Lay them flat on top of the sauce. Repeat with as many &#039;manicotti&#039;  as will fit in one layer in the dish. Drizzle with some more sauce, top with the remaining grated cheese and garnish with a few basil leaves.

Bake until well heated and fragrant. (Around 30-35 minutes.) Serve with a salad and loads of fresh basil!

Spinach and Cheese Stuffed Manicotti

Preheat the oven to 350 degrees F.

In a large bowl, mix the cheeses, spinach, eggs, salt and pepper. Stir together until well blended.

Place about 1 1/2 cups of marinara sauce in a 9x13-inch pan. Spread it around to cover the bottom.

Place the mixed filling into a plastic bag. You can use either a frosting piping bag or a gallon zip bag. Snip the corner, gather the top and squeeze the filling into the corner. Hold an uncooked manicotti shell in your hand and squeeze the filling inside the shell. Let it overflow on both sides. Alternately, you can stuff the uncooked noodles with a small spoon or fork.  Place the filled shell into the sauce-lined pan. Repeat with remaining manicotti and fill the pan with the stuffed shells, until you run out of shells and filling. You should be able to fill 12 to 14 shells- if you run out of room in your pan, use a separate smaller pan to accommodate the extra.

Cover the pasta completely with marinara sauce, using about 2 1/2 cups of sauce. Sprinkle 1/2 cup Parmesan on top. At this point, you can cover with foil and refrigerate until you're ready to bake, or you can cover with foil and place it in the oven immediately.

Bake, covered with foil, 50 minutes. Remove foil and bake an additional 10 minutes.

Easy Stuffed Manicotti

manicotti pasta shells

Ricotta cheese (1 16 ounce

mozzarella cheese (shredded, divided)

Parmesan cheese (shredded, divided)

Tablespoon basil pesto

Preheat oven to 375°F.

Bring a large pot of salted water to a rolling boil. Add manicotti and boil for the 7-8 minutes, until almost tender*.

Drain and rinse manicotti 2-3 times under cold water until cooled to room temperature.

In a medium bowl, stir together ricotta, 1 cup mozzarella, 1/4 cup Parmesan, egg, pesto, salt, and pepper.

Place ricotta mixture in a large piping bag or large freezer bag and snip the end.

Lightly grease a 9x13 baking dish and spread 1 cup of marinara sauce in the bottom.

Fill each manicotti shell with ricotta cheese mixture and line up on top of the marinara sauce in the baking dish, dividing the ricotta evenly between the 12 manicotti.

Top the filled manicotti with the remaining 1 1/2 cups sauce, 1 cup mozzarella cheese, and 1/4 cup Parmesan.

Lightly grease a piece of foil or lid and cover the baking dish. Bake at 375°F for 25-30 minutes until heated through and pasta is tender. Serve.
