One Pan Meatball Casserole

Preheat oven to 425 degrees F.

In a 9x13 inch baking dish stir together uncooked pasta, marinara sauce, water, milk, spices and meatballs.

Cover tightly with aluminum foil and bake for 40 minutes.

Uncover; stir. Check the pasta for doneness. We want it to be al dente (firm, but almost perfectly cooked). If it’s still too hard, cover the dish and return to the oven for a few minutes.

Sprinkle mozzarella over the top and bake uncovered for 5-10 more minutes or until cheese is melted and bubbly.

Allow to cool for at least 15 minutes before serving, to allow the sauce to thicken up.

A zero prep and incredibly comforting Italian Meatball and Rice Casserole made with a few simple ingredients. This meal is super easy and effortless!

Dump and Bake Italian Meatball and Rice Casserole

27 ounces marinara sauce

(14.5 ounces Basil, Garlic & Oregano diced tomatoes (undrained))

white rice

mozzarella cheese

¼ cup 1 ounce grated Parmesan cheese

Preheat oven to 375F (190C).

Stir marinara sauce, tomatoes, water, and rice together in a 13-inch by 9-inch baking dish. Add meatballs and stir to combine.

Cover the baking dish tightly with a lid or foil.

Bake for 60-75 minutes or until the rice is tender. During the final 5 minutes of cooking, remove dish from oven, uncover, and sprinkle with mozzarella and Parmesan. Place back in the oven (uncovered) for the final 5 minutes, or until cheese is melted.

Garnish with parsley just before serving.

Swedish Meatball Noodle Bake

Preheat oven to 375°F and grease a 9x13-inch baking dish with nonstick spray. Set aside.

In a large bowl, mix together the beef, breadcrumbs, egg, onion, nutmeg, garlic powder, salt and pepper. Scoop mixture out in 1 1/2 tablespoons and roll into balls.

Heat olive oil in a large skillet over medium-high heat. Add meat balls and brown on all sides. (They'll finish cooking in the oven.) Remove to a plate and set aside.

While meatballs cook, boil a large pot of salted water and cook noodles 2 minutes less than package calls for.

To same skillet that the meatballs were seared in, add broth, heavy cream, and Worcestershire sauce, scraping up any stuck-on bits on the bottom.

Let simmer until slightly thicker, about 10 minutes. Season to taste with salt and pepper and remove from heat.

Add pasta to baking dish, and nestle meatballs into noodles. Pour sauce evenly over the top and top with cheese.

Bake until cheese is melted and bubbly, about 20 minutes. Let sit 5 minutes before serving. Enjoy!

Preheat the oven.

Cook noodles.

Cook the egg noodles, al dente, per package instructions. Drain and set aside.

Mix together the ingredients for the cheese mixture.

In a medium bowl, mix the cream cheese, ricotta cheese, milk, mozzarella cheese, parmesan cheese, basil, parsley, salt, and pepper.

Add cooked noodles.

Add the warm cooked noodles to the cream cheese mixture. Stir to combine.

Cheese Mixture

Prepare baking dish.

Prepare a 9x13-inch baking dish by spraying it with nonstick spray.

Spread cheese mixture in dish.

Spread the cheese mixture on the bottom of the prepared baking dish.

Layer with meatballs.

Carefully set the meatballs on top of the cheese mixture.

Pour sauce over meatballs.

Pour the spaghetti sauce over the top of the meatballs, and top with the mozzarella cheese.

Bake.

Bake, uncovered until heated through (about 30 minutes).

Serve, garnished with parsley.

Serve warm, adding fresh parsley for garnish (optional).

Mini Turkey Meatball Casserole

Soak the bread in milk for about 2 or 3 minutes, then squeeze out moisture and crumble. In a medium bowl combine the crumbled bread with the ground turkey, parmesan cheese, egg,  and spices, mix well. Form the mixture into small meatballs.

In a large frying pan add 2 tablespoons of olive oil and brown meatballs on all sides. Remove the meatballs and set aside.

FOR THE MEATBALLS

In the same pan add the tomatoes, garlic, spices and water, stir to combine, then add the meatballs and gently combine. Cook until thickened.

While pasta is cooking pre-heat the oven at 350F (180C) and lightly grease a medium to large baking dish.

While the sauce and meatballs are cooking, cook the pasta a little harder than al dent. Add the drained pasta to the sauce, gently combine, then pour into the prepared baking dish, drizzle with a simple white sauce (bought or homemade). (You can omit the white sauce but believe me it is sooo good with it). Sprinkle with the shredded firm mozzarella and freshly grated parmigiano.

Bake for about 15-20 minutes. Let sit 5 minutes before serving. Enjoy!

1. Dried basil or fresh for the sauce?
2. The Parmesan for the meatballs, how much goes in there?
